国家名酒香型特征曲线的探讨

摘    要:本文通过在GC-1001型双氢焰离子化鉴定器上对国家名酒的分析、测得名酒类的成份含量,按其色谱峰的保留时间先后次序绘制成名酒的特征曲线,并着重于对不同香型的白酒中的酯类、醇类、醛类的各组份含量的变化关系,来探讨国家名酒香型与其之间的一般规律性。从而测得其香型的特征曲线,对白酒的研究工作有独特的意义。

Abstract:The chemical composition of national well-known spirits was measured by using Type GC-1001 double-FID in this work. Characteristic curves of the wcllknown spirits were drawn according to their keeping time chromatograp-hically. For different flavour typey plain-spirits, an investigation on the relationship of the flavour type of national well-known spirits with their composition of ester, alcohol, and aldehyde was carried out so as to find .o-ut their flayour type characteristic curves. This original work has signi-finance in the research the flayour types of plain-spirits.
