Deterioration of edible oils during food processing by ultrasound   总被引:4,自引:0,他引:4  
During food emulsification and processing of sunflower oil (most used edible oil), a metallic and rancid odour has been detected only for insonated oil and foods. Some off-flavour compounds (hexanal and hept-2-enal) resulting from the sono-degradation of sunflower oil have been identified. A wide variety of analytical techniques (GC determination of fatty acids, UV spectroscopy, free fatty acids and GC/MS) were used to follow the quality of insonated sunflower oil and emulsion. Different edible oils (olive, sunflower, soybean, em leader ) show significant changes in their composition (chemical and flavour) due to ultrasound treatment.  相似文献

High power ultrasound effects on lipid oxidation of refined sunflower oil   总被引:9,自引:0,他引:9  
The effects of high power ultrasound treatment (20 kHz) on some components of refined sunflower oil were studied in order to verify if and to what extent modifications in the lipidic fraction can occur. Traditional parameters including free acidity, total polar compounds, peroxide value, and conjugated dienes concentration were determined in refined sunflower oil samples before, immediately after the ultrasonic treatment and during storage. Differences between treated and untreated samples were detected only for peroxide values (PV). The PV increased from 5.38 meq. O2/kg oil for untreated oil to 6.33 meq. O2/kg oil for sunflower oil sonicated (20 kHz; 150 W; 2 min). The fatty acid composition was obtained by high resolution gas chromatography. No significant changes were observed regarding the decrease in fatty acid composition before and immediately after the treatment. Regarding the volatile fraction, some off-flavour compounds for example hexanal and limonene resulting from the ultrasonic degradation of sunflower oil were identified by gas chromatography coupled to mass spectrometry (GC-MS).  相似文献

This study presents an application of ultrasonic technology in the high voltage liquid insulation domain towards the reduction of pour point of vegetable oil samples for the utilization of vegetable oils as liquid insulation in cold climate areas on power transformers. Pour point reduction has been achieved by processing the vegetable oil samples by using ultrasonic treatment process with 100 W and 30 kHz ultrasonic waves for various exposure times of 15, 30, 45 and 60 min. Edible vegetable oils such as sunflower oil, palm oil, sesame oil and non edible vegetable oils such as honge oil, neem oil and punna oil are considered as two categories of vegetable oils for this experimental investigation. Ultrasonic treatment process results in the reduction of pour point of vegetable oils to meet out the standard value of pour point for liquid insulation as per IEEE Standard C57.147, 2018. A significant reduction in pour point temperature of vegetable oil samples have been obtained with an increased exposure time. The obtained variations in pour point after exposure with ultrasonic waves may be due to the possible changes in crystallization kinetics of fatty acids components of vegetable oil samples due to energy input of ultrasonic waves. The experimental results have given a way towards the positive encouragement and development with ultrasonic treatment for achieving low pour point vegetable oils as liquid insulation in power transformers for applications on cold climatic areas.  相似文献

用气相色谱测定了思茅地区普洱茶果油中的脂肪酸的组成,并将其与花生油、菜籽油、油茶籽油、橄榄油中的脂肪酸组成进行了比较,发现普洱茶果油中油酸的质最分数高于花生油、菜籽油,低于油茶籽油、橄榄油,芥酸的质量分数低于花生油、菜籽油及油茶籽油,略高于橄榄油,故普洱茶果是一种理想的油料资源.用气-质联用从普洱茶果油挥发性物质中鉴定出30种化合物,其中大部分为醇、醛、酮、酯类物质,并且多数同时含有不饱和键,国内鲜见报道.  相似文献

The study aimed to investigate the capability of bath-ultrasonication and its combination with conventional water-bath and autoclave treatment in modifying the volatile composition of brewers’ spent grain (BSG). It was hypothesized that the treatments modified the volatile composition of BSG due to the sonochemical modification. The results demonstrated that the treatments intensified the desirable odor and removed the undesirable one which might allow the possibility of masking and renewing the odor perception of BSG. Besides the influence on odor perception related compounds, it is worth to highlight that the treatments eliminated herbicidal compounds such as (E,E)-2,4-heptadienal and (E)-2-hexenal which might be present from herbicidal treatment. Combination of bath-ultrasonication with autoclave treatment modified the volatile aldehydes while its combination with conventional water-bath generated the same profile as it was in untreated BSG. Time elevation on bath-ultrasonication had no significant impact on the amount of ketones and alkanes, while the fluctuation occurred as an impact of thermal exposures. Moreover, the treatment reduced the amount of alcohol and increased the fatty acids. In conclusion, bath-ultrasonication and its combination with thermal exposure modified the volatile compositions of BSG.  相似文献

A comparative study of traditional simultaneous distillation extraction (SDE), microwave assisted hydrodistillation extraction (MWHD) and ultrasound-assisted extraction (USE) is presented, for the extraction of essential oils from fresh garlic (Allium sativum) cloves. Each method is evaluated in terms of qualitative and quantitative composition of the isolated essential oil. The highly reactive sulfur molecules of the garlic volatile fraction show variable response to the different isolation methods. The application of ultrasound for the extraction of the essential oil is considered to cause a lesser damage of thermal-sensitive molecules, thus, providing a better approach of the compounds primarily responsible for the characteristic odor and taste of freshly chopped garlic. All heat-involving isolation procedures have been shown to differentiate the volatile-fraction profile as analyzed by GC-MS. Especially when grouping the compounds into cyclic and acyclic, the percentage concentrations drop from 77.4% to 8.7% for the acyclic while that of the cyclic compounds increase from 4.7% to 70.8%. The observed fact may be attributed to the effect of the heat applied, which changes from harsh thermal treatment (SDE) to short time thermal (MWHD) and room-temperature isolation (USE). The use of USE proves to be crucial in order to provide reliable insight into garlic's chemistry.  相似文献

The aim of the virgin olive oil extraction process is mainly to obtain the best quality oil from fruits, by only applying mechanical actions while guaranteeing the highest overall efficiency. Currently, the mechanical methods used to extract virgin oils from olives are basically of two types: the discontinuous system (obsolete) and the continuous one. Anyway the system defined as “continuous” is composed of several steps which are not all completely continuous, due to the presence of the malaxer, a device that works in batch. The aim of the paper was to design, realize and test the first full scale sono-exchanger for the virgin olive oil industry, to be placed immediately after the crusher and before the malaxer. The innovative device is mainly composed of a triple concentric pipe heat exchanger combined with three ultrasound probes. This mechanical solution allows both the cell walls (which release the oil droplets) along with the minor compounds to be destroyed more effectively and the heat exchange between the olive paste and the process water to be accelerated. This strategy represents the first step towards the transformation of the malaxing step from a batch operation into a real continuous process, thus improving the working capacity of the industrial plants. Considering the heterogeneity of the olive paste, which is composed of different tissues, the design of the sono-exchanger required a thorough fluid dynamic analysis. The thermal effects of the sono-exchanger were monitored by measuring the temperature of the product at the inlet and the outlet of the device; in addition, the measurement of the pigments concentration in the product allowed monitoring the mechanical effects of the sono-exchanger. The effects of the innovative process were also evaluated in terms of extra virgin olive oil yields and quality, evaluating the main legal parameters, the polyphenol and tocopherol content. Moreover, the activity of the polyphenol oxidase enzyme in the olive paste was measured.  相似文献

In this work, the effects of high power ultrasound treatment (40 kHz) on virgin olive oil (VOO) for different times (0, 15, 30 min) were studied, in order to verify if extent modifications in their chemical composition and thermal properties. The effects of the different ultrasound treatments on VOOs were determined considering the following parameters: quality index (free acidity, K232 and K270), lipid profile (fatty acids and triglycerides composition) minor components (phenols, tocopherols, pigments and volatiles) and thermal properties (crystallization and melting) by Differential Scanning Calorimetry (DSC).During the ultrasound treatments, bubbles growth was present in the VOO due to the phenomenon of cavitation and a slight increase of the temperature was observed. In general, the ultrasound treatments did not cause alterations on VOO parameters evaluated (oxidation state, lipid profile, minor components and thermal profiles). However, a slight decrease was observed in some volatile compounds.  相似文献

This research aimed to analyze the effects of ultrasound on the quality characteristics of white wine when processed by two different systems, i.e., ultrasonic bath and ultrasonic probe. In this regard, the multivariate statistical analysis and artificial neural network (ANN) techniques were used. Additionally, the efficiency of high power ultrasound (HPU) combined with sulfite and glutathione (GSH) treatments was explored during 18 months of bottle storage. Regarding ultrasonic bath experiment, the higher bath temperature caused the degradation of volatile compounds, precisely esters and higher alcohols, while the ultrasound effect on phenolic composition was much less pronounced. Interestingly, a combination of larger probe diameter and higher ultrasound amplitude showed a milder effect on phenolic and volatile composition in ultrasonic probe experiment. Both, ultrasonic bath and probe experiments did not cause great changes in the color properties. Moreover, implemented ANN models for flavan-3-ols, higher alcohols and esters resulted in the highest prediction values. HPU processing after 18 months of storage did not affect wine color. However, it modified phenolic and volatile composition, with greater effect in wines with lower concentration of antioxidants. In addition, there was no significant difference in the phenolic and volatile composition among sonicated low-sulfite-GSH wine and the one with standard-sulfite content. Therefore, a combined HPU and low-sulfite-GSH treatment might be a promising method for production of low-sulfite wines.  相似文献

In the present study, ultrasound was used to remove the residual solvent from the fragrant oil of red pepper seed obtained by subcritical propane extraction. The physical and chemical characteristics, particularly the volatile flavor compounds present of the oil before and after ultrasound-assisted desolventizing were comprehensively analyzed to determine the effect of the desolventizing process on product quality. The results showed that the maximum loss of residual solvent was achieved at a temperature of 90 °C maintained for 70 min with ultrasound applied during the entire process. After this treatment only a small amount of solvent (2.3% based on the total residual solvent originally present) remained in the oil. Although it was hypothesized that ultrasound treatment could result in the loss of volatile components, the analytical results showed no obvious reduction in the components associated with the typical aroma of the oil. After ultrasonic treatment, the oil also had good oxidation stability and quality. Additionally, after ultrasonic desolventizing, the oil samples were more suitable for cooking because they could more effectively minimize oxidation. Thus, these results demonstrate that this new ultrasonic technique is an effective and efficient method for removing the solvent remaining in fragrant oil after subcritical propane extraction.  相似文献

Malaxation has been recognized as one of the most critical points in the mechanical extraction process for virgin olive oil (VOO). It is a low and continuous kneading of olive paste at a carefully monitored temperature. Through this essential technological operation the small droplets of the oil formed during the milling merge into large drops that can be easily separated with a decanter centrifuge. During this technological phase, a complex and necessary bioprocess takes place in order to determine the quality and composition of the final product. The malaxer is a heat exchanger characterized by a low overall heat transfer coefficient because the ratio of surface area to volume is disadvantageous, so it is important to find an innovative technology to improve heat-exchange. As matter of fact, the malaxing step is the only discontinuous phase in a continuous extraction process. In the next future, the essential challenge of VOO industrial plant manufacturing sector is to design and build advanced machines in order to transform the discontinuous malaxing step in a continuous phase and improve the working capacity of the industrial plants. In order to reduce the malaxing time enhancing the quality of the product, two ultrasound-assisted virgin olive oil extraction processes were tested against the traditional method. The sonication treatment was applied on olives submerged in a water bath (before the crushing) and on olive paste (after the crushing). The ultrasound technology provides a reduction of the malaxing duration improving VOO yields and its minor compounds content. Better extractibility and higher minor compounds contents were obtained by sonicating the olives submerged in a water bath than olive paste. After experimental trials the results were employed to suggest innovative scaling up solutions of the process and new applications of ultrasounds in the VOO industry.  相似文献

The effect of high-power ultrasound on olive paste, on laboratory thermo-mixing operations for virgin olive oil extraction, has been studied. Direct sonication by an ultrasound probe horn (105 W cm−2 and 24 kHz) and indirect sonication with an ultrasound-cleaning bath (150 W and 25 kHz) were applied and their effects compared with the conventional thermal treatment.

A quick-heating of olive paste, from ambient (12–20 °C) to optimal temperature conditions (28–30 °C), and an oil extractability improvement were observed when applying sonication. Better extractability was obtained by direct sonication for high moisture olives (>50%) whereas indirect sonication gave greater extractability for low moisture olive fruits (<50%).

Optimal application of ultrasound was achieved with direct sonication for 4 min at the beginning of paste malaxation and with indirect sonication during the malaxation time.

Effect of high-power ultrasound on oil quality parameters and nutritional and sensory characteristics were studied. Changes in quality parameters (free acidity value, peroxide value, K270 and K232) were not found, however significant effects on the levels of bitterness, polyphenols, tocopherols (vitamin E), chlorophyll and carotenoids were observed. Oils from sonicated pastes showed lower bitterness and higher content of tocopherols, chlorophylls and carotenoids. Related to sensory characteristics, off-flavour volatiles were not detected in oils from sonication treatments. Total peak areas of volatiles and the ratio hexanal/E-2-hexenal, as determined by SPME analysis, were lower than non-sonicated reference oils; sensory evaluation by panel test showed higher intensity of positive attributes and lesser of negative characteristics than those untreated.  相似文献

The objective of this study is to assess the effects of installation and operation of a high-power ultrasound machine (HPU) for the treatment of olive paste by using ultrasound technology in order to evaluate the best way installation and the best definition of the operating conditions of the machine. The study was conducted installing in an industrial olive oil mill a continuous processing ultrasound machine, which used a frequency of 20 kHz able to work at 3200 kg h−1 as feed capacity. Checking of performance has been carried out by the assessment of the different operating and process conditions, assessing in particular the impact of the ultrasound treatment before and after the malaxation phase on performance indicators of the continuous olive oil plant (plant extractability, olive paste rheological characteristic) and on selected chemical properties of the olive oil extracted (quality parameters, antioxidant content, and volatile profiles). In the tested conditions, high-power ultrasound treatment did not produce significant effect on the legal parameters (free acidity, peroxide index and spectrophotometric indexes), while a significant increase in the content of phenolic compounds was generally observed; higher enhancements were more evident when the high-power ultrasound treatment was carried out before the malaxation phase.  相似文献

目前市场上的橄榄油品牌很多,质量参差不齐,亟需完善橄榄油的等级分类检测和特级初榨橄榄油的鉴别方法。可见吸收光谱光谱法可在不直接接触样品的情况下对样品进行无添加试剂的探测,因此为实现特级初榨橄榄油的鉴别,采用可见吸收光谱法对不同种类植物油进行了光谱测量。实验结果发现特级初榨橄榄油在500~780 nm波段内具有4个明显的吸收峰,而其他种类植物油在此波段内吸光度较弱或无吸收峰,且同种植物油不同品牌之间的光谱特征极其相似。采用相关系数比对不同种类植物油可见吸收光谱,分别计算了四个不同波长范围内植物油的可见吸收光谱的相关系数,实验发现不同波长范围内的植物油可见光谱相关系数差别较大。在520~700 nm范围内,特级初榨橄榄油间的光谱相关系数在0.999 6以上,特级初榨橄榄油与其他种类植物油的光谱相关系数均低于0.267 8,特级初榨橄榄油与其他等级橄榄油的光谱相关系数在0.194 6~0.835 8之间。研究结果表明可见吸收光谱相关系数法是一种快速非接触式鉴别特级初榨橄榄油的可行性方法。建立了一种特级初榨橄榄油快速鉴别方法,即可见吸收光谱相关系数法。该方法在特级初榨橄榄油的实际鉴别中具有一定的应用价值。  相似文献

Vegetable oils provide high nutritional value in the human diet. Specifically, extra virgin olive oil is one of the main ingredients of the Mediterranean diet, which is among the healthiest of eating practices. This article reviews the use of Raman spectroscopy for analyzing edible vegetable oils including olive oil. Although the spectra for edible vegetable oils are similar, they exhibit some differences which, however small, enable their discrimination. Thus, Raman spectra allow one to determine the degree of unsaturation of oils. This property is correlated with the iodine value but much faster and simpler to obtain. The degree of unsaturation can be used to classify and authenticate oils, which is especially useful with high-quality oils. In fact, adulteration with mixtures of more inexpensive oils can be easily detected by Raman spectroscopy. This technique additionally allows some minor components present in unsaponifiable matter to be identified. Fats in general and vegetable oils in particular, are prone to oxidation. Thus, double bonds in them are oxidized to form triglycerides. Vegetable oils are widely used for frying and Raman spectroscopy allows for their oxidative stability against heating at the usual frying temperatures to be assessed.  相似文献

为实现橄榄油中掺伪油类型的识别和掺伪量预测,对掺入葵花籽油、大豆油、玉米油的橄榄油共117个样品进行拉曼光谱检测,并用基于多重迭代优化的最小二乘支持向量机模型对掺入油的类型进行识别,综合识别率为97%。同时分别采用最小二乘支持向量机、人工神经网络模型、偏最小二乘回归建立橄榄油中葵花籽油、大豆油、玉米油含量的拉曼光谱定标模型,结果显示最小二乘支持向量机具有最优的预测效果,其预测均方根误差(RMSEP)在0.007 4~0.014 2之间。拉曼光谱结合最小二乘支持向量机可为橄榄油掺伪检测提供一种精确、快速、简便、无损的方法。  相似文献

Commercially available extra virgin olive oils are often adulterated with some other cheaper edible oils with similar chemical compositions. A set of extra virgin olive oil samples adulterated with soybean oil, corn oil and sunflower seed oil were characterized by Raman spectra in the region 1000–1800 cm−1. Based on the intensity of the Raman spectra with vibrational bands normalized by the band at 1441 cm−1 (CH2), external standard method (ESM) was employed for the quantitative analysis, which was compared with the results achieved by support vector machine (SVM) methods. By plotting the adulterant content of extra virgin olive oil versus its corresponding band intensity in the Raman spectrum at 1265 cm−1, the calibration curve was obtained. Coefficient of determination (R2) of each curve was 0.9956, 0.9915 and 0.9905 for extra virgin olive oil samples adulterated with soybean oil, corn oil and sunflower seed oil, respectively. The mean absolute relative errors were calculated as 7.41, 7.78 and 9.45%, respectively, with ESM, while they were 5.10, 6.96 and 4.55, in the SVM model, respectively. The prediction accuracy shows that the ESM based on Raman spectroscopy is a promising technique for the authentication of extra virgin olive oil. The method also has the advantages of simplicity, time savings and non‐requirement of sample preprocessing; especially, a portable Raman system is suitable for on‐site testing and quality control in field applications. The action of ultrasonic and hydrodynamic cavitation on the cracking of organic compounds of various natures (linear alkanes (octane, undecane, and hexadecane), carboxylic acids (decanoic and oleic acids), alcohols (decanol), and esters (ethyl caprate)) and transesterification of rapeseed oil and methanol and ethanol was studied. An analysis of hydrocarbon transformation products by gas chromatography, high-performance liquid chromatography, NMR, and chromato-mass spectrometry showed that cavitation treatment of any class of organic compounds of those mentioned above resulted in transformations no more than 1.1% deep. In experiments with transesterification of rapeseed oil and methanol and ethanol without a catalyst under the action of cavitation, the yield of fatty acid esters did not exceed 2.1 mol %. The energy efficiency of the cavitation apparatus was estimated at 0.002% for endothermic cracking of alkanes. The data obtained led us to conclude that the use of cavitation directly for performing cracking of various organic compounds and noncatalytic transesterification of vegetable oils was ineffective.  相似文献

Ultrasound assisted enzymatic method was applied to the degumming of arachidonic acid (ARA) oil produced by Mortierella alpina. The conditions of degumming process were optimized by response surface methodology with Box- Behnken design. A dephosphorization rate of 98.82% was achieved under optimum conditions of a 500 U/kg of Phospholipase A1 (PLA1) dosage, 2.8 mL/100 g of water volume, 120 min of ultrasonic time, and 135 W of ultrasonic power. The phosphorus content of ultrasonic assisted enzymatic degumming oil (UAEDO) was 4.79 mg/kg, which was significantly lower than that of enzymatic degumming oil (EDO, 17.98 mg/kg). Crude Oil (CO), EDO and UAEDO revealed the similar fatty acid compositions, and ARA was dominated (50.97 ~ 52.40%). The oxidation stability of UAEDO was equivalent to EDO and weaker than CO, while UAEDO presented the strongest thermal stability, followed by EDO and CO. Furthermore, aldehydes, acids and alcohols were identified the main volatile flavor components for the three oils. The proportions of major contributing components such as hexanal, nonanal, (E)-2-nonanal, (E, E)-2,4-decadienal, (E)-2-nonenal and aldehydes in UAEDO and EDO were all lower than CO. Overall, Ultrasound assisted enzymatic degumming proved to be an efficient and superior method for degumming of ARA oil.  相似文献
