摘    要:采用V(浓硝酸)+V(高氯酸)=4+1湿法消解柑橘果汁样品,应用火焰原子吸收法测定了15种柑橘果汁中7种金属元素K、Mg、Ca、Fe、Cu、Mn、Zn的含量。结果显示,柑橘果汁中含有大量的常量元素K、Mg、Ca,且不同品种之间有较大差异。微量元素中Fe和Zn含量较高。15个品种中,439桔橙的K、Ca、Mn3种元素含量最高。该结果不仅可用于产品的营养标识,而且可望应用于果汁加工工艺的确定与优化。

Abstract:To investigate the amount of metal element in the citrus juices flame atomic absorption spectrophotometry (FAAS).Was used to determine the content of K,Mg,Ca,Fe,Cu,Mn and Zn in the selected fifteen citrus juices of China after the digestion with V(HNO_3) V(HClO_4)=4 1.The results indicated that citrus juices were abundant in major elements (K,Mg and Ca),and there were large variations among different varieties.Among the trace elements,Fe and Zn had relatively higher amounts.Meanwhile,Hybrid 439 achieved the highest value of K,Ca and Mn among the selected fifteen citrus fruits.These results were useful to the nutritional label of citrus juices and also valuable to the citrus juice processing technology.
