摘    要:甲醛被世界卫生组织确定为致癌、致畸物质和公认的变态反应源。为了查明水产品中天然甲醛的含量水平及其对人体的健康风险,研究了常见水产品中的甲醛天然含量,参照CAC的方法对其进行了健康风险评估。结果显示,除龙头鱼和鱿鱼丝外,其他常见水产品和水产加工品的天然甲醛含量较低,所检测的常见水产品甲醛天然含量的平均值为7.282mg/kg,急性膳食暴露和慢性膳食暴露均小于相关标准。因此,水产品中存在的天然甲醛不会对人体健康造成目前科学水平能检测到的损害。

Abstract:If was affirmed that formaldehyde was carcinogen,teratogen and could cause allergic reaction in human by WHO.The paper surveyed the natural contents of formaldehyde in common aquatic products and conducted a risk assessment on it by the method of CAC.The results showed that the content of formaldehyde in most aquatic products was low,apart from Bombay duck and shredded squid.The average content of formaldehyde in the common aquatic products which were detected in the paper was 7.282 mg/kg.Acute dietary exposure risk assessment and chronic dietary exposure risk assessment were both accorded with the interrelated criterion.The common aquatic products were basically safe.
