摘    要:确立了用色谱/质谱/质谱测定食品中胆固醇的一种新方法,试样经乙酸乙酯提取后,GC/MS/MS测定分析,以胆固醇分子离子为母离了,以其子离子为定量分析的碎片离子。线性好,回收率高,方法可靠。

Abstract:A new method was developed for the determination of cholesterol in food by GC/MS/MS. The cholesterol in sample was extracted with ethyl acetate. The determination was carried out using GC/MS/MS with molecular ion (m/z 386) of cholesterol as father ion and fragments (m/z386, m/z301, m/z231) as daughter ions for quantitative analysis. The method is of good linearity and high recovery.
