Supramolecular oleogel is a soft material with a three-dimensional structure, formed by the self-assembly of low-molecular-weight gelators in oils; it shows broad application prospects in the food industry, environmental protection, medicine, and other fields. Among all the gelators reported, amino-acid-based compounds have been widely used to form organogels and hydrogels because of their biocompatibility, biodegradation, and non-toxicity. In this study, four Nα, Nε-diacyl-l-lysine gelators (i.e., Nα, Nε-dioctanoyl-l-lysine; Nα, Nε-didecanoyl-l-lysine; Nα, Nε-dilauroyl-l-lysine; and Nα, Nε-dimyristoyl-l-lysine) were synthesized and applied to prepare oleogels in four kinds of vegetable oils. Gelation ability is affected not only by the structure of the gelators but also by the composition of the oils. The minimum gel concentration (MGC) increased with the increase in the acyl carbon-chain length of the gelators. The strongest gelation ability was displayed in olive oil for the same gelator. Rheological properties showed that the mechanical strength and thermal stability of the oleogels varied with the carbon-chain length of the gelators and the type of vegetable oil. The microstructure of oleogels is closely related to the carbon-chain length of gelators, regardless of oil type. The highest oil-binding capacity (OBC) was obtained in soybean oil for all four gelators, and Nα, Nε-dimyristoyl-l-lysine showed the best performance for entrapping oils. 相似文献

We evaluated organosulphur compounds in Allium vegetables, including garlic, elephant garlic and onion, using high-performance liquid chromatography. Among organosulphur compounds, elephant garlic had considerable γ-glutamyl peptides, and garlic had the highest alliin content. Onion had low level of organosulphur compounds than did elephant garlic and garlic. In addition, antioxidant capacities were evaluated by oxygen radical absorbance capacity (ORAC) values and 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azinobis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging assay. The results showed that garlic had the highest antioxidant capacity, followed by elephant garlic and onion. Furthermore, a positive correlation was observed between antioxidant activities and organosulphur compounds (R > 0.77). Therefore, our results indicate that there was a close relationship between antioxidant capacity and organosulphur compounds in Allium vegetables. 相似文献

This study applies fuzzy sets to integrate the supply chain network of an edible vegetable oils manufacturer. The proposed fuzzy multi-objective linear programming model attempts to simultaneously minimize the total transportation costs. The first part of the total transportation costs is between suppliers and silos; and rest one is between manufacturer and warehouses. The approach incorporates all operating realities and actual flow patterns at production/distribution network with reference to demands of warehouses, capacities of tin and pet packaging lines. The model has been formulated as a multi objective linear programming model where data are modeled by triangular fuzzy numbers. Grape pomace and seeds are important winemaking by-products. Their oils are rich in bioactive compounds such as fatty acids and tocopherols. We have characterized oils from both by-products from five Spanish grape varieties (Palomino Fino, Pedro Ximénez, Muscat of Alexandria, Tempranillo and Tintilla de Rota). A high content of UFAs was found in all the analyzed samples. Grape pomace oils generally had the same oleic acid (PUFAω-6) content as seed oils, and lower PUFA contents; they also had a markedly higher linolenic acid (PUFAω-3) content, improving the PUFAω-6/PUFAω-3 ratio. All the oil studied show good indicators of nutritional quality: low values of the atherogenicity (0.112–0.157 for pomace, 0.097–0.112 for seed) and thrombogenicity indices (0.30–0.35 for pomace, 0.28–0.31 for seed) and high values of the relationship between hypo- and hypercholesterolemic fatty acids (6.93–9.45 for pomace, 9.11–10.54 for seed). Three tocopherols were determined: α-, γ- and δ-tocopherol. Pomace oils have higher relative contents of α- and δ-tocopherol, whereas seed oils have higher relative contents of γ-tocopherol. A significantly higher content of total tocopherols has been found in pomace oil; it is higher in the oils from red varieties of pomace (628.2 and 706.6 mg/kg by-product), and in the oils from pomace containing stems (1686.4 mg/kg by-product). All the oils obtained can be considered as a source of vitamin E, and their consumption is beneficial for health. 相似文献

提出了气相色谱法测定果蔬中防腐剂仲丁胺残留量的方法。果蔬样品经匀浆处理后置于顶空瓶中,在碱性条件下于55℃恒温平衡40min。吸取100μL液上气体注入气相色谱仪,用氮磷检测器测定,外标法定量。仲丁胺的质量浓度在0.000 5~0.040 0mg.L-1范围内与其峰面积呈线性关系,检出限(3S/N)为0.5μg.L-1。在两个浓度水平上对方法进行回收试验,测得回收率在87.4%~102.8%之间,测定值的相对标准偏差(n=10)在2.6%~9.6%之间。 相似文献

Helicobacter pylori (H. pylori) infections affect almost half of the world’s population, with gradually increasing incidence in developed countries. Eradication of H. pylori may provide significant benefits to the affected individual by healing a number of gastrointestinal and extra-digestive disorders. But due to increased microbial resistance and lack of patient adherence to the therapy, the eradication rate of H. pylori is below 80% with current pharmacological therapies. The usage of botanicals for their therapeutic purposes and medicinal properties have been increased in last decades. They can be use as alternative H. pylori treatments, especially against drug-resistant strains. Epidemiological studies have revealed that people with lower vegetable and micronutrient intake may be at increased risk of H. pylori infection. We have undertaken a review of clinical trials to evaluate the efficacy of vegetable extracts and micronutrients in patients with H. pylori. Various databases, such as Google Scholar, PubMed, Scopus, Web of Science, and the Cochrane Library, were searched for the articles published in English. A total of 24 clinical studies (15 for vegetable extracts and 9 for micronutrients) were selected to be reviewed and summarized in this article. Vegetable extracts (Broccoli sprouts, curcumin, Burdock complex, and Nigella sativa) and micronutrients (vitamin C and E) were not found to be as effective as single agents in H. pylori eradication, rather their efficacy synergized with conventional pharmacological therapies. The use of soluble amphiphiles oil types provide the most practical and economical solution for crude oil treatment in order to control the asphaltene precipitation phenomenon. In this article, the inhibition performance of a number of new chemical additives to asphaltene precipitation is examined on two types of Iranian crude oil. An automatic titration method is used in experimental evaluation. The vegetable oil types (hazelnut, wheat germ, and walnut), organic acids (oleic and linoleic) and chemical additives (4-dodecylresorcinol and benzyl alcohol) displayed the highest capacity to inhibit asphaltene precipitation. A remarkable onset displacement is displayed by dodecyl resorcinol. The results also revealed that the vegetable oil have high potential in delaying asphaltene precipitation. 相似文献

A sensitive catalytic method is developed for the spectrophotometric determination of oxalic acid. It is based on the catalytic
action of oxalic acid on a new indicator reaction – the oxidation of Bromophenol Blue by dichromate in dilute sulfuric acid
medium. The reaction rate is monitored spectrophotometrically by measuring the absorbance at 600 nm after quenching the reaction
with sodium hydroxide. A calibration graph from 0.1 to 8.0 μg mL−1 of oxalic acid and a detection limit of 0.04 μg mL−1 was obtained. The applicability of this method was demonstrated by the determination of oxalic acid in water extracts from
vegetables such as spinach, mushrooms and fresh kidney beans.
