暹罗鳄多肽粉的营养成分分析

摘    要:以暹罗鳄(Crocodylus siamensis)肉为原料,采用胰蛋白酶酶解,通过喷雾干燥工艺得到暹罗鳄多肽粉.分析该多肽粉对实验小鼠无不良反应,表明暹罗鳄多肽粉是无毒的.暹罗鳄多肽粉的成分分析结果显示,其蛋白质质量分数达74.3%,总糖和脂肪质量分数分别仅为1.24%和1.89%,氨基酸种类齐全,其人体需要量最大的赖氨酸和亮氨酸含量较多.同时其对人体有益元素含量从高到低依次为K、Na、Ca、Mg、Fe、Zn、Cu.应用基质辅助激光解吸附飞行时间质谱法(MALDI-TOF-MS)分析了暹罗鳄多肽粉分子质量的分布范围,结果显示,暹罗鳄多肽粉分子质量主要集中在1 000~1 300 u.这些结果显示暹罗鳄多肽粉是一种高蛋白、低糖、低脂的功能性保健食品,具有很高的开发潜力.

Abstract:Peptide powder was prepared from Crocodylus siamensis using the enzymatic catalysis of trypsin before spray drying.After treated by the peptide powder,Kunming mice were normal in health with no illness.The constituents of peptide powder were investigated by analyzing the main components,metal contents,amino acid compositions and the range of polypeptide molecular mass.The results showed that in the peptide powder from Crocodylus siamensis,amino acid and metal elements were very rich,and the contents of lysi...
