鉴湖偏门段湖水的相异常及其生物化学意义

摘    要:浙江绍兴黄酒闻名于世,论其质量以沈永和酿酒厂的产品为最佳.绍兴黄酒的水料自古至今汲自鉴湖,于是鉴湖湖水与绍兴黄酒之间关系十分密切.近年来对鉴湖湖水的微量元素进行全面分析后发现,沈永和酿酒厂采用的偏门段湖水含Mo量比其他湖段的要高得多,沈永和酿酒厂所产黄酒中M。含量也高出其他黄酒的许多倍M。能催化酿酒,又为人体必需的微量元素,所以,鉴湖偏门段湖水的Mo异常有着重要的生物化学意义.

Abstract:Jianhu Lake water has been used as the raw material in the world famous "Shaoxing Yellow Wine".Shen Yonghe Winery, situated in Pianmen Section area of Jianhu Lake, has long since made Yellow Wine of best quality. The lake water at Pianmen Secton is found recently, through the trace elements analysis, to contain more molybdenum content than that at other sections of Jianhu Lake, and the molubdenum content in yellow wine made by Shen Yonghe Winery is greater than that by other wineries along the lake.Molybdenum is not only an essential and beneficial trace element to human health, but also the good catalyst for wine making. Because of the discovery of the molybdenum anomaly, the Jianhu Lake water at PianmenSection and its product--yellow wine made by Shen Yonghe Winery willbe more appreciated by the people of both at home and abroad.
