Oil Migration in Chocolate

Oil migration in filled chocolates limits shelf life due to texture changes and loss of visual appeal. Spatial and temporal oil concentration changes of a two-layer chocolate and peanut butter filling system, which models a filled chocolate, were monitored by magnetic resonance imaging. Formulations of chocolate varied with respect to particle size, milk fat content and emulsifier level. Sorption-time experimental data was used to establish the best fit diffusion coefficient for a Fickian diffusion model. On the basis of the comparison of spatial experimental data to the model, Fickian diffusion alone does not account for oil migration. Authors' address: Michael J. Off-shell effects in quasielastic electron nucleus scattering

Using the Ward-Takahashi identity, on-shell condition, bound Dirac equation and off-shell expansion, a reduced version of half off-shell virtual photon nucleon vertex has been suggested. The vertex are decomposed into several different order terms: the on-shell terms, first and second off-shell terms. The off-shell behaviour of the form factors is discussed in the one meson loop model. Using the reduced vertex and parametrized off-shell form factors the quasielastic response functions are calculated for several nuclei at ¦q¦–k_f and for⁵⁶Fe at large ¦q¦ up to 1.14 GeV/c and at ?q²=0.9 (GeV/c)². The Coulomb sums are evaluated and a comparison of the theoretical prediction with data is given. The off-shell electron nucleon cross section is calculated and compared with the “cc1” off-shell extrapolation.     

Delamination of layered double hydroxides in polar monomers: new LDH-acrylate nanocomposites

The layered double hydroxide Mg2Al(OH)6(C12H25SO4) was delaminated to give high levels of inclusion in acrylate monomers; subsequent polymerisation of the monomers containing the LDH dispersion gave polyacrylates with the inorganic component still in the delaminated form.     

Magnetic nanoparticle assemblies on denatured DNA show unusual magnetic relaxivity and potential applications for MRI

Denatured (substantially single-stranded) herring sperm DNA acts as a template for the preparation of magnetic nanowires, forming stable aqueous suspensions, which exhibit unprecedentedly high relaxivity at low field, suggesting that the material may be a potentially useful reagent for MRI.     

Improved high-performance liquid chromatographic assay for the determination of ethionamide in serum

A solid-phase extraction (SPE) method was developed to simplify the preparation of human serum prior to high-performance liquid chromatography of ethionamide (ETA). Octadecyl SPE columns were used. Serum constituents were removed from the column with water, and ETA was eluted with methanol. Samples were evaporated to dryness, reconstituted in mobile phase, and assayed. The method is reproducible, with a recovery of ETA of 64%, comparable to the more tedious liquid-liquid extraction method for ETA.     

Some novel halogenated phenazine derivatives

3-Amino-10-aryl-2-arylimino-2,10-dihydrophenazines 1 undergo iodination in the 4-position of the phenazine nucleus yielding compounds which are identical with those obtained by oxidation of appropriate N-aryl-o-phenylenediamines with sodium iodate in the presence of acid. Bromination also takes place in this position but a second bromine atom enters the para-position of the arylimino moiety. The isomeric 10-aryl-3-aryl-amino-2,10-dihydro-2-iminophenazines 2 yield unstable iodo-derivatives but undergo bromination in the 1-and 4-position of the phenazine nucléus and in the ortho- and para-positions of the arylamino substituent. Preliminary chlorination experiments indicate that the substitution pattern is analogous to that established for the brominated products. The removal of bromine and iodine from the phenazine ring by reaction with a primary or secondary amine and their replacement by hydrogen rather than by the amine residue is also recorded.
