摘    要:蔗果低聚糖是一种广泛存在于天然的水果和蔬菜中的功能性低聚糖,可通过植物和微生物的果糖基转移酶作用来生产.它具有良好的口感和丰富的生理功能,可以应用于食品、饲料、医药、保健等许多领域.本文对固定化技术生产蔗果低聚糖进行综述,并展望今后发展的方向.

Abstract:Fructooligosaccharide(FOS),a functional sweetener,has been found in various fruits and vegetables and can be produced by the fructosyltransferase from plants and microorganisms.It has a good taste and much more physiological functions,and may be applied in many domains such as the food,the feed,the medicine,the health-care and so on.In this article,the progresses of FOS production by immobilization technology are summarized,the prospect of this new technology is also stated.
