Abstract

The paper deals with the influence of high pressure treatment of fresh egg white on its properties and protein composition (individual amino-acids predicted as a function of pressure and time levels). The rheological properties are changed by high pressure from Newtonian to non-Newtonian behaviour, with increasing apparent viscosity as the pressure and time increased. The pH, whipping ability, foam stability, gel strength of heat induced gels after treatment and the whole protein content, were also predicted.

The results showed that the foam stability is increased with increasing pressure and time of processing. The foam volume is also increased with pressure. The pH did not change with pressure or time of processing. Composition of proteins as indicated by individual amino-acids did not exhibit statistically important changes. Gel strength of heat induced gels prepared from previously pressured liquid whites showed no important change of values with pressure or time of treatment. The modulus of elasticity showed a decrease for samples pressured to 400 MPa for 5 up to 15 minutes.  相似文献

For the first time, bamboo-shaped multiwalled carbon nanotubes, having diameter of the order of 50 nm, have been grown on carbon black in a fluidized bed in bulk amount. The activation energy for the synthesis of the product was found out to be around 33 kJ/mol in the temperature range of 700−900 °C. The carbon nanotubes were separated from the carbon black by preferential oxidation of the later, the temperature of which was determined by thermogravimetry. The transmission electron microscopy revealed different features of the nanotubes such as “Y” junction, bend, and catalyst filling inside the nanotubes. Small angle neutron scattering was performed on the nanotubes synthesized at different temperatures. The data were fitted into a suitable model in order to find out the average diameter, which decreases with increase in synthesis temperature. The Monte Carlo simulation predicts the same behavior. Based on the above observations, a possible growth mechanism has been predicted. The oscillation in carbon saturation value inside the catalyst in the fluidized bed has been indicated as the responsible factor for the bamboo-shaped structure.  相似文献

Photopolymerization of MMA was carried out with quinaldine–bromine (QN–Br2) and lutidine–bromine (LU–Br2) charge-transfer complexes as initiators. The rate of polymerization Rp increased with rising monomer concentration and the monomer exponent was computed as unity. At first the rate of polymerization accelerated and then reduced as the initiator concentration was increased. The initiator exponent was 0.5. The reaction was carried out at three different temperatures and overall activation energy was calculated at 4.0 kcal/mol. The kinetic data and other evidence indicate that the overall polymerization takes place in a radical mechanism. A suitable mechanism is suggested.  相似文献

Glass capillary columns have been prepared without acidic additive in the stationary phase, from which free organic acids elute as sharp and symmetrical peaks. The required surface in the borosilicate glass capillary was generated by a combination of leaching with aqueous HCl and deposition of colloidal silica particles; it can be coated with stationary phases have a broad range of polarity. An automated system for hydride generation - cryotrapping- gas chromatography - atomic absorption spectrometry with the multiatomizer is described. Arsines are preconcentrated and separated in a Chromosorb filled U-tube. An automated cryotrapping unit, employing nitrogen gas formed upon heating in the detection phase for the displacement of the cooling liquid nitrogen, has been developed. The conditions for separation of arsines in a Chromosorb filled U-tube have been optimized. A complete separation of signals from arsine, methylarsine, dimethylarsine, and trimethylarsine has been achieved within a 60 s reading window. The limits of detection for methylated arsenicals tested were 4 ng l(-1). Selective hydride generation is applied for the oxidation state specific speciation analysis of inorganic and methylated arsenicals. The arsines are generated either exclusively from trivalent or from both tri- and pentavalent inorganic and methylated arsenicals depending on the presence of L-cysteine as a prereductant and/or reaction modifier. A TRIS buffer reaction medium is proposed to overcome narrow optimum concentration range observed for the L-cysteine modified reaction in HCl medium. The system provides uniform peak area sensitivity for all As species. Consequently, the calibration with a single form of As is possible. This method permits a high-throughput speciation analysis of metabolites of inorganic arsenic in relatively complex biological matrices such as cell culture systems without sample pretreatment, thus preserving the distribution of tri- and pentavalent species.  相似文献

This paper presents a quantitative and qualitative study of the Norrish type I reaction of dibenzyl ketone (DBK) and 4-methyldibenzyl ketone (MeDBK), producing the benzyl radicals and consequently recombination products, in frozen aqueous solutions over a broad temperature range (-80 to 20 degrees C). This work extends previous research on the cage effects in various constrained media to provide information about the dynamics and reactivity of the photochemically generated intermediates at the grain boundaries of ice matrix. As the temperature of aqueous solutions decreases, the solute concentrations become high at layers covering ice crystals, causing efficient molecular segregation. The cage effect experiments have shown that diffusion of the benzyl radicals within such reaction aggregates is still remarkably efficient at temperatures below -50 degrees C, independently of the initial ketone concentration in the range of 10(-6)-10(-4) mol L(-1). In addition, the study of trapping the benzyl radicals formed in situ by CuCl2 was used as a qualitative probe of heterogeneous bimolecular reactions in the frozen aqueous matrix and on its surface. Molecules of both solutes were found to be segregated from the ice phase to the same location and underwent chemical reactions within diffusion and intermediates lifetimes limits. Understanding the fundamental physicochemical processes in ice is unquestionably important in related environmental or cosmochemical investigations.  相似文献

Polymerization of acrylonitrile was investigated using ceric ion-organic sulfur compounds reducing agent systems. The organic sulphur compounds used as the reductants are, thiourea, thioacetamide, 2-amino ethanethiol, cysteine, and thioglycolic acid. The rates of polymerization were measured within the temperature range of 25 to 40 °C. The initiation was by the radical produced from Ce4+-sulphur compounds reaction. The rate of monomer disappearance was proportional to [M]1.5, [S]0.5 and the rate of ceric disappearance was directly proportional to [S] and [Ce4+]. A kinetic scheme involving the initiation by the primary radical and termination of the growing polymer radicals by the mutual type has been suggested and the kinetic percentage have been evaluated.  相似文献

The polymerization of methyl methacrylate was studied using the peroxydiphosphate and tartaric acid redox system as the initiator. The rate of polymerization increases with increasing peroxydiphosphate concentration and the initiator exponent was computed to be 0.5. The rate of polymerization increases with increasing monomer concentration and the monomer exponent was computed to be unity. The reaction was carried out at three different temperatures, and the overall activation energy was computed to be 3.80 kcal/mol.
