抗坏血酸/谷氨酸Maillard反应体系中间产物和褐变程度的研究

用磷酸缓冲溶液配制一系列不同质量分数的抗坏血酸/谷氨酸混合溶液pH8.0并在130℃下加热发生Maillard反应,对反应后体系的中间产物(A294nm)、褐变程度(A420nm)以及反应过程中抗坏血酸和谷氨酸的含量进行检测分析.结果显示,抗坏血酸通过热解产物与氨基酸发生Maillard反应,抗坏血酸质量分数的增大能促进反应体系的褐变,谷氨酸质量分数对反应体系褐变程度的影响不大.任意增大一种反应物的质量分数均可对无色中间产物的生成起促进作用,且抗坏血酸对中间产物生成的影响大于谷氨酸.

关于Lowen空间指数对象的一点注记

L-拓扑空间(X,△)称为一Lowen空间若△有一组由层特征函数构成的基,即△中形如a∧U,a∈L,U∈X的元素构成△的一组基.若L=[0,1],则(X,△)是一Lowen空间当且仅当(X,△)是一Lowen意义下的fzzy邻域空间.通过在函数空间上引入适当的L-拓扑结构,证明了若0∈L是一素元并且Lowen空间(X,△)的开集格是一连续格,则(X,△)是Lowen空间范畴中一指数对象.特别地,若一fuzzy邻域空间的开集格连续,则它是FNS中一指数对象.

抗坏血酸同顺磁离子Mn~(2+)、Gd~(3+)络会的~(13)C NMR研究

该文用顺磁离子对其近邻~(13)C核的NMR吸收增宽效应,系统地研究了抗坏血酸在不同溶剂中对金属离子Mn~(2+)、Gd~(3+)的配合行为.在水溶液中,抗坏血酸可通过两种配合方式与Mn~(2+)作用,但与Gd~(3+)的作用只有一种稳定的结构.在水中抗坏血酸对金属的配位活性部位分别是1位羟基氧,3位离解的羟基氧和6位羟基氧.在DMSO中,3位羟基由于H~+对该基团的静电遮蔽而变得对金属离子Mn~(2+)表现为配位惰性,同时6位羟基配位活性较大增强.对Gd~(3+)来说,此时没有优势配位活性部位存在.文章还讨论了抗坏血酸在H_2O-DMSO混合溶剂中的~(13)C NMR谱及在DMSO中NaOH对其~(13)C NMR谱及其与金属络合结构的影响.
