西兰花液氮流态化速冻的实验研究及理论分析

摘    要:流态化技术被广泛应用于各种行业,本文以西兰花为例对液氮喷雾流态化速冻过程的传热机理进行了分析,通过焓法数学模型进行数值计算,求出冻结时间,并与实验结果进行了比较.通过比较得出,在进行数值计算时将西兰花简化为一维模型可以大大简化计算过程,而通过此种方法得出的冷冻时间与实验数据相比,误差是可以接受的.

Abstract:Fluidization is widely used in many industries.This paper,taking broccoli as an example, presents several analyses about heat transfer mechanism in L-N_2 spraying Fluidized quick freezing process.Freezing time got through the enthalpy method is compared with experimental data,which indicates that the 1-D model in simulation can simplify the calculation process and the error from this simplification is acceptable.
