Interfacial tension measurements have been performed at the water/hexane interface on mixtures of the bovine milk protein β-lactoglobulin and positively charged cationic surfactants (alkytrimethylammonium bromides). The addition of surfactants with different chain lengths leads to the formation of protein-surfactant complexes with different adsorption properties as compared to those of the single protein. In this study, the formation of complexes has been observed clearly for protein-long chain surfactant (TTAB and CTAB) mixtures, which has shown in addition to specific electrostatic interactions the relevance of hydrophobic interactions between surfactant molecules and the protein. The modeling of interfacial tension data by using a mixed adsorption model provides a quantitative understanding of the mixture behavior. Indeed, the value of the adsorption constant of the protein obtained in the presence of surfactants has strongly varied as compared to the single protein. Actually, this parameter which represents the affinity of the molecule for the interface is representative of the hydrophobic character of the compound and so of its surface activity. Even if a more hydrophobic and more surface active protein-surfactant complex has been formed, the replacement of this complex from the interface by surfactants close to their cmc was observed.

Measurements of the interfacial tension, γ, for water-CO2-perfiuoropoly ether (PFPE) ionic surfactant systems are utilized to understand the surfactant affinity for the various phases and adsorption at the interface. A marked decrease in γ with salinity is observed as salt screens electrostatic repulsion and induces microemulsion formation, as confirmed with dynamic light scattering. In several cases, the interfacial tension goes through an unusual maximum with salinity, which is explained in terms of competition between surfactant affinity for the various phases and microemulsion formation. Fundamental studies of interfacial properties provide important insight for designing surfactants and experimental conditions to achieve the desired properties of water/CO2 microemulsions and emulsions.  相似文献

The effect of the addition of an anionic surfactant (sodium dodecyl benzene sulphonate) on the rheology and storage stability of concentrated O/W emulsions stabilized by poly (vinyl alcohol) is reported. It was found that the surfactant markedly reduced the magnitudes of the storage modulii of the emulsions. This could be attributed to a reduction in the interfacial tension resulting from the formation of polyelectrolyte type complexes between the PVA and NaDBS at the O/W interface. The results were compared to the equation (given by Princen) relating concentrated emulsion rheology to the interfacial tension and droplet size. Reasonable agreement was found, though there was a small difference in the constants in the equation given by Princen and those found here. The agreement suggested that the emulsions were deforming above a critical volume fraction and that the rheological properties were dominated by the dilation of the interface during shear. Microelectrophoresis measurements showed that the addition of the surfactant conferred a charge onto the PVA stabilized droplets as a result of the formation of the polyelectrolyte complex. The NaDBS was found to reduce the long-term stability of the emulsions compared to emulsions containing PVA alone.

The adsorption behaviour of proteins and systems mixed with surfactants of different nature is described. In the absence of surfactants the proteins mainly adsorb in a diffusion controlled manner. Due to lack of quantitative models the experimental results are discussed partly qualitatively. There are different types of interaction between proteins and surfactant molecules. These interactions lead to protein/surfactant complexes the surface activity and conformation of which are different from those of the pure protein. Complexes formed with ionic surfactants via electrostatic interaction have usually a higher surface activity, which becomes evident from the more than additive surface pressure increase. The presence of only small amounts of ionic surfactants can significantly modify the structure of adsorbed proteins. With increasing amounts of ionic surfactants, however, an opposite effect is reached as due to hydrophobic interaction and the complexes become less surface active and can be displaced from the interface due to competitive adsorption. In the presence of non-ionic surfactants the adsorption layer is mainly formed by competitive adsorption between the compounds and the only interaction is of hydrophobic nature. Such complexes are typically less surface active than the pure protein. From a certain surfactant concentration of the interface is covered almost exclusively by the non-ionic surfactant. Mixed layers of proteins and lipids formed by penetration at the water/air or by competitive adsorption at the water/chloroform interface are formed such that at a certain pressure the components start to separate. Using Brewster angle microscopy in penetration experiments of proteins into lipid monolayers this interfacial separation can be visualised. A brief comparison of the protein adsorption at the water/air and water/n-tetradecane shows that the adsorbed amount at the water/oil interface is much stronger and the change in interfacial tension much larger than at the water/air interface. Also some experimental data on the dilational elasticity of proteins at both interfaces measured by a transient relaxation technique are discussed on the basis of the derived thermodynamic model. As a fast developing field of application the use of surface tensiometry and rheometry of mixed protein/surfactant mixed layers is demonstrated as a new tool in the diagnostics of various diseases and for monitoring the progress of therapies.  相似文献

The interaction of a nonionic polymeric surfactant with an anionic surfactant at the oil–water interface has been studied by its effects on the droplet size, stability and rheology of emulsions. Oil-in-water (o/w) emulsions were prepared using isoparaffinic oil and mixtures of a nonionic polymeric surfactant with an anionic surfactant. The macro-molecular surfactant was a graft copolymer with a backbone of polymethyl methacrylate and grafted polyethylene oxide (a graft copolymer with PEO chains of MW=750). The anionic surfactant was sodium dodecyl sulfate (SDS). The stabiliza-tion of the emulsion droplets was found to be different when using one or the other surfactant. The mechanism of stabilization of emulsion droplets by the macro-molecular surfactant is of the steric type while the stabilization by anionic surfactant is of the electrostatic repulsion type. Emulsions stabilized with mixtures present both types of stabilization. Other effects on the preparation and stabilization of emulsions were found to be dependent on properties associated with the surfactant molecular weight such as the Marangoni effect and Gibbs elasticity. The initial droplet size of the emulsions showed a synergistic effect of the surfactant combination, showing a minimum for the mixtures compared to the pure components. Emulsion stability also shows a synergistic interaction of both surfactants. Rheological measurements allow for the estimation of the interparticle interaction when measured as a function of volume fraction. Most of the effects observed can be attributed to the differences in interfacial tension and droplet radius produced by both surfactants and their mixtures. The elastic moduli are well explained on the basis of droplet deformation. Ionic versus steric stabilization produce little difference in the observed rheology, the only important differences observed concerned the extent of the linear viscoelasticity region. Formation of a normal (not temporary) W/O/W multiple emulsion via the one-step method as a result of the simultaneous occurrence of catastrophic and transitional phase inversion processes has been recently reported. Critical features of this process include the emulsification temperature (corresponding to the ultralow surface tension point), the use of a specific nonionic surfactant blend and the surfactant blend/oil phase ratio, and the addition of the surfactant blend to the oil phase. The purpose of this study was to investigate physicochemical properties in an effort to gain a mechanistic understanding of the formation of these emulsions. Bulk, surface, and interfacial rheological properties of adsorbed nonionic surfactant (CremophorRH40 and Span80) films were investigated under conditions known to affect W/O/W emulsion formation. Bulk viscosity results demonstrated that CremophorRH40 has a higher mobility in oil compared than in water, explaining the significance of the solvent phase. In addition, the bulk viscosity profile of aqueous solutions containing CremophorRH40 indicated a phase transition at around 78 ± 2 °C, which is in agreement with cubic phase formation in the Winsor III region. The similarity in the interfacial elasticity values of CremophorRH40 and Span80 indicated that canola oil has a major effect on surface activity, showing the significance of vegetable oil. The highest interfacial shear elasticity and viscosity were observed when both surfactants were added to the oil phase, indicating the importance of the microstructural arrangement. CremophorRH40/Span80 complexes tended to desorb from the solution/solution interface with increasing temperature, indicating surfactant phase formation as is theoretically predicted in the Winsor III region. Together these interfacial and bulk rheology data demonstrate that one-step W/O/W emulsions form as a result of the simultaneous occurrence of phase-transition processes in the Winsor III region and explain the critical formulation and processing parameters necessary to achieve the formation of these normal W/O/W emulsions.  相似文献

The interactions between PSS-co-BVE copolymers and ionic surfactants (anionic and cationic) in aqueous solution have been investigated using pyrene as a photophysical probe. Static and dynamic fluorescence determinations have been used to obtain information about the microenvironments formed between both species. Micropolarity studies using the I1/I3 ratio of the vibronic bands of pyrene and the behavior of the I(E)/I(M) ratio between the monomer and excimer emissions show the formation of hydrophobic domains. The interactions between the polyelectrolytes and the oppositely charged surfactants lead to the formation of induced premicelles at surfactant concentrations lower than the cmc of the surfactants. This aggregation process is assumed to be due to electrostatic attraction. At the same concentration, the excimer-to-monomer emission ratio shows its first peak. At higher surfactant concentrations, near the cmc, micelles with the same properties as those found in pure aqueous solution are formed. On the other side, systems containing an anionic surfactant do not show this behavior at low concentrations. There is no apparent dependence of the cac on the composition of the polymer, reinforcing the assumption that the electrostatic interactions induce the formation of the premicelles. The values of the cac's follow the same trend as for the cmc's, DTAC>DTAB>CTAC. The polarity of the induced premicelles, as measured by the I1/I3 ratio, also indicates that the microdomains formed by the longer chain surfactants are more hydrophobic than those of the shorter chain surfactants, as also happens with real micelles.  相似文献

Interfacial tension of water–CO2 interface was measured by pendant drop method in the presence of a surfactant of various concentrations. The surfactants used were three surfynols which are non-ionic blanched hydrocarbon with different length of the alkyl side chain. Prior to the interfacial tension measurements, the solubility of the surfynols in CO2 were determined from cloud point method. The measured interfacial tensions indicated that an addition of small amount surfactant did reduce the interfacial tension. The interfacial activities of surfactants were evaluated from the slope of the interfacial tension reduction curve against the surfactant concentration and rationalized in terms of the molecular natures such as hydrophobic alkyl chain length.  相似文献

The dilational viscoelastic properties of hydrophobically modified partly hydrolyzed polyacrylamide and anionic surfactants (4,5-diheptyl-2-propylbenzene sulfonate and gemini surfactant C12COONa-p-C9SO3Na) in the absence or presence of electrolyte have been investigated at the decane–water interface by means of longitudinal method and the interfacial tension relaxation method. Experimental results show that at low surfactant concentration, the increase of the dilational modulus by the addition of surfactant molecules at low frequency might be explained by the mix-adsorption of the polymer chains and surfactant molecules. At the same time, polymer chain could sharply decrease the dilational modulus of surfactant film mainly due to the weakening of the strong interactions among long alkyl chains in surfactant molecules. At high surfactant concentration, the addition of surfactant molecules can decrease the dilational modulus of polymer solution due to the fast process involving in the exchange of surfactant molecules between the interface and the mixed complex formed by surfactant molecules and hydrophobic micro-domains. The added electrolyte, which results in screening of electrostatic interactions between the ionized groups, generally increases the frequency dependence of the interfacial dilational modulus. The data obtained on the relaxation processes via interfacial tension relaxation measurements can explain the results from oscillating barriers measurements very well.  相似文献

The understanding of the formation, structures, and properties of emulsions is essential to the creation and stabilization of structures in food. The increasing use of surfactants, the identification of compounds with low toxicity and good surface activity properties is of great interest. The relevance of the major end points specified in the Organisation for Economic Co-operation and Development (OECD) guidelines for the hazard assessment of food chemicals is critically analyzed and main parameters are acute toxicity, subacute repeated studies, allergy, reproductive toxicity, long-term studies, and mutagenicity tests. We focus this article on surfactant association structures and food colloids. There is almost infinite number of combinations are organized and arranged in very complex internal microstructures with various types of assemblies such as dispersions, emulsions, foams, gels, etc. Low-mass surfactants are very mobile at the interface and they are particularly efficient reducing the interfacial tension. As a result, they rapidly coat the freshly created oil-water interface during emulsification. In this category, we mainly mentioned monoglycerides, lecithins, glycolipids, fatty alcohols and fatty acids. High-mass surfactants cover protein and polysacharide groups. The protein molecule may interpenetrate in the lipid phase to various degrees. The specific binding is predominantly electrostatic: The headgroups of the surfactants bind to groups of opposite charge on the protein. The saturation binding for anionic surfactants is pH-independent and seems to be controlled by the cooperative hydrophobic interactions. Polysaccharides and smallmolecule surfactants are two of the predominant groups of amphiphilic materials that have been explored for the stabilization of emulsions. One of the most important aspects of polymer-surfactant systems is their ability to control stability and rheology over a wide range of composition. Biocompatible, biodegradable, and/or nontoxic emulsion-based formulations have great potential for applications in the food. The combination of particular characteristics such as emulsifying, anti-adhesive and antimicrobial activities presented by biosurfactants suggests potential application as multipurpose ingredients or additives.  相似文献

Depending on the bulk composition, adsorption layers formed from mixed protein/surfactant solutions contain different amounts of protein. Clearly, increasing amounts of surfactant should decrease the amount of adsorbed proteins successively. However, due to the much larger adsorption energy, proteins are rather strongly bound to the interface and via competitive adsorption surfactants cannot easily displace proteins. A thermodynamic theory was developed recently which describes the composition of mixed protein/surfactant adsorption layers. This theory is based on models for the single compounds and allows a prognosis of the resulting mixed layers by using the characteristic parameters of the involved components. This thermodynamic theory serves also as the respective boundary condition for the dynamics of adsorption layers formed from mixed solutions and their dilational rheological behaviour. Based on experimental studies with milk proteins (β-casein and β-lactoglobulin) mixed with non-ionic (decyl and dodecyl dimethyl phosphine oxide) and ionic (sodium dodecyl sulphate and dodecyl trimethyl ammonium bromide) surfactants at the water/air and water/hexane interfaces, the potential of the theoretical tools is demonstrated. The displacement of pre-adsorbed proteins by subsequently added surfactant can be successfully studied by a special experimental technique based on a drop volume exchange. In this way the drop profile analysis can provide tensiometry and dilational rheology data (via drop oscillation experiments) for two adsorption routes — sequential adsorption of the single compounds in addition to the traditional simultaneous adsorption from a mixed solution. Complementary measurements of the surface shear rheology and the adsorption layer thickness via ellipsometry are added in order to support the proposed mechanisms drawn from tensiometry and dilational rheology, i.e. to show that the formation of mixed adsorption layer is based on a modification of the protein molecules via electrostatic (ionic) and/or hydrophobic interactions by the surfactant molecules and a competitive adsorption of the resulting complexes with the free, unbound surfactant. Under certain conditions, the properties of the sequentially formed layers differ from those formed simultaneously, which can be explained by the different locations of complex formation.  相似文献

In order to compare the formation of host–guest complexes between β‐cyclodextrin (β‐CD) or cucurbit[7]uril (CB7) and cationic surfactants we studied the hydrolysis of 4‐methoxybenzenesulfonyl chloride (MBSC). The selected surfactants allowed the length of the hydrocarbon chain to be varied between 6 and 18 carbon atoms. Contrary to the expected behaviour, the values of the binding constants between CB7 and surfactants are independent of the alkyl chain length of the surfactant. In the case of β‐CD, however, a clear dependence of the binding constant on the hydrophobic character of the surfactant was observed. The values obtained with CB7 are significantly higher than those obtained with β‐CD and these differences are explained to be a consequence of electrostatic interactions of the surfactants with the portals of CB7. It was found that a small percentage of uncomplexed CB7 was in equilibrium with the cationic micelles and this percentage increased on increasing the hydrophobic character of the surfactant.  相似文献

The interaction has been studied in aqueous solutions between a negatively charged conjugated polyelectrolyte poly{1,4-phenylene-[9,9-bis(4-phenoxybutylsulfonate)]fluorene-2,7-diyl} copolymer (PBS-PFP) and several cationic tetraalkylammonium surfactants with different structures (alkyl chain length, counterion, or double alkyl chain), with tetramethylammonium cations and with the anionic surfactant sodium dodecyl sulfate (SDS) by electronic absorption and emission spectroscopy and by conductivity measurements. The results are compared with those previously obtained on the interaction of the same polymer with the nonionic surfactant C12E5. The nature of the electrostatic or hydrophobic polymer-surfactant interactions leads to very different behavior. The polymer induces the aggregation with the cationic surfactants at concentrations well below the critical micelle concentration, while this is inhibited with the anionic SDS, as demonstrated from conductivity measurements. The interaction with cationic surfactants only shows a small dependence on alkyl chain length or counterion and is suggested to be dominated by electrostatic interactions. In contrast to previous studies with the nonionic C12E5, both the cationic and the anionic surfactants quench the PBS-PFP emission intensity, leading also to a decrease in the polymer emission lifetime. However, the interaction with these cationic surfactants leads to the appearance of a new emission band (approximately 525 nm), which may be due to energy hopping to defect sites due to the increase of PBS-PFP interchain interaction favored by charge neutralization of the anionic polymer by cationic surfactant and by hydrophobic interactions involving the surfactant alkyl chains, since the same green band is not observed by adding either tetramethylammonium hydroxide or chloride. This effect suggests that the cationic surfactants are changing the nature of PBS-PFP aggregates. The nature of the polymer and surfactant interactions can, thus, be used to control the spectroscopic and conductivity properties of the polymer, which may have implications in its applications.  相似文献

Solutions of surfactant-polymer mixtures often exhibit different foaming properties, compared to the solutions of the individual components, due to the strong tendency for formation of polymer-surfactant complexes in the bulk and on the surface of the mixed solutions. A generally shared view in the literature is that electrostatic interactions govern the formation of these complexes, for example between anionic surfactants and cationic polymers. In this study we combine foam tests with model experiments to evaluate and explain the effect of several polymer-surfactant mixtures on the foaminess and foam stability of the respective solutions. Anionic, cationic, and nonionic surfactants (SDS, C(12)TAB, and C(12)EO(23)) were studied to clarify the role of surfactant charge. Highly hydrophilic cationic and nonionic polymers (polyvinylamine and polyvinylformamide, respectivey) were chosen to eliminate the (more trivial) effect of direct hydrophobic interactions between the surfactant tails and the hydrophobic regions on the polymer chains. Our experiments showed clearly that the presence of opposite charges is not a necessary condition for boosting the foaminess and foam stability in the surfactant-polymer mixtures studied. Clear foam boosting (synergistic) effects were observed in the mixtures of cationic surfactant and cationic polymer, cationic surfactant and nonionic polymer, and anionic surfactant and nonionic polymer. The mixtures of anionic surfactant and cationic polymer showed improved foam stability, however, the foaminess was strongly reduced, as compared to the surfactant solutions without polymer. No significant synergistic or antagonistic effects were observed for the mixture of nonionic surfactant (with low critical micelle concentration) and nonionic polymer. The results from the model experiments allowed us to explain the observed trends by the different adsorption dynamics and complex formation pattern in the systems studied.  相似文献

The stability and interactions in thin wetting films between the silica surface and air bubble containing (a) straight chain C10 amine and (b) cationic/anionic surfactant mixture of a straight chain C10 amine with sodium C8, C10 and (straight chain) C12 sulfonates, were studied using the microscopic thin wetting film method developed by Platikanov [D. Platikanov, J. Phys. Chem. 68 (1964) 3619]. Film lifetimes, three-phase contact (TPC) expansion rate, receding contact angles and surface tension were measured. The presence of the mixed cationic/anionic surfactants was found to lessen contact angles and suppresses the thin aqueous film rupture, thus inducing longer film lifetime, as compared to the pure amine system. In the case of mixed surfactants heterocoagulation could arise through the formation of positively charged interfacial complexes. Mixed solution of cationic and anionic surfactants shows synergistic lowering in surface tension. The formation of the interfacial complex at the air/solution interface was confirmed by surface tension data. It was also shown, that the chain length compatibility between the anionic and cationic surfactants system controls the strength of the interfacial complex. The observed phenomena were discussed in terms of the electrostatic heterocoagulation theory, where the interactions can be attractive or repulsive depending on the different surface activity and charge of the respective surfactants at the two interfaces.  相似文献

Complexation of DNA with cationic gemini surfactant in aqueous solution   总被引:1,自引:0,他引:1
Interactions between DNA and the cationic gemini surfactant trimethylene-1,3-bis(dodecyldimethylammonium bromide) (12-3-12) in aqueous solution have been investigated by UV-vis transmittance, zeta potential, and fluorescence emission spectrum. Complexes of DNA and gemini surfactant are observed in which the negative charges of DNA are neutralized by cationic surfactants effectively. The DNA-induced micelle-like structure of the surfactant due to the electrostatic and hydrophobic interactions is determined by the fluorescence spectrum of pyrene. It is found that the critical aggregation concentration (CAC) for DNA/12-3-12 complexes depends little on the addition of sodium bromide (NaBr) because of the counterbalance salt effect. However, at high surfactant concentration, NaBr facilitates the formation of larger DNA/surfactant aggregates. Displacement of ethidium bromide (EB) by surfactant evidently illustrates the strong cooperative binding between surfactant and DNA. In contrast to that in the absence of surfactant, the added NaBr at high surfactant concentration influences not only the binding of surfactant with DNA, but also the stability of DNA/EB complex.  相似文献

The spreading of a partially wetting aqueous drop in air on a hydrophobic surface can be facilitated by the adsorption of surfactants from the drop phase onto the air/aqueous and aqueous/hydrophobic solid interfaces of the drop. At the contact line at which these interfaces meet, conventional surfactants with a linear alkyl hydrophobic chain attached to a polar group adsorb onto the surfaces, forming monolayers which remain distinct as they merge at the contact juncture. The adsorption causes a decrease in the interfacial tensions and reduction in the contact angle but the angle remains above zero so the drop is still nonwetting. Trisiloxane surfactants with a T-shaped geometry in which the hydrophobic group is composed of a trisiloxane oligomer with a polar group attached at the center of the chain can give rise to a zero contact angle at the contact line and complete wetting (superspreading). Experimental evidence suggests the adsorption of the T-shaped molecule, in addition to significantly decreasing the tensions of the interfaces (relative to the conventional surfactants), promotes the formation of a precursor film consisting of a surfactant bilayer at the contact line which facilitates the spreading. The aim of this study is to use molecular dynamics to examine if the T-shaped structure can promote spreading by the formation of a bilayer and to contrast this case with that of the linear chain surfactant where complex assembly does not occur. The simulation models the solvent as a monatomic liquid, the substrate as a particle lattice, and the surfactants as united atom structures, with all interactions given by Lennard-Jones potentials. We start with a base case in which the solvent partially wets a substrate comprised of a lattice of particles. We demonstrate that adsorbed T-shaped surfactant monolayers can, when the interaction between the solvent and the hydrophile particles is strong enough, assemble into a bilayer, allowing the drop to extend to a thin planar film. In the case of the flexible linear chain surfactant, there is no interaction between the monolayers on the two interfaces in the case of a strong hydrophile-solvent interaction and less coordination for a weaker interaction. In either case, the monolayers remain distinct, as the surfactant only marginally improves wetting.  相似文献

Hydroxyl sulfobetaines with hexadecyl-, octadecyl-hydrophobic chain and an industrial product hydroxyl sulfobetaine were synthesized from analytical-grade and industrial-grade tertiary amine, respectively. The dilational properties and surface tension of the three surfactants at the water-air interface were investigated by drop shape analysis and ring method. The influences of oscillating frequency and bulk concentration on dilational properties were explored. The experimental results show that the dilational module of octadecyl-hydroxyl sulfobetaine was higher than hexadecyl hydroxyl sulfobetaine and the dilational elastic component of the three surfactants were higher than dilational viscous component. Furthermore, the dilational elastic component of mixed surfactant system shows two maxima in a lower concentration than that of single surfactant system. As a result, the surface tension of mixed surfactant system reaches to minimum value in a lower concentration compared with single surfactant system. The simulation results show that the hydrophobic chains in the mixed betaine solution were more curled than in single-component betaine solution ascribed to stronger interaction among different hydrophobic chains, resulting to a more compact interfacial film.  相似文献
