The influence of adverse conditions of environment in the case of baby formulas, which are multiple mixtures, should be minimised. Water activity (a w) and moisture content, correlated through sorption isotherms, and glass transition temperature have been considered relevant parameters to describe food stability. The aim of the study was to analyse water activity and glass transition temperature as the function of water content for samples of baby formulas. Three types of baby formulas (mixture, agglomerate, coated agglomerate) were determined by sorption isotherms, DSC and MDSC. DSC curves of mixture, agglomerate and coated agglomerate did not show differences in shape and course. The glass transition temperature of powders stored at different water activities was measured and it decreased with the increase in moisture content, confirming the strong plasticising effect of water on this property. Critical water activities varied from 0.14 to 0.68 and critical moisture contents varied from 0.032 to 0.062 g g?1 powder.  相似文献

Owing to their versatility and biocompatibility, peptide‐based self‐assembled structures constitute valuable targets for complex functional designs. It is now shown that artificial capsules based on β‐barrel binding motifs can be obtained by means of dynamic covalent chemistry (DCC) and self‐assembly. Short peptides (up to tetrapeptides) are reversibly attached to resorcinarene scaffolds. Peptidic capsules are thus selectively formed in either a heterochiral or a homochiral way by simultaneous and spontaneous processes, involving chiral sorting, tautomerization, diastereoselective induction of inherent chirality, and chiral self‐assembly. Self‐assembly is shown to direct the regioselectivity of reversible chemical reactions. It is also responsible for shifting the tautomeric equilibrium for one of the homochiral capsules. Two different tautomers (keto‐enamine hemisphere and enol‐imine hemisphere) are observed in this capsule, allowing the structure to adapt for self‐assembly.  相似文献

The paper presents a study of the effect of a constant magnetic field (CMF) on the basic processes of quercetin electrochemical reactions. According to the observation made in previous studies, the presence of a double bond in the C-ring of quercetin enhances the antioxidant properties of that compound, whereas the presence of −OH groups also affects the antioxidant properties. Using cyclic voltammetry it was found that the constant magnetic field improves the efficiency of quercetin electrooxidation, especially of the third stage of the process, i. e. the stage in which the oxidation of the OH groups in the A-ring is the most difficult. The use of HPLC confirmed the electrochemical measurements and the results of cyclic voltammetry studies. The beneficial effect of the magnetic field on the efficiency of quercetin oxidation was confirmed by the results of impedance spectroscopy measurements.  相似文献

The adsorption of a polar (water) and a non-polar (n-octane) liquid on silica gels, modified by adsorption of proteins, has been studied by thermal analysis. Silica gels with physically adsorbed BSA and ovalbumin layers were used. Thermodesorption energies were determined from Q-TG and Q-DTG curves recorded under quasi-equilibrium conditions. Significant differences in liquid desorption were observed from the surfaces due to heterogeneous changes (energetic and geometrical) as a result of modification. These results are compared with those obtained for the samples heated at 160°C for 1 h.  相似文献

Here, we describe the reliable method for the detection and quantitation of a pheomelanin component in melanin pigments. Synthetic melanins with various contents of pheomelanin‐type structural units were thermally degraded, and the multiple reaction monitoring mode was applied to detect the pheomelanin markers in the pyrolysates by GC/MS/MS. The method allowed the specific detection and quantitation of a pheomelanin component in melanin with the incorporation of pheomelanin‐type units as low as 0.05%. Considering highly universal character of the pheomelanin markers, the method could be applied for structural studies of natural melanin pigments being mixtures of eumelanin and pheomelanin. Four commercially available formulations containing iron, zinc, and manganese were subjected to dissolution profile testing during 60 min and the dissolution was analyzed by ion chromatography. The obtained curves were analyzed directly by principal component analysis (PCA). The main trend (87.1% of variance) was connected with average dissolution percentage over the investigated time. The second component (11.2% of variance) is connected with shape of dissolution profile. All metals behave in the similar way and the differences were connected with excipients. An additional fit was completed on 12 kinetic models: first order kinetics (4 variants), Higuchi (2 variants), Hixson-Crowell (2 variants), Korsemeyer-Peppas, Logistic (2 variants), Peppas-Sahlin, Quadratic (2 variants), Weibull (3 variants), and Zero order kinetics (2 variants). The ranking of the fitting was performed by Akaike information criteria (AIC) values with additional PCA analysis on them, an approach presented in literature for the first time. The main trend (67.4% of variance) was connected with average fit. The second (14.8% of variance) is connected with differences of fitting ability to investigated dissolution curves. This methodology brought an overall look to trends and variances inside obtained data, both the profile shape and fitting ability to particular models.  相似文献

Mitotane is a cytotoxic drug used in the treatment of inoperable adrenocortical carcinoma, it inhibits steroidogenesis as well, and therefore monitoring the level of steroid hormones in patients treated with mitotane is a crucial point of therapy. Hence, we have developed a simple, fast, and efficient electrophoretic method combined with reverse polarity sweeping as online preconcentration technique and dispersive liquid–liquid microextraction for the simultaneous determination of mitotane, its main metabolite DDA, and five steroid hormones (progesterone, testosterone, epitestosterone, cortisol, and corticosterone) in urine samples. In addition, a new sample matrix consisting of β-CD2SDS1 complexes for a high hydrophobic compounds solubilization was developed. Approach based on the application of β-cyclodextrin and SDS complex of a ratio 2:1 allowed for hydrodynamic injection into the capillary of a solution containing both mitotane and other analytes. The detection limits of the analytes for the reverse polarity sweeping-dispersive liquid–liquid microextraction method were found to be in the range of 1.5–3 ng/mL, which were approximately 1000 times lower than in the conventional hydrodynamic injection (5 s, 0.5 psi) without any preconcentration procedure. All analytes were completely resolved in less than 13 min by uncoated silica capillary with an inner diameter of 75 μm (ID) × 60 cm. Electrophoretic separation was performed in reverse polarity with a voltage of –25 kV with a background electrolyte (BGE) consisting of 100 mM SDS, 25% ACN, 25 mM phosphate buffer (pH 2.5), and 7 mM β-cyclodextrin.  相似文献
