Sea buckthorn (Hippophaė rhamnoides L.) is recognized as a valuable source of vitamin C and antioxidants, frequently used as nutraceuticals and cosmeceuticals. In the present study, attempts are made to produce and characterize a novel type of marmalade using sea buckthorn berries processed at 102 °C into marmalade in two combinations, with whole cane or stevia sugar. Changes in the phytochemical profile, antioxidant activity, color, shelf-life, texture, microbiological, and sensorial characteristics were determined. The total carotenoids content in the marmalades were significantly different, with values of 0.91 ± 0.03 mg/g dry weight (DW) in the sample with whole sugar cane (Cz) and 2.69 ± 0.14 mg/g DW in the sample with Stevia sugar (Cs). Significant values of polyphenols were found, of 59.41 ± 1.13 mg GAE/g DW in Cz and 72.44 ± 2.31 mg GAE/g DW in Cs, leading to an antioxidant activity of 45.12 ± 0.001 μMol Trolox/g DW and 118.07 ± 0.01 μMol Trolox/g DW, respectively. Accelerated storage study showed a decrease in all the phytochemicals, however no significant changes were found in antioxidant activity. Values of <100 CFU/g for yeasts and molds and <5 CFU/g for Enterobacteriaceae after 21 days of storage at the room temperature of the marmalades were determined. The sensorial and color results were more than acceptable. Overall, the results highlighted the potential of using sea buckthorn as a potential rich source of bioactive compounds to be used in the sugar-based products manufacturing.  相似文献

Food safety and quality control pose serious issues to food industry and public health domains, in general, with direct effects on consumers. Any physical, chemical, or biological unexpected or unidentified food constituent may exhibit harmful effects on people and animals from mild to severe reactions. According to the World Health Organization (WHO), unsafe foodstuffs are especially dangerous for infants, young children, elderly, and chronic patients. It is imperative to continuously develop new technologies to detect foodborne pathogens and contaminants in order to aid the strengthening of healthcare and economic systems. In recent years, peptide-based sensors gained much attention in the field of food research as an alternative to immuno-, apta-, or DNA-based sensors. This review presents an overview of the electrochemical biosensors using peptides as molecular bio-recognition elements published mainly in the last decade, highlighting their possible application for rapid, non-destructive, and in situ analysis of food samples. Comparison with peptide-based optical and piezoelectrical sensors in terms of analytical performance is presented. Methods of foodstuffs pretreatment are also discussed.  相似文献

Semiconducting polythiophenes display electroactive properties which make them excellent candidates for applications as electroactive materials. Ability to undergo doping and to switch between different oxidation states allow tuning the chemical and physical properties of polythiophenes. Furthermore, the ability to integrate polythiophenes into copolymers, hybrid composites with metals and inorganic materials make them useful in electronic and biomedical applications. The capability to vary the properties of the final material with low production cost and high processability into thin films makes polythiophenes desirable materials for many applications. © 2017 Wiley Periodicals, Inc. Sea buckthorn is a natural food ingredient rich in carotenoids, tocopherols, sterols, flavonoids, lipids, vitamins, tannins and minerals. In this study, we investigated the themostability of the complex formed between α-lactalbumin (α-LA) with carotenoids from sea buckthorn berries extract (CSB) in the temperature range of 25°C to 100°C. The heat induced conformational changes of the α-LA-CSB complex were studied by using fluorescence and molecular modeling techniques. Phase diagram indicated the presence of more than one structurally distinct species as an indicator that temperature influenced the conformation of α-LA. Intrinsic fluorescence studies revealed that carotenoids trapped into the core of α-LA do not bind in locations close to tryptophan (Trp) residues. The synchronous spectra indicated that the interaction between α-LA and CSB had no apparent influence on the local conformation of Trp and tyrosine (Tyr) microenvironments within protein structure. Quenching studies with acrylamide showed that Trp residues had the highest exposure at 80°C, being least accessible to quencher at 60°C. In agreement with the fluorescence spectroscopy observations, the in silico analysis at single molecules level indicated a significant increase of 46.42 Å2 and 80.07 Å2 of the total accessible surface area of Trp and Tyr residues, respectively with the temperature increase from 25°C to 90°C. Concerning the thermodynamic properties of the α-LA-β-carotene model, the molecular modeling results indicate that the thermal treatment is not favorable for preserving the stability of the complex.  相似文献

Primary aromatic amines(PAAs) are substances with toxicity and suspected human carcinogenicity. A facile method for highly sensitive detection of PAAs using surface-enhanced Raman spectroscopy(SERS)is reported. The immobilization of Au nanoparticles(AuNPs) on the glycidyl methacrylate–ethylene dimethacrylate(GMA-EDMA) materials makes the substrate a closely packed but not aggregated AuNP arrays which provides a prominent SERS enhancement. Four PAAs with different substituent groups,namely, p-toluidine, p-nitroaniline, benzidine and 4,4-methylene-bis-(2-chloroaniline) have been successfully identified and quantified. High sensitivity and good linear relationship between SERS signals and concentrations of PAAs are obtained for all four PAAs.  相似文献

Rosmarinus officinalis L. is a species that is widely known for its culinary and medicinal uses. The purpose of the present study consisted of the evaluation of the antiproliferative and antimicrobial effects of R. officinalis-loaded liposomes (L-R). Characterization of the liposomes was performed by establishing specific parameters. The load of the obtained liposomes was analyzed using an LC-MS method, and antiproliferative assays evaluated the cell viability on a liver adenocarcinoma cell line and on a human hepatic stellate cell line. Antimicrobial assays were performed by agar–well diffusion and by broth microdilution assays. The obtained liposomes showed high encapsulation efficiency, suitable particle size, and good stability. High amounts of caffeic (81.07 ± 0.76), chlorogenic (14.10 ± 0.12), carnosic (20.03 ± 0.16), rosmarinic (39.81 ± 0.35), and ellagic (880.02 ± 0.14) acids were found in their composition, together with other polyphenols. Viability and apoptosis assays showed an intense effect on the cancerous cell line and a totally different pattern on the normal cells, indicating a selective toxicity towards the cancerous ones and an anti-proliferative mechanism. Antimicrobial potential was noticed against all tested bacteria, with a better efficacy towards Gram-positive species. These results further confirm the biological activities of R. officinalis leaf extract, and proposes and characterizes novel delivery systems for their encapsulation, enhancing the biological activities of polyphenols, and overcoming their limitations.  相似文献

Two new complexes with formula VOL2·nH2O ((1) L: 4′,5,7-trihydroxyflavone-7-rhamnoglucoside (naringin), n = 8; (2) L: 3′,4′,7-tris[O-(2-hydroxyethyl)]rutin (troxerutin), n = 0) were synthesised and characterised. The IR and UV–Vis spectral data indicate that these flavones act as bidentate chelating ligands and generate VO(II) complexes with a square-pyramidal stereochemistry. The thermal analysis (TG, DTA) elucidated the composition and also the number and nature of the water molecules. The thermal behavior indicates also a strong interaction between oxovanadium (IV) and these oxygen donor ligands.  相似文献
