In this study, microcapsules were prepared by spray drying and embedding hemp seed oil (HSO) with soy protein isolate (SPI) and maltodextrin (MD) as wall materials. The effect of ultrasonic power on the microstructure and characteristics of the composite emulsion and microcapsules was studied. Studies have shown that ultrasonic power has a significant impact on the stability of composite emulsions. The particle size of the composite emulsion after 450 W ultrasonic treatment was significantly lower than the particle size of the emulsion without the ultrasonic treatment. Through fluorescence microscopy observation, HSO was found to be successfully embedded in the wall materials to form an oil/water (O/W) composite emulsion. The spray-dried microcapsules showed a smooth spherical structure through scanning electron microscopy (SEM), and the particle size was 10.7 μm at 450 W. Fourier transform infrared (FTIR) spectroscopy analysis found that ultrasonic treatment would increase the degree of covalent bonding of the SPI-MD complex to a certain extent, thereby improving the stability and embedding effect of the microcapsules. Finally, oxidation kinetics models of HSO and HSO microcapsules were constructed and verified. The zero-order model of HSO microcapsules was found to have a higher degree of fit; after verification, the model can better reflect the quality changes of HSO microcapsules during storage. 相似文献

Self-assembly of soy proteins into nanofibrils is gradually considered as an effective method to improve their technical and functional properties. Ultrasound is a non-thermal, non-toxic and environmentally friendly technology that can modulate the formation of protein nanofibrils through controlled structural modification. In this research, the effect of ultrasound pretreatment on soy protein isolate nanofibrils (SPIN) was evaluated by fibrillation kinetics, physicochemical properties and structure characteristics. The results showed that the optimum ultrasound condition (20% amplitude, 15 min, 5 s on-time and 5 s off-time) could increase the formation rate of SPIN by 38.66%. Ultrasound reduced the average particle size of SPIN from 191.90 ± 5.40 nm to 151.83 ± 3.27 nm. Ultrasound could increase the surface hydrophobicity to 1547.67 in the initial stage of nanofibrils formation, and extend the duration of surface hydrophobicity increased, indicating ultrasound could expose more binding sites, creating more beneficial conditions for nanofibrils formation. Ultrasound could change the secondary and tertiary structure of SPIN. The reduction of α-helix content of ultrasound-pretreated soy protein isolate nanofibrils (USPIN) was 12.1% (versus 5.3% for SPIN) and the increase of β-sheet content was 5.9% (versus 3.5% for SPIN) during fibrillation. Ultrasound could accelerate the formation of SPIN by promoting the unfolding of SPI, exposure of hydrophobic groups and formation of β-sheets. Microscopic images revealed that USPIN generated a curlier and looser shape. And ultrasound reduced the zeta potential, free sulfhydryl groups content and viscosity of SPIN. SDS-PAGE results showed that ultrasound could promote the conversion of SPI into low molecular weight peptides, providing building blocks for the nanofibrils formation. The results indicated that ultrasound pretreatment could be a promising technology to accelerate SPIN formation and promote its application in food industry, but further research is needed for the improvement of the functional properties of SPIN. 相似文献

In this study, ultrasound either as a pretreatment technique or as an integrated technique was employed to enhance fluidized bed drying of Ascophyllum nodosum, and drying kinetics and dried product quality were assessed. In order to compare technology efficiency and dried product qualities, oven drying and fluidized bed drying (FBD) were employed. The novel drying methods included airborne ultrasound-assisted fluidized bed drying (AUA), ultrasound pre-treatment followed by FBD (USP), and hot water blanching pre-treatment followed byFBD (HWB). Six drying kinetics models were used to describe the drying curves, among which the Page model was the best in fitting USP and AUA. Model by Millidi et al. was employed to describe HWB. Airborne ultrasound in AUA did not reduce energy consumption or drying time, but retained total phenolic content (TPC) as well as colour, and exhibited the highest yield among the novel drying methods. USP and HWB showed lower energy consumption and drying time considerably, but the TPC was the lowest among the studied methods. At the same time, USP dried product exhibited the lowest aw, followed by HWB and then AUA. This studyalso demonstrated that FBD could be a very practical drying method on Irish brown seaweed, and ultrasound-assisted drying methods may have potential developments in Irish brown seaweed drying process. 相似文献

Kinetic study has been performed to understand the reactivity of novel cationic gemini surfactants viz. alkanediyl‐α,ω‐bis(hydroxyethylmethylhexadecylammonium bromide) C16‐s‐C16 MEA, 2Br? (where s = 4, 6) in the cleavage of p‐nitrophenyl benzoate (PNPB). Novel cationic gemini C16‐s‐C16 MEA, 2Br? surfactants are efficient in promoting PNPB cleavage in presence of butane 2,3‐dione monoximate and N‐phenylbenzohydroxamate ions. Model calculation revealed that the higher catalytic effect of ethanol moiety of gemini surfactants (C16H33N+ C2H4OH CH3 (CH2)S N+ C2H4OH CH3C16H33, 2Br?, s = 4, 6) is due to their higher binding capacity toward substrate. This is in line with finding that binding constants for novel series of cationic gemini surfactants are higher than conventional cationic gemini (C16H33N+(CH3)2(CH2)SN+(CH3)2C16H33, 2Br?, s = 10, 12), cetyldimethylethanolammonium bromide and zwitterionic surfactants, i.e. CnH2n+1N+Me2 (CH2)3 SO3? Kinetic studies of the reactions of tertiary oximes (monoisonitroso acetone; MINA and butane 2,3 dione monooxime; BDMO) with some carboxylate (p‐nitrophenyl acetate and p‐nitrophenyl benzoate), phosphate (p‐nitrophenyl diphenyl phosphate and bis (2,4‐dinitrophenyl) phosphate) and sulfonate (p‐nitrophenyl p‐toluene sulphonate) esters in gemini surfactants have been conducted. The observed first‐order rate constant versus surfactant profiles show micelle‐assisted bimolecular reactions involving interfacial ion exchange between bulk aqueous media and micellar pseudophase. Experimental results showed that MINA exhibited better nucleophilic activity towards ester cleavage than BDMO. The energy dependence of ion beam mixing in the Fe-Al and Fe-Cu bilayer configuration on the energy of bombarding Kr+ ions has been investigated by using the technique of conversion electron Mössbauer spectroscopy. The ion energy has been varied over a range between 30 keV and 120 keV by keeping the dose value fixed at 1016 ions/cm2. In both the cases the extent of mixing shows an interesting variation with increase in the value of ion energy. This behaviour is discussed in the light of the calculated energy deposition distributions for the case of the given bilayer systems. The variations in the microstructural details of the mixed region with change in the incident ion energy have also been brought out via determination of hyperfine interaction parameters. 相似文献

Polypropylene/multiwalled carbon nanotubes (PP/MWNTs) nanocomposites were prepared by a melt compounding process. The morphology and nonisothermal crystallization of these nanocomposites were investigated by means of optical microscopy, scanning electron microscopy, and differential scanning calorimetry. Scanning electron microscope micrographs of PP/MWNTs composite showed that the MWNTs were well dispersed in the PP matrix and displayed a clear nucleating effect on PP crystallization. Avrami theory, modified by Jeziorny and Mo's method, was used to analyze the kinetics of the nonisothermal crystallization process. It was found that the addition of MWNTs improved the crystallization rate and increased the peak crystallization temperature of the PP/MWNTs nanocomposites as compared with PP. The results show that the Jeziorny theory and Mo's method successfully describe the nonisothermal crystallization process of PP and PP/MWNTs nanocomposites. 相似文献

ABSTRACT Mechanistic investigation of the oxidative degradation of d-fructose (D-Fruc) has been studied by spectrophotometric technique. Molecular mechanics (MM +) calculations suggest that the potential energy (PE/kcal mol?1) of the d-fruc (opening structure) is at least three (3.71) times more stable than the PE of the cycling structure of the same matrix. The oxidation constant (K ox) of the anionic form of the d-Fruc (Fruc-NaOH) is about seven times greater than that of the protonated form (Fruc-H2SO4). Therefore, the anionic form is more highly oxidizable than is the cationic form of this matrix. The limit of detection can be as low as 18 ppm (mg L?1) of d-Fruc. This is about 60 times lower than the blood sugar level (BSL) or 100 times lower than that reported previously. The proposed procedure was applied successfully for the oxidation of D-Fruc in uni-fructose powder. The anionic form of D-Fruc (Fruc-NaOH) has the ability to store energy about 744.72 kJ g?1 h at 608 nm in a condensed lightweight form. Kinetic parameters of the oxidative degradation of the anionic form of D-Fruc at different concentration were deduced. A number of models were used to evaluate the kinetic parameters. The mechanism of the degradation of D-Fruc is explained on the basis of kinetic parameters. 相似文献

Abstract The Hetero Diels-Alder reaction of enamino ketones and ethyl vinyl ether to give dihydropyrans is studied in different solutions under pressure up to 7 kbar. The kinetics is measured via on-line FT IR spectroscopy. The cycloaddition shows a remarkable pressure dependent increase in diastereo-selectivity. For the difference in activation volumes referring to the reaction to the two diastereomers, values up to 5.9 ± 0.5 cm3/mol are observed. The ratio of cis and trans diastereomers can be improved by almost one order of magnitude by changing pressure and temperature from 1 bar and 90 °C to 6 kbar and 0.5 °C. 相似文献
