The fed-batch method for baker's yeast culture is fundamental for compressed and activedry yeast making. As a technical know-how it has not been published hitherto. The pub-lication of our own fed-batch regime, in principle and in practice, may serve the biologistsas well as engineers to get better results in microbial production.     

面包酵母生产中瞬时比生长率的流加工艺理论与实践

本文在活性干酵母的制造中采用X-8菌株,此菌株在本培养方案的条件下可累积高达16％的蕈糖,从而具有抗烤干温度的能力。本流加方案依据酵母群体依指数增殖的规律,同时按照瞬时比生长率极大值转折点,使指数流加随之增减,从而使流加的碳、氮源在加入后瞬时消耗完毕,从而免除了Pasteur效应和Crabtree效应造成的基质消耗,使糖转化率接近理论值,达到50％,并提高了酵母质量。本文公布了用手控流加用的图解法和计算机控制的流加计算公式。
