A sensory evaluation of irradiated cookies made from flaxseed meal

The growing consumer demand for food with sensory quality and nutritional has called for research to develop new products with consumer acceptance as cookies made from flaxseed meal, that can be inserted in diet of celiacs. Celiac disease characterized by an inappropriate immune response to dietary proteins found in wheat, rye and barley (gluten and gliadin). It can affect anyone at any age and is more common in women. The celiac disease does not have cure and the only scientifically proven treatment is a gluten free diet. Irradiation as a decontamination method used for a many variety of foodstuffs, being very feasible, useful method to increase the shelf life, effective and environmental friendly without any sensory properties significant change. Sensory analyses were used to assess gluten-free bakery foods subjected to ionizing radiation sensory attributes.     

Sunlight-driven synthesis of γ-diketones via oxidative coupling of enamines with silyl enol ethers catalyzed by [Ru(bpy)3]2+

A photosensitizer [Ru(bpy)(3)](2+) catalyzes oxidative coupling reaction of enamines with silyl enol ethers under visible light irradiation by a Xe lamp or sunlight to produce γ-diketones. A 2e-oxidation process involved in this reaction is achieved by a combination of the photoexcited [Ru(bpy)(3)](2+) species and duroquinone, a 2e-acceptor.     

Structural and mechanical properties of Laponite-PEG hybrid films

Inorganic/organic hybrids were obtained by the sol-gel type organic modification reaction of Laponite sidewalls with poly(ethylene glycol) (PEG) bearing alkoxysiloxy terminal functionality. By casting an aqueous dispersion of the hybrid, the flexible and transparent hybrid films were obtained. Regardless of the inorganic/organic component ratio, the hybrid film had the ordered structure of Laponite in-plane flat arrays. The mechanical strength of hybrid films was drastically improved by the presence of cross-linking among alkoxysilyl functionalities of PEG terminals and the absence of PEG crystallines. Hybrid films, especially those that consisted of PEG with short chain, showed good mechanical properties that originate from quasi-homogeneous dispersion of components due to anchoring of PEG terminal to Laponite sidewall and interaction of PEG to Laponite surface.     

A new quassinoid, ailantinol H, from Ailanthus altissima

A new quassinoid, ailantinol H, was isolated from the aerial parts of Ailanthus altissima. The structure was elucidated based on spectral evidence.     

Measurement of coherent terahertz radiation for time-domain spectroscopy and imaging

A high-power terahertz (THz) source for THz time-domain spectroscopy (THz-TDS) and THz imaging has been developed based on an S-band compact electron linac at the National Institute of Advanced Industrial Science and Technology (AIST). A THz pulse was generated as coherent synchrotron radiation (CSR) from an ultra-short electron bunch and expected to have peak power of kW-order with frequency range of 0.1–2 THz. The electro-optic (EO) sampling method with a ZnTe crystal for the THz pulse measurement has been prepared for THz-TDS system. The timing measurement between the THz pulse and a probe laser was carried out. A preliminary experiment of THz transmission imaging of an integrated circuit (IC) card has been successfully demonstrated using the THz CSR pulse and a W-band rf detector. The imaging result was experimentally compared with a result of X-ray imaging. It is confirmed that its intensity and stability are enough to perform for the THz applications.     

Synthesis of Deuterium-Labeled Vitamin D Metabolites as Internal Standards for LC-MS Analysis

Blood levels of the vitamin D₃ (D₃) metabolites 25-hydroxyvitamin D₃ (25(OH)D₃), 24R,25-dihydroxyvitamin D₃, and 1α,25-dihydroxyvitamin D₃ (1,25(OH)₂D₃) are recognized indicators for the diagnosis of bone metabolism-related diseases, D₃ deficiency-related diseases, and hypercalcemia, and are generally measured by liquid-chromatography tandem mass spectrometry (LC-MS/MS) using an isotope dilution method. However, other D₃ metabolites, such as 20-hydroxyvitamin D₃ and lactone D₃, also show interesting biological activities and stable isotope-labeled derivatives are required for LC-MS/MS analysis of their concentrations in serum. Here, we describe a versatile synthesis of deuterium-labeled D₃ metabolites using A-ring synthons containing three deuterium atoms. Deuterium-labeled 25(OH)D₃ (2), 25(OH)D₃-23,26-lactone (6), and 1,25(OH)₂D₃-23,26-lactone (7) were synthesized, and successfully applied as internal standards for the measurement of these compounds in pooled human serum. This is the first quantification of 1,25(OH)₂D₃-23,26-lactone (7) in human serum.     

A Compound I Mimic Reveals the Transient Active Species of a Cytochrome P450 Enzyme: Insight into the Stereoselectivity of P450-Catalysed Oxidations

Catching the structure of cytochrome P450 enzymes in flagrante is crucial for the development of P450 biocatalysts, as most structures collected are found trapped in a precatalytic conformation. At the heart of P450 catalysis lies Cpd I, a short-lived, highly reactive intermediate, whose recalcitrant nature has thwarted most attempts at capturing catalytically relevant poses of P450s. We report the crystal structure of P450BM3 mimicking the state in the precise moment preceding epoxidation, which is in perfect agreement with the experimentally observed stereoselectivity. This structure was attained by incorporation of the stable Cpd I mimic oxomolybdenum mesoporphyrin IX into P450BM3 in the presence of styrene. The orientation of styrene to the Mo-oxo species in the crystal structures sheds light onto the dynamics involved in the rotation of styrene to present its vinyl group to Cpd I. This method serves as a powerful tool for predicting and modelling the stereoselectivity of P450 reactions.
