摘    要:通过对猪肉变质过程中生物化学机理分析,研究了猪肉脂肪组织细胞结构在氧化腐败过程中形态的特异变化.利用图像处理技术提取细胞组织特征信息,进行了聚类和分类判决,为猪肉新鲜度检测提供了一种新的辨识方法.

Abstract:The morphology change of the adipose tissue through the corruption of the animal body was researched on the bases of the studying of the mechanism of pork freshness identifying.The specific property information of the cell organization was extracted from the original pictures on the base of the image processing technology which may provide a new way for the pork freshness determination.
