以全国17个主要烤烟产地省份中收集的3 914个烟叶样品的近红外光谱为实验对象,其中浓香型、中间香型、清香型烟叶光谱分别865条、1 403条、1 646条,应用近红外光谱和多算法融合方法分析其香型风格特征。在以产地进行初步划分烟叶香型以及认可过渡型和非典型香型类型的基础上,选取基于主成分及Fisher准则的投影法(PPF)、偏最小二乘判别(DPLS)、支持向量机(SVM)作为单分类器,得到各个算法第1和2判别分析结果;应用PPF-DPLS-SVM融合和各算法第1和2判别分析结果,将预测验证样品的分析结果详细划分为典型、过渡型、非典型香型样品(分别为493,392,115个);其中典型香型烟叶样品的判别准确率达到92.7%,较未进行典型样品划分时PPF,DPLS,SVM单算法的识别准确率分别提高了30.2%,15.4%,16.6%。样品数据来源于全国主要烤烟产地,数据量大,代表性较好,分析结果具有一定普遍性;提出的多算法融合分析方法大幅度提高了通过客观数据判别烤烟香型的准确率;同时,将烤烟香型细划分为典型、过渡型和非典型香型的方式,对烤烟烟叶原料的科学合理利用以及烟叶原料的模块化工业加工等有指导作用。  相似文献

比较了三种测定食品增味剂麦芽酚和乙基麦芽酚的方法,即分光光度法、高效液相色谱法和溶胶-凝胶化学修饰电极伏安法。实验结果表明:高效液相色谱法可分别测定麦芽酚和乙基麦芽酚,而分光光度法和伏安法只能测定二者的总量。伏安法具有简便、快速、灵敏的优点,可用于饮料样品的直接测定。  相似文献

For exploring the influence of ultrasound on the flavor characteristic of unsmoked bacon, sensory evaluation combined with E-nose and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) were performed to analyze the overall flavor profile and specific volatile flavor compounds (VFCs), respectively. Furthermore, the metabolic pathway of VFCs affected by ultrasound was also investigated. Results demonstrated that ultrasound improved the flavor characteristic of unsmoked bacon by raising the levels of nonanal, heptanal, octanal, 3-methylbutanal n-hexyl acetate and n-propyl acetate. Enzymatic oxidation was found to be an important metabolic pathway responsible for the development of flavor characteristic after ultrasound treatment, which could be attributed to the increased activities of lipases and lipoxygenase and the higher concentration of polyunsaturated free fatty acids. The increased level of lipid oxidation after ultrasound treatment was also confirmed by thiobarbituric acid reactive substances. Consequently, ultrasound is an effective approach to enhance the flavor characteristic of unsmoked bacon.  相似文献

A variant of a warped extra dimension model is presented. It is based on 5D minimal flavor violation, in which the only sources of flavor breaking are two 5D anarchic Yukawa matrices. These matrices also control the bulk masses, which are responsible for the resulting flavor hierarchy. The theory flows to a next to minimal flavor violation model where flavor violation is dominantly coming from the 3rd generation. Flavor violation is also suppressed by a parameter that dials the violation in the up or down sector. There is therefore a sharp limit in which there is no flavor violation in the down-type quark sector which, remarkably, is consistent with the observed flavor parameters. This is used to eliminate the current Randall-Sundrum flavor and CP problem. Our construction suggests that strong dynamic-based, flavor models may be built based on the same concepts.  相似文献

To study the physicochemical properties of micro-nanoparticles (MNPs) in thermoultrasonic treated fishbone soup, it was subjected to ultra-filtration with a 100 kDa ultrafiltration membrane to obtain large MNPs (LMNPs) and small MNPs (SMNPs). LMNPs and SMNPs were treated with force-breakers, and the interactions of the MNPs with five characteristic volatile compounds were investigated. LMNPs covered most proteins (222.66 mg/mL) and fatty acids (363.76 mg/g), while SMNPs was mostly soluble small molecules with taste substances like total free amino acids (85.26 mg/g), organic acids (2.55 mg/mL), and 5′-nucleotides (169.17 mg/100 mL). The stability of LMNPs is significantly higher than raw bone soup, and SMNPs can exist stably in the solution. Correlation analysis between flavor substance content and flavor suggested that the overall flavor profile of halibut bone soup was closely related to the content changes of 72 significant influence variables. The binding of LMNPs to characteristic flavor compounds was largely affected by hydrophobic interactions, hydrogen bonds, and ionic effects. While the binding of SMNPs to characteristic flavor compounds was largely determined by hydrophobic interaction and hydrogen bonding. This study explores the characteristics of MNPs and provides the possibility to clarify the interaction mechanism between MNPs and flavor.  相似文献

分别基于近红外和电子鼻融合数据、近红外数据以及电子鼻数据建立判别烟叶清香型、中间香型和浓香型三种香型风格的定性判别模型,结果表明虽然三种模型的建模准确率差异不大,都超过了89.00%,但基于融合数据建立的模型对中间香型和浓香型的预报准确率分别为82.67%和80.00%,比仅仅利用近红外数据建立模型的72.41%和73.33,也比仅仅基于电子鼻数据建立模型的68.97%和53.33%都有明显的提高。融合后预报准确率提高的可能原因是:电子鼻风味分析仪对于影响中间香型和浓香型的烟叶致香成分感应更加灵敏,捕获的信息也更多,这些新的信息可以作为NIR数据信息的有利补充,可用于建立烟叶香型分类判别准确率更高的模型。同时本研究还基于相同的融合数据,对比不同数据挖掘算法建模和预报结果差异性。实验结果表明:人工神经网络的建模结果高于支持向量机建模,人工神经网络模型的预报结果准确率只有65.00%,远低于支持向量机模型的预报结果的83.75%。这也验证了支持向量机算法可以在建模过程中减少过拟合。该研究可以为快速鉴别烟叶香型风格提供支撑,而且随着研究的深入可以争取为烟草系统的专业评吸人员提供辅助的鉴别方法。  相似文献

白酒是一个复杂的混合物体系,它含有大量的微量成分,这些微量成分直接决定了白酒的品质、口感和香型。为实现对白酒香型的快速鉴别,可采集不同香型白酒的红外光谱图,并将其作为模式分类方法的输入模式,建立白酒香型鉴别模型。首次全面系统地介绍了白酒香型模式识别算法,这些算法包括统计分类器(线性判别函数、二次判别函数、正则判别分析、K近邻算法)、原型学习算法(学习矢量量化)、支持向量机和AdaBoost算法。实验结果表明,基于红外光谱的白酒香型检测模式识别算法达到了很高的分类准确率、识别率和拒绝率,显示出了很好的性能。  相似文献
