黄曲霉毒素对食品的污染及危害

摘    要:黄曲霉毒素是化学结构相似的一群衍生物,可分为B1和G1两大类。黄曲霉毒素性质较稳定,其产生菌黄曲霉菌在自然条件下较易生长繁殖,并产生具有毒性的黄曲霉毒素,此毒素对人类造成致突变危害、肝脏危害等,容易对食品造成污染从而危害人类健康。检测黄曲霉毒素需要简便、快速、容易操作的方法。预防黄曲霉毒素产生危害的主要措施是防霉和去毒。

Abstract:Aflatoxins are a group of similar derivatives of the chemical structure,and can be divided into two ma-jor categories: B1 and G1.The chemical properties of Aflatoxins are stable,and the toxins are harmful to humans,such as mutagenic and liver damage etc,and it is easy to cause pollution to food,which hazards human health.Detection of Aflatoxins need to be simple,fast and easy to operate.Major measures to prevent the hazards are: Antifungal measures and Detoxification.
