Abstract:Using egg white as main raw material, this study sought out a process condition for lysozyme (nuramidase)production, worked out a production technology, presented a method to determine the activity of the enzyme. The application of the enzyme was also preliminarily discussed. The aim of this study is to offer a practical and simple technology for small enterprise.
