北太平洋红鱿鱼营养成分分析及评价

摘    要:以北太平洋红鱿鱼为研究对象,通过化学分析法和仪器分析法测定其营养成分。结果表明,北太平洋红鱿鱼的水分、粗蛋白、粗脂肪和灰分的含量分别为78.11%、17.48%、2.31%、1.72%。北太平洋红鱿鱼含有18种氨基酸,氨基酸总量占蛋白质量的86.09%,其中必需氨基酸占36.75%,含有人体所需的全部10种氨基酸,占氨基酸总量的74.46%,符合FAO/WHO的理想模式;其呈味氨基酸占氨基酸总量的38.76%。北太平洋红鱿鱼富含多不饱和脂肪酸,占脂肪酸总量的51.71%,其中EPA和DHA含量极其丰富,共占脂肪酸总量的46.13%。同时含有丰富的Na、K、Mg、P、Zn等元素。北太平洋红鱿鱼蛋白质、多不饱和脂肪酸含量高,必需氨基酸含量丰富,是营养价值较高的一种海产品。

Analysis and Evaluation of Nutritive Composition in Ommastephes bartrami

Abstract:Ommastephes bartrami as the research object, the main nutritional components of O. bartrami were determined with the nation standard methods and some other instrumental analysis methods.The results showed that the moisture, the crude protein, rudefat, and ash contents were 78.11%, 17.48%, 2.31%,1.72%, respectively. The content of total amino acids was 86.09%, among which 10 kinds of essential amino acids accounted for 36.75%, essential amino acids and amino acid ratio 74.46%, It was clear that the constitutional rate of the essential amino acids met the Food and Agriculture Organization of the United Nations/World Health Organization(FAO/WHO) Standards; the content of delicious amino acids was 38.76%. Many common fatty acids were found in the O. bartrami, the contents of PUFA were 51.71%; In PUFA, the contents of EPA and DHA were totally 46.13%. Ommastephes bartrami was rich of many kinds of inorganic elements such as Na, K, Mg, P, Zn. It is a kind of sea product with great nutritional value which has high content of protein and essential amino acids.
