水产品溯源中的同位素技术研究进展

摘    要:水产品质量参差不齐,养殖方式多种多样,产地来源也各不相同,普通消费者难以从外观和口感来鉴别其真实来源。近年来,同位素质谱技术被认为是最可靠、最常用的溯源手段。综述了同位素质谱技术及其联合脂肪酸组成和元素组成在水产品溯源中的应用研究进展,并对其发展趋势进行了展望。

Abstract:It is difficult to distinguish the differences between quality,production methods and geographical origin of the aquatic products for ordinary consumers. In recent years,the isotope ratio analysis is considered to be the most effective method.Recent progress in the application of isotope ratio analysis and combination of multi-element and fatty acids analysis for determining the origin of aquatic products were reviewed,and future trends were also discussed.
