Abstract:Rapid and sensitive detection of food-borne pathogens is the focus of attention in the field of food and drug safety. Surface enhanced Raman spectroscopy (SERS) technology has been widely concerned in the rapid and sensitive detection of food-borne pathogens due to its advantages such as fast detection speed, rich information, high sensitivity, and non-destructiveness. This article focuses on substrate materials in SERS detection, summarizes the characteristics and performance of liquid-phase substrates, rigid-solid-phase substrates, and flexible solid-phase substrates, and summarizes their applications in the rapid and sensitive detection of pathogens. Our review can provide ideas and references for further developing and application of SERS technology in detection of food-borne pathogens.
