Fermentation of a reconstituted skim milk concentrate (8% protein) was investigated to elucidate the effects of various fermentation parameters on the structural, rheological and visual (wheying-off) properties of the resulting gels (pH 4.60). Fermentation trials were performed with non-exocellular polysaccharide-producing strains of Streptococcus thermophilus at various fermentation temperatures and at various chymosin levels. Oscillatory vane rheometry carried out on the intact gels (at 4 °C) showed that the level of chymosin had a significant impact on the gel strength (storage modulus G′). This can be explained by the arrangement of casein micelles into more compact aggregates and the enhanced fusion of aggregated casein micelles as revealed by transmission electron microscopy for the gels fermented with chymosin. Wheying-off of the stirred gels as measured by a centrifugation test (at 4 °C) and pore size of the intact gel structures investigated by scanning electron microscopy both increased with increasing level of chymosin and increasing fermentation temperature (resulting in an increase in acidification rate). A higher level of syneresis (wheying-off) is explained by the larger pore size, since larger pores present a lower resistance to the outflow of whey from the gel.  相似文献

The study and prediction of very long-term atmospheric corrosion behaviour of ferrous alloys is of great importance in different fields. First the conservation of metallic artefacts in museum and the corrosion diagnosis on ferrous reinforcement used in ancient monuments since medieval times needs reliable data to understand the mechanisms. Second, in the frame of the interim storage of nuclear waste in France, it is necessary to model the long-term corrosion of low alloy steel overcontainer. The nature of phases and elements constituting the corrosion layers can greatly influence the corrosion mechanisms. On the one hand, it is crucial to precisely determine the nature of microscopic phases that can be highly reactive. On the other hand, some elements as P and S could modify this reactivity. To clarify this point and complementary to other studies using Raman micro spectroscopy technique, X-rays Absorption Spectroscopy (XAS) under synchrotron radiation plays a crucial role. It allows one to precisely identify the reactive phases in the corrosion layers. Micro-XAS was required in order to refine the spatial variation, at micrometer scale, of the predominant Fe oxidation state and to characterise the corresponding corrosion products. Moreover, the role of minor elements on phase’s stability and the chemical form of these elements in the rust layer, especially phosphorus and sulphur, was investigated.  相似文献

Laser-Induced Fluorescence (LIF) excitation spectra in the NOA–X (0-0) band were used for temperature measurements in the postflame region of high-pressure CH4/air flames. To improve the quality of the measured spectra and to perform reliable line-shape measurements, the initial mixture was doped with approximately 400 ppm NO. At pressures up to 18 bar, excellent agreement was obtained between NO LIF temperatures and NARS/rotational Raman temperatures. Effective broadening coefficients were also determined in these flames. Problems with quantitative concentration measurements of NO and single-pulse temperature measurements at high pressures are discussed.  相似文献

2 ∑–X2Π(0,0) band of OH has been studied in premixed methane/air flames using a cw Ar+ laser probe. Measurements of flame temperature and pressure were derived from fits of theoretical simulations to the observed time variation of signals over a pressure range of 10 to 40 bar and for different stoichiometry that were in agreement with independent measurements using N2 CARS and predictions of a one-dimensional flame calculation. Broadband DFWM spectra in the same band of OH were observed up to a pressure of 9 bar, above which signals were obtained only from scattering from thermal gratings. First beta- and gamma-spectroscopic decay studies of the N=82 r-process "waiting-point" nuclide 130Cd have been performed at CERN/ISOLDE using the highest achievable isotopic selectivity. Several nuclear-physics surprises have been discovered. The first one is the unanticipatedly high energy of 2.12 MeV for the [pi g(9/2) multiply sign in circle nu g(7/2)] 1(+) level in 130In, which is fed by the main Gamow-Teller transition. The second surprise is the rather high Q(beta) value of 8.34 MeV, which is in agreement only with recent mass models that include the phenomenon of N=82 shell quenching. Possible implications of these new results on the formation of the A approximately 130 r-process abundance peak are presented.  相似文献

A novel coil, called Z coil, is presented. Its function is to reduce the strong thermal effects produced by rf heating at high frequencies. The results obtained at 500MHz in a 50 microl sample prove that the Z coil can cope with salt concentrations that are one order of magnitude higher than in traditional solenoidal coils. The evaluation of the rf field is performed by numerical analysis based on first principles and by carrying out rf field measurements. Reduction of rf heating is probed with a DMPC/DHPC membrane prepared in buffers of increasing salt concentrations. The intricate correlation that exists between the magnetic and electric field is presented. It is demonstrated that, in a multiply tuned traditional MAS coil, the rf electric field E(1) cannot be reduced without altering the rf magnetic field. Since the detailed distribution differs when changing the coil geometry, a comparison involving the following three distinct designs is discussed: (1) a regular coil of 5.5 turns, (2) a variable pitch coil with the same number of turns, (3) the new Z coil structure. For each of these coils loaded with samples of different salt concentrations, the nutation fields obtained at a certain power level provide a basis to discuss the impact of the dielectric and conductive losses on the rf efficiency.  相似文献

The corrosion behaviour of Middle Ages wrought iron bar chains exposed to indoor atmospheric corrosion for hundred of years in the Notre Dame Cathedral of Amiens (France) has been evaluated by means of Electrochemical Impedance Spectroscopy (EIS), a well-established electrochemical technique extensively used for testing anticorrosive properties of metal coatings. The measurements have been performed in situ with a portable EIS instrument designed to work as a standalone device, in six different areas of the wrought iron bar chains characterized by different aesthetical appearance. Moreover, a properly designed electrochemical cell has been employed to carry out the impedance measurements without affecting the artefacts surfaces. The wrought iron bar chains, as evidenced by μ-Raman and microscopic analyses, are covered by corrosion products constituted by iron oxides and oxyhydroxides, such as goethite, lepidocrocite, maghemite, akaganeite, organized in complex layered structures. In situ EIS allows one to investigate the phenomena involved at the electrochemical interfaces among the various corrosion products and to assess and predict their corrosion behaviour. From the analysis of the experimental findings of this monitoring campaign, EIS measurements can be proposed to restorers/conservators as a reliable indicator of dangerous situations on which they must act for the preservation of the iron artefacts.  相似文献
