Abstract:It has been shown that a cotton seed protein isolate obtained by extraction with acid possesses a high emulsifying activity. The level of activity depends substantially on the pH of the medium and the method of precipitating the proteins. The stability of an emulsion obtained on the basis of the cottonseed isolated studied depends on its solubility.Institute of the Chemistry of Plant Substances, Academy of Sciences of the Uzbek SSR, Tashkent.
