摘    要:对在30℃、4℃、-10℃、-20℃ 4种温度下贮藏的葛氏长臂虾的磷脂成分变化进行了分析.结果表明:随着贮藏温度的上升,葛氏长臂虾中磷脂的损失率增加;在不同温度下贮藏3d,磷脂各组分的相对百分比都发生了变化,随贮藏温度的升高PC的降解速度大大加快,所占的百分比快速下降,而LPC的比例有不同程度的增加。

Abstract:The content of PL in Palaemon gravieri during storage at 30℃, 4℃,-10℃,-20℃ was measured, and the component of PL after three day's storage at different temperature was analysed by TLC. It is found that the content of PL and the ratio of PC/PL decreaseapparently, but LPC increases at different degrees during storage at higher temperature. PL does not vary apparently during storage at -20℃, so it is better to keep Palaemon gravieri under a lower storage temperature.
