Abstract: | A model for the complete system of bioaccumulation, transport, and biotransformation of polyphenolic compounds (flavonols)
that includes hemoglobin-containing red blood cells and serum albumin was proposed. The distribution of flavonols between
the erythrocyte fraction and albumin was studied. Hemoglobin was shown to play a role in the biotransformation of flavonols.
The formation of several intermediate and final products of pseudoperoxidase oxidation of flavonols catalyzed by methemoglobin
was established by UV spectrophotometry and RP-HPLC.
