食品质量与安全是政府、食品行业以及消费者十分关注的问题。为了保证食品质量与安全,需要对食品中的风险因子进行检测。传统的分析方法如生物化学方法和仪器分析方法(色谱法、色谱-质谱法)存在前处理比较复杂,耗时,对样品具有破坏性及无法获取目标物空间信息等缺点。因此,开发快速,无损,实时和可视化的检测技术十分重要,这也是食品领域研究的热点。近年来,高光谱成像技术融合了成像和光谱两种技术,可以作为一种用于食品质量和安全评估的非破坏性和实时检测的工具。拉曼光谱成像技术可以同时获得待测物的光谱和空间信息,具有快速,无损和低成本等优点,在食品安全评价和质量控制中也得到了成功应用。质谱成像技术不需要标记和染色,即可实现样品组织表面待测物的可视化和高通量分析。它作为一种分子可视化技术,可以获得食品中营养成分及内、外源性有害物质的空间分布信息,在食品领域也表现出良好的应用前景。本文检索了近几年国内外发表的成像技术在食品研究中的相关文献,介绍了高光谱成像技术、拉曼光谱成像技术和质谱成像技术的原理,并综述了它们在食品安全与质量控制中的应用。此外,本文分析和讨论了这几种成像技术的优缺点,并对成像技术在食品领域的发展前景做出了展望。  相似文献

A series of polyethyleneimine‐based side‐chain liquid‐crystalline polymers substituted with different ratios of cyanobiphenyl as pendent mesogenic groups has been synthesized in which the spacer length varies between two and six methylene units. The structures of the synthesized polymers are confirmed by infrared and 1H nuclear magnetic resonance spectroscopy. The thermal properties of these polymers have been investigated using differential scanning calorimetry, polarized optical microscopy and X‐ray diffraction. The results indicate that the thermal behaviour of the polymers is strongly dependent on the degree of substitution. Polymers containing more than 69% of mesogenic groups exhibit nematic‐type thermotropic liquid‐crystalline behaviour with schlieren textures. Below this limit, the polymers are amorphous. Polymers with a higher degree of substitution present the crystalline states. The phase transition temperatures increase and the mesomorphic temperature ranges widen with increasing degree of substitution. The clearing temperatures decrease as the spacer length increases. An odd–even effect in the clearing temperatures is observed and the odd members display the higher values.  相似文献

The temperature dependence of the quadrupole interaction of111Cd in the In0.95 Ag0.045 Ga0.005 alloy is determined by the time differential perturbed angular correlation method from 77 to 422 K. The electric field gradients produced by the lattice are derived. The temperature dependence of the electric field gradient is found to follow theT 3/2 law observed in In between 77 K and room temperature and to deviate from it at higher temperatures. The widths of the electric field gradient distribution are 0.1147(259), 0.0924(340), 0.4954(601) and 1.344(175) at 77, 298, 373 and 422 K, respectively. This illustrates that the alloy is well ordered at 77 and 298 K and that it becomes less ordered at 373 and 422 K.  相似文献

A highly efficient catalytic system composed of a bifunctional polyacrylonitrile fiber (PANF‐PA[BnBr]) and a metal chloride was employed to produce 5‐hydroxymethylfurfural (HMF) from sucrose in mixed‐aqueous systems. The promoter of PANF‐PA[BnBr] incorporates protonic acid groups that promote the hydrolysis of the glycosidic bond to convert sucrose into glucose and fructose, and then catalyzes fructose dehydration to HMF, while the ammonium moiety may promote synergetically with the metal chloride the isomerization of glucose to fructose and transfer HMF from the aqueous to the organic phase. The detailed characterization by elemental analysis, FTIR spectroscopy, and SEM confirmed the rangeability of the fiber promoter during the modification and utilization processes. Excellent results in terms of high yield (72.8 %) of HMF, superior recyclability (6 cycles) of the process, and effective scale‐up and simple separation procedures of the catalytic system were obtained. Moreover, the prominent features (high strength, good flexibility, etc.) of the fibers are very attractive for fix‐bed reactor.  相似文献

建立了奶酪样品中29种禁用和限用合成色素的液相色谱/四极杆-飞行时间质谱(LC/Q-TOF MS)筛查方法。样品经正己烷-水(3:1, v/v)振荡提取,得到正己烷层、水层和残渣3部分。正己烷层经旋转蒸发浓缩后,用乙酸乙酯-环己烷(1:1, v/v)溶解,经过凝胶渗透色谱(GPC)净化去除油脂。水层经乙腈振荡提取,得到乙腈-水提取液。残渣经氨水-甲醇(1:99, v/v)溶液振荡提取,得到氨水-甲醇提取液。乙腈-水提取液和氨水-甲醇提取液不需净化直接分析。结果表明: 29种不同极性范围的合成色素化合物分别得到了有效的提取,提取回收率为70%~95%。而Q-TOF MS提供的精确质量数定性功能可以将不同种类的合成色素化合物筛查出来,各化合物与精确质量质谱库中化合物的匹配度为59.66~99.47。通过Target MS/MS扫描方式进行定量,得到8种苏丹类化合物的方法检出限为0.4~2.5 μg/kg, 21种水溶性合成色素及染料化合物的检出限为20~80 μg/kg。该方法对禁用和限用合成色素的筛查范围广泛,对含有蛋白质、脂肪等基质的食品具有较好的适用性。  相似文献

The phase transition in the alloys Pd0.8 Si0.2 and Pd0.75 Si0.20 Ag0.05 have been investigated through the quadrupole interaction of111Cd impurities. The quadrupole interactions were measured by means of the TDPAC technique from room temperature up to about 870 K. The variation of the quadrupole interaction with temperature in the alloy PdSiAg shows aT 3/2 dependence below and above 629 K, with coefficientsB=5.43(25)·10−5 K−3/2 andB=3.70(15)·10−5 K−3/2, respectively. This demonstrates that the alloy undergoes a phase transition around 629 K. The existence of two electric field gradients observed in the alloy PdSi,V zz (1)=3.47(54)·1017 V/cm2 andV zz (2)=2.29(36)·1017 V/cm2, indicates that there are two different111Cd sites. The corresponding fractionsf 1 andf 2 strongly depend on temperature. Below 520 K, most111Cd nuclei are subject to the higher EFGV zz (1) (f 1≈70%), whereas above 520 Kf 1 falls rapidly to zero andV zz (2) becomes dominant. The temperature dependences of thef 1 andf 2 reveal a picture of the phase transition between the two crystal structures.  相似文献
