摘    要:α-乙酰乳脱酸羧酶在促进啤酒的风味成熟方面有广阔的应用前景.本文介绍一株纯培养的α-乙酸乳酸脱羧酶产生菌AD6的分离及筛选过程;并对该菌的特征及部分生理生化指标作了初步描述.

Abstract:The finding that the diacetyl content could be greatly reduced by acetolactate decarboxylase led to it's use as a maturation aid in brewing industry. These experiments had revealed the Separation and Screening of a acetolactate decarboxylase generating strain AD6 The physiologic and biochemical characters of this strain tad also been studed.
