鱼油长碳链多不饱和脂肪酸的生理效应及其开发和利用

摘    要:较系统地介绍了鱼油长碳链多不饱和脂肪酸,并重点阐述了二十碳五烯酸,抗心血管病和抗风湿性关节炎的原理以及二十二碳六烯酸促进幼儿的智力、视力和生殖系统发育的原理,并且对其历史作了一些叙述。本文明确指出开发和利用鱼油中长碳链多不饱和脂肪酸的关键问题是提高其产品的氧化稳定性,并对其提取工艺提出了改进意见。

Abstract:This paper introduces the basic concept of long chain polyunsaturuted fatty acids in fishoils.It is demonstrated why eicosapentaenoic acid(EPA)can prevent from and cure cardiovasculardiseases and rheumatoid arthritis;and why docosahexaenoic acid is very important in growth ofyoung children. The author suggests that the key problem to develop and use EPA and DHA in fishoils is to increase the oxidative stability of EPA and DHA concentrate by addition of high effectiveantioxidants.
