Zinc is an essential mineral which plays a key role in several important biological processes in the human body. The determination of its level in food matrices can contribute to the food quality characterization and to the adequacy of the diet. Animal food products generally have a higher zinc content compared to vegetables. Among them, dairy products consumption can provide a great contribution to the zinc reference intakes. In this study, different Italian cheeses (38 Protected Denomination of Origin and 9 Traditional) were evaluated for their zinc content. Cow cheeses generally showed the highest zinc content (1.83–7.75 mg/100 g cheese), followed by sheep cheeses (1.34–3.69 mg/100 g), and cheeses from mixed milk (0.39–4.54 mg/100 g). The only cheese from buffalo milk (Mozzarella di Bufala Campana PDO) showed a zinc content of 2.14 mg/100 g. The great variability in the zinc content observed among the samples is the result of the influence of several factors, such as the feeding system, the species (cow, sheep, goat, and buffalo), and the cheese-making. Most of the samples resulted in a great contribution (>10%) to the zinc Daily Reference Intake set by EU (10 mg/day), with only two samples contributing to less than 4%.  相似文献

‘Oliva di Gaeta’ is almost certainly the most important and well-known PDO denomination for table olives in Italy. Their production is based on a specific two-stage trade preparation called the ‘Itrana’ method. In this work, we investigated how variations in the duration of the initial water fermentation (i.e., 15 and 30 days) and the salt concentration (i.e., 6% and 8% NaCl) influence the chemical features, microbial dynamics, polyphenols, volatile organic compounds, and sensory features of ‘Oliva di Gaeta’. The time of the addition of salt did not affect the final concentration in the brine, but a longer initial water fermentation (before salt addition) led to lower pH values. The bacterial count constantly increased until the salt addition (i.e., either 15 or 30 days), while the yeast population peaked on day 30. Generally, the two different salt concentrations did not affect the count of microorganisms at the end of fermentation, with the only exception being a higher lactic acid bacteria count for the treatment with 6% salt added at 30 days. At commercial maturity, the crucial bitter tastant oleuropein was not completely removed from the drupes, and differences in salt concentration and the length of the first-stage water fermentation did not influence its content at the end of olive curing. Richer volatile profiles of olives were detected with higher-salt treatments, while the combination of low salt and early saline treatment provided a more distinct profile. Longer initial water fermentation caused a small increase in some phenolic compounds (e.g., iso-verbascoside, verbascoside, and hydroxytyrosol-glucoside). A panel test indicated that salt application at 30 days resulted in a more “Sour” and “Bitter” taste, irrespective of the salt concentration. The low salt concentration coupled with the late saline treatment resulted in more “Fruity” notes, probably due to the higher production of esters by lactobacilli. The slightly bitter perception of the olives was consistent with the partial removal of oleuropein. Our work revealed the characteristics of the ‘Itrana’ method and that the variation in salt concentration and its time of application changes parameters ranging from the microbial dynamics to the sensory profile. Specifically, our data indicate that 6% NaCl coupled with a longer initial water fermentation is the most different condition: it is less effective in blocking microbial growth but, at the same time, is more potent in altering the nutritional (e.g., polyphenols) and sensorial qualities (e.g., bitterness and fruitiness) of ‘Oliva di Gaeta’.  相似文献

A facile and economic approach was demonstrated for the artificial control of the grating period in 2D ZnO nanostructures. Highly-ordered ZnO nanostructures with various periodicities (e.g., 0.5, 1.0, 1.5, and 2.0 μm) were prepared through a combination of a controlled Ar+ laser interference process on a PDO3 film and spin-coating technique utilizing aqueous zinc acetate/polyvinyl alcohol (PVA) solution, which obviate the need for costly and complex processes such as a chemical etching step. The grating periods of the resulting 2D ZnO arrays are well matched with those of the photodynamically manipulated 2D surface relief grating (SRG) structure of the polymeric templates. The optical properties of 2D ZnO nanostructures with various widths and spatial densities were explored.  相似文献

The fatty acid (FA) profiles of 240 samples of ricotta whey cheese made from sheep, goat, cow, or water buffalo milk were analyzed by gas-chromatography (GC). Then, sequential preprocessing through orthogonalization (SPORT) was used in order to classify samples according to the nature of the milk they were made from. This strategy achieved excellent results, correctly classifying 77 (out of 80) validation samples. Eventually, since 36 (over 114) sheep ricotta whey cheeses were PDO products, a second classification problem, finalizing the discrimination of PDO and Non-PDO dairies, was faced. In this case, two classifiers were used, SPORT and soft independent modelling by class analogy (SIMCA). Both approaches provided more than satisfying results; in fact, SPORT properly assigned 63 (of 65) test samples, whereas the SIMCA model accepted 14 PDO individuals over 15 (93.3% sensitivity) and correctly rejected all the other samples (100.0% specificity). In conclusion, all the tested approaches resulted as suitable for the two fixed purposes. Eventually, variable importance in projection (VIP) analysis was used to understand which FAs characterize the different categories of ricotta. Among the 22 analyzed compounds, about 10 are considered the most relevant for the solution of the investigated problems.  相似文献

In this study pressure drop oscillations in two parallel channels are analyzed taking into account the thermal capacity of the pipes. A different limit cycle than the one that takes place in a single channel system is found. During the instability one channel always follows the typical pressure drop oscillations limit cycle while the other channel oscillates always in the superheated vapor region. This behavior leads to very high wall temperatures at the outlet of the heated pipe. This undesirable situation with one channel operating in the superheated vapor region takes place also for the maldistributed stable solutions.  相似文献

In the present study, the recently developed proton transfer reaction time of flight mass spectrometry (PTR-ToF-MS) technique was used for the rapid characterization of dry cured hams produced according to 4 of the most important Protected Designations of Origin (PDOs): an Iberian one (Dehesa de Extremadura) and three Italian ones (Prosciutto di San Daniele, Prosciutto di Parma and Prosciutto Toscano). In total, the headspace composition and respective concentration for nine Spanish and 37 Italian dry cured ham samples were analyzed by direct injection without any pre-treatment or pre-concentration. Firstly, we show that the rapid PTR-ToF-MS fingerprinting in conjunction with chemometrics (Principal Components Analysis) indicates a good separation of the dry cured ham samples according to their production process and that it is possible to set up, using data mining methods, classification models with a high success rate in cross validation. Secondly, we exploited the higher mass resolution of the new PTR-ToF-MS, as compared with standard quadrupole based versions, for the identification of the exact sum formula of the mass spectrometric peaks providing analytical information on the observed differences. The work indicates that PTR-ToF-MS can be used as a rapid method for the identification of differences among dry cured hams produced following the indications of different PDOs and that it provides information on some of the major volatile compounds and their link with the implemented manufacturing practices such as rearing system, salting and curing process, manufacturing practices that seem to strongly affect the final volatile organic profile and thus the perceived quality of dry cured ham.  相似文献

This paper presents a novel tool for Spanish commercial wine discrimination according to their designation of origin (PDO). A total of 65 commercial wines from different Spanish designation of origin (Alicante, Bullas, Campo de Borja, Jumilla, Castilla la Mancha, Ribeiro, Ribera de Duero, Rioja, Rueda, Utiel-Requena, Valdepeñas and Valencia) were characterized. The rare earth elements (REEs) content was determined by a high-temperature torch integrated sample introduction system (hTISIS) coupled to inductively coupled plasma mass spectrometry (ICP-MS). The REE content was used to draw characteristic PDOs radar charts. Results indicated that the REEs fingerprint provides a good prospect to discriminate the different Spanish PDOs, except for Alicante, Castilla la Mancha, Jumilla, Utiel-Requena and Valdepeñas. Finally, for those PDOs that were not properly distinguished, a second fingerprint obtained from Ba, Co, Cr, Mn, Ni, Pb and V content was used for discrimination purposes.  相似文献

Wine composition depends on many factors which are especially important for quality wines from specific regions, such as protected designation of origin (PDO) wines. Nineteen analytical parameters were analysed in commercial rosé wines from different Spanish PDOs (Ribera del Duero (RD), Rioja (Rj), Valdepeñas and La Mancha (M-V)), and from two consecutive vintages. Stepwise linear discriminant analysis (SLDA) was used to differentiate and classify these wines by their geographical origin. All the wines were made from “similar” varieties of grapes. The final model selected 12 variables, being ethanol and calcium the most important variables for the differentiation of the three PDOs. The evaluation of the model was done by crossvalidation, obtaining a global percentage of correct classification of 98.8% and of global prediction of 97.3%. These results can be considered satisfactory and acceptable, and the selected variables can be useful to differentiate these wines by their origin.  相似文献

The authors study symmetric operator matrices in the product of Hilbert spaces H = H1×H2, where the entries are not necessarily bounded operators. Under suitable assumptions the closure Lo exists and is a selfadjoint operator in H. With Lo, the closure of the transfer function is considered. Under the assumption that there exists a real number β < inf p(A) such that M(β)<< 0, it follows that β ε p(Lo). Applying a factorization result of A.I. Virozub and V.I. Matsaev [VM] to the holomorphic operator function M(λ, the_spectral subspaces of Lo corresponding to the intervals ] — ∞, β] and [β, ∞[ and the restrictions of Lo to these subspaces are characterized. Similar results are proved for operator matrices which are symmetric in a Krein space.  相似文献
