In this study, the combined effects of high pressure and sodium hydrogen carbonate (NaHCO3) treatment on the physical and chemical properties, and palatability of pork ham, a tough and under-utilized meat, were investigated. Assessment of meat properties with heat treatment, after exposure to NaHCO3 and high pressure treatment, revealed an increase in water content, and decreased weight reduction and rupture stress. The free amino acid content of meat samples increased with NaHCO3 and high pressure treatment. The effect of high pressure processing was especially notable at a pressure of 300 MPa. Sensory evaluation showed that meat subjected to high pressure processing after NaHCO3 treatment was tender and juicy. In addition, the sample produced minimal residue in the mouth and was characterized by a good taste. 相似文献

A new type of aromatic tetraamine containing biphenyl moiety in the side chain was synthesized via a modified Chichibabin's reaction.3-Nitro-4-acetamidoacetophenone was reacted with 4-phenyl benzaldehyde in the presence of ammonium acetate to obtain 2,6-bis(3',4'-diaminophenyl)-4-biphenyl pyridine(DPPA).A series of polypyrrolones(PPys) were prepared using tetraamine and various aromatic dianhydrides via a two-step cyclization procedure.All the PPys show excellent high temperature stabilities with the initial decomposition temperatures of 530-549℃ and residual weight ratio of 49%-80% at 750℃ in nitrogen.The polymers exhibit no apparent glass transition temperatures(T_gs)except PPy-1 (T_g=327℃),which is derived from tetraamine DPPA and 2,2-bis[4-(3',4'-dicarboxyphenoxy)-phenyl]propane dianhydride (BPADA).In addition,the polymers have acceptable mechanical properties with the tensile strength of 65-94 MPa.The PPy films show excellent hydrolysis-resistance in alkaline aqueous medium and could maintain most of the properties even after boiling in 10% aqueous sodium hydroxide solution for a week. 相似文献

A model for a flat isolated layer of a unidirectional fibrous composite with a regular structure is constructed to investigate the possible variants of its failure development. An integrodifferential equation for determining the forces in fibers is obtained. Primary attention is focused on examining the failure process after the rupture of one fiber. This causes a drastic redistribution of stresses, which can lead to a failure of adjacent fibers owing to the increased load on them, to an interfacial shear fracture, and to the matrix cracking. It is shown that the development of layer failure is determined by the strength of fibers, the crack resistance of the matrix in axial tension and transverse shear, and also by the adhesion strength of the matrix-fiber interface. The sufficient conditions of applicability of the brittle fracture model are formulated. 相似文献

We attempt here to use the kinematic method of yield design in the case of a porous medium subjected to flow (with or without free surface), without looking for the exact solution of the pressure field. The method proposed here is based on the use of approximate pressure fields. In this paper, we show how, under different conditions concerning the yield criterion and the velocity field, the use of such approximate fields allows one to obtain a necessary condition for stability without having to find the real pressure field. An analytical treatment of the second-order Bragg interaction is presented for the transverse magnetic mode of a dielectric film waveguide having gratings on both the film-cover and the film-substrate interfaces. Six various low density polyethylenes and one blend were rheologically characterized in elongation. Their different strain-hardening behaviour could qualitatively be related to their molecular structure. All the materials were blown to films on laboratory equipment under various conditions. The take-up force and the film homogeneity were determined quantitatively, the bubble stability was visually assessed. The bubble stability increased with growing take-up force. The take-up force was found to be the stronger the higher the elongational viscosity was. The homogeneity of film thickness is not related to the bubble stability but to the occurrence of strain hardening in the uniaxial elongational experiment at high Hencky strains. Measurements of the uniaxial elongational behaviour of polyethylene melts are a valuable and promising way to assist the development and optimisation of film blowing materials.
