摘    要:探讨了不同温度和贮藏条件下秀珍菇SOD和POD活性与商品性状的关系.结果表明,采用PE膜4℃条件下密封贮藏效果好,此时菇体色泽正常,失水率只有3.690%(8 d);低温能有效地抑制采后菇体内POD的活性和褐变程度,维持SOD的活性;贮藏温度对保鲜期的影响是贮藏温度愈低,保鲜期愈长,4℃下可保鲜8 d以上.

Abstract:Preservation techniques such as different temperatures and different conditions on its storage were used to study the relation between SOD activity POD activity and the character of Pleurotus geesteranus Singer.PE package was proved to be ideal on 4℃,because browning was less and the rates of weight-loss were low(3.690%,8d).Low temperature was could effectively inhibit post harvest browning and activities of POD,keep up activities of SOD.Low temperature caused a longer preservation period,particularly,more than 8 days of preservation had to be at 4℃.
