Treatment and management of food processing waste is a major challenge for food industry. Potato processing industry generates tremendous amount of peel and consider it as zero valued waste. Again, pomace generated after juice extraction from sweet lime pulp is considered as waste and not properly utilized. Whereas these waste could be utilized for the development of biodegradable packaging film to overcome environmental issues. Composite films were prepared with varying proportion of potato peel powder (PP) and sweet lime pomace (SLP) in the ratio of 0:1(A), 0.5:1(B), 1:1(C), 1:0.5(D), 1:0(E) with an ultrasound treatment of 45 min, and 0:1(F), 0.5:1(G), 1:1(H), 1:0.5(I), 1:0(J) with an ultrasound treatment of 60 min. Ultrasound was applied for 45 and 60 min to film forming solutions to break down biopolymer particles small enough to form a film. All the films were analyzed for their barrier and mechanical properties. It was observed that increasing ultrasound treatment times gives better result in film properties and less PP content also gives better film properties, from these observations film G prepared with 0.5:1 (PP:SLP) showed better characteristics among all other films. Water vapor permeability, moisture absorption, water solubility, breakage strength and elongation capacity of G film were reported as 7.25 × 10−9 g/Pa h m, 12.88 ± 0.348%, 38.92 ± 0.702%, 242.01 ± 3.074 g and 7.61 ± 0.824 mm respectively. However, thermal decomposition for film G took place above 200 °C. The film forming solution of selected G film, added with clove essential oil (1.5%) as an antimicrobial agent was wrapped on bread and stored it for 5 days. The film was successful in lowering the weight loss, reducing the hardness and inhibition of surface microbial load from bread sample.  相似文献

The thermodynamics and kinetics of traditional and simultaneous dual frequency energy-gathered ultrasound (SDFU) assisted enzymolysis of potato protein were investigated to get the knowledge of the mechanisms on the SDFU’s promoting efficiency during enzymolysis. The concentration of potato protein hydrolysate and parameters of thermodynamic and kinetic during traditional and SDFU assisted enzymolysis were determined. The results showed that potato protein hydrolysate concentration of SDFU assisted enzymolysis was higher than traditional enzymolysis at the hydrolysis time of 60 min (p < 0.05) whereas not significantly different at 120 min (p > 0.05). In some cases, SDFU assisted enzymolysis took less hydrolysis time than traditional enzymolysis when the similar conversion rates of potato protein were obtained. The thermodynamic papameters including the energy of activation (Ea), enthalpy of activation (△H), entropy of activation (△S) were reduced by ultrasound pretreatment while Gibbs free energy of activation (△G) increased little (1.6%). Also, kinetic papameters including Michaelis constant (KM) and catalytic rate constant (kcat) decreased by ultrasound pretreatment. On the contrary, reaction rate constants (k) of SDFU assisted enzymolysis were higher than that of traditional enzymolysis (p < 0.05). It was indicated that the efficiency of SDFU assisted enzymolysis was higher than traditional enzymolysis in a limited time. The higher efficiency of SDFU assisted enzymolysis was related with the decrease of Ea and KM by lowering the energy barrier between ground and active state and increasing affinity between substrate and enzyme.  相似文献

The township of Shihoro is Japan’s biggest and most advanced dairy and field farming district which has been producing potatoes as a key crop. The potato irradiation plant was built at Shihoro in 1973 with a potato processing complex and has been shipping some 15,000 tons of sprout-inhibited potatoes a year during the sprouting season. From a technical viewpoint, the radiation efficiency of the Shihoro irradiator is lower than that of the usual irradiation facility using a carton box. The success of the Shihoro irradiator is shown in that radiation processing has been effectively included into one of the storage systems of a huge potato distribution facility. The sprout-inhibited potatoes as such are no guarantee of better business derived from potatoes, but producers see the merit of this process, because it makes possible year-round plant operations and planned shipments, keeps employees in year-round service and prevents rural depopulation, with an increase in the volume of business by expanding the area under crop. Recently in Japan, many companies have interests in commercial irradiation of spices, medical herbs and farm animal feeds before application to common foods.  相似文献

用水蒸汽爆破和氧化法对马铃薯废渣(PR)进行处理,制备马铃薯膳食纤维(PDF),并用红外光谱法、扫描电镜、热重及化学分析等方法对膳食纤维进行表征。结果表明,经过一系列的物理与化学处理,马铃薯渣中的半乳聚糖在蒸汽爆破下由长链断成短链,且由原来的块状变成片状、无规则的空间网层结构,断链的半乳糖醛基在氧化作用下生成羧基;所得到的PDF具有比表面积大、热力学稳定等特点。研究了PDF对胆固醇吸附性能。结果表明PDF对胆固醇的吸附量为1.4mg/g左右,其吸附机理符合Freundlich模式。马铃薯膳食纤维在生物体内对致病物质有一定的吸附作用。  相似文献

【目的】探明山西马铃薯种植区域土壤重金属污染状况,并对马铃薯进行重金属摄入健康风险评价。【方法】选取山西省境内马铃薯优势产业基地县(区)作为调查研究对象,用电感耦合等离子体质谱仪分析了马铃薯产地土壤及产品中铅、镉、砷、铬、镍、铜、锌等七种重金属元素含量状况,并采用单因子指数法、内梅罗综合指数法和潜在生态危害指数法对土壤中重金属进行生态风险评价,采用目标危险系数法对马铃薯进行重金属摄入健康风险评价。【结果】山西省马铃薯主产区土壤中7种重金属单项污染指数均小于1,综合污染指数小于0.5,潜在生态危害为轻微,土壤环境质量总体属于非污染水平,成人和儿童因食用马铃薯而摄入重金属的健康风险指数均小于1。【结论】山西省马铃薯主产区土壤中重金属污染程度较低,而马铃薯中重金属的残留对人体健康存在隐患,建议制定预防性手段,加强对马铃薯及其他蔬菜等土壤中重金属的跟踪与监测,确保农产品产地环境质量,从而确保农产品质量安全。  相似文献

马铃薯干腐病和疮痂病的检测通过人工目测,结果存在主观性,该工作研究正常、干腐和疮痂病马铃薯的光谱分类识别方法。试验获取116个样本,光谱采集范围860~1 745 nm。经过一阶导数(first derivative, FD)处理后的光谱数据,主成分(PCA)分类识别效果较好,FD作为光谱预处理方法。光谱曲线上的极值点、极值点间的中点和极值点间连线的斜率决定光谱曲线的形状和变化,是曲线上的关键点,光谱曲线形状变化代表着内部物质的变化,具有指纹特性,利用极值点和中点对应的光谱或极值点间连线的斜率组成模式特征向量。分别用3种样本关键点的平均光谱形成标准模式特征向量,通过计算待测样本关键点组成的特征向量和标准模式特征向量之间的马氏距离,以最小马氏距离判定样本的归属,通过错误识别率检验模型识别性能。正常、干腐、疮痂样本分别有13, 12, 15个关键点,由各自关键点对应的反射率组成的模式特征向量,3类样本的错误识别率为0。去掉冗余关键点整合成一个标准模式特征向量,正常和疮痂样本的错误识别率为0,干腐样本的错误识别率为14.3%,全部错误识别为疮痂样本,特征向量数据点的增多,增加了病害样本之间的...  相似文献

采用分光光度法与Al-CAS-CTMAB-OP四元络合物显色相结合,对甘薯中的铝含量进行了测定。A1^3 浓度在0-0.24μg/mL范围内遵守朗伯-比耳定律,相关系数r=0.9996。回收率为91.4%-102.6%,对甘薯样品测定的结果为190.8μg/g,δ=1.59,RSD=0.83%(n=5)。因甘薯中铝含量相对较高,建议在开发健康食品时应作特殊的前处理或进一步改良品种。  相似文献
