An electronic tongue (ET) based on potentiometric chemical sensors was assessed as a rapid tool for the quantification of bitterness in red wines. A set of 39 single cultivar Pinotage wines comprising 13 samples with medium to high bitterness was obtained from the producers in West Cape, South Africa. Samples were analysed with respect to a set of routine wine parameters and major phenolic compounds using Fourier transform infrared-multiple internal reflection spectroscopy (WineScan) and high-performance liquid chromatography, respectively. A trained sensory panel assessed the bitterness intensity of 15 wines, 13 of which had a bitter taste of medium to high intensity. Thirty-one wine samples including seven bitter-tasting ones were measured by the ET. Influence of the chemical composition of wine on the occurrence of the bitter taste was evaluated using one-way analysis of variance. It was found that bitter-tasting wines had higher concentrations of phenolic compounds (catechin, epicatechin, gallic and caffeic acids and quercetin) than non-bitter wines. Sensitivity of the sensors of the array to the phenolic compounds related to the bitterness was studied at different pH levels. Sensors displayed sensitivity to all studied compounds at pH 7, but only to quercetin at pH 3.5. Based on these findings, the pH of wine was adjusted to 7 prior to measurements. Calibration models for classification of wine samples according to the presence of the bitter taste and quantification of the bitterness intensity were calculated by partial least squares-discriminant analysis (PLS-DA) regression. Statistical significance of the classification results was confirmed by the permutation test. Both ET and chemical analysis data could discriminate between bitter and control wines with the correct classification rates of 94% and 91%, respectively. Prediction of the bitterness intensity with good accuracy (root mean square error of 2 and mean relative error of 6% in validation) was possible only using ET data.  相似文献

With the aim of systematically studying fundamental structure–activity relationships as a basis for the development of RuII arene complexes (arene=p‐cymene or biphenyl) bearing mono‐, bi‐, or tridentate am(m)ine ligands as anticancer agents, a series of ammine, ethylenediamine, and diethylenetriamine complexes were prepared by different synthetic routes. Especially the synthesis of mono‐, di‐, and triammine complexes was found to be highly dependent on the reaction conditions, such as stoichiometry, temperature, and time. Hydrolysis and protein‐binding studies were performed to determine the reactivity of the compounds, and only those containing chlorido ligands undergo aquation or form protein adducts. These properties correlate well with in vitro tumor‐inhibiting potency of the compounds. The complexes were found to be active in anticancer assays when meeting the following criteria: stability in aqueous solution and low rates of hydrolysis and binding to proteins. Therefore, the complexes least reactive to proteins were found to be the most cytotoxic in cancer cells. In general, complexes with biphenyl as arene ligand inhibited the growth of tumor cells more effectively than the cymene analogues, consistent with the increase in lipophilicity. This study highlights the importance of finding a proper balance between reactivity and stability in the development of organometallic anticancer agents.  相似文献

The development of novel ionophores for ion‐selective sensors is a time‐consuming and tedious process requiring synthesis of candidate substances, preparation of plasticized polymeric membranes, and their thorough characterization with traditional protocols to assess sensitivity, selectivity and detection limits for target ions. The vast amount of literature data accumulated on various ion‐selective sensors allows for significant facilitation of the development through in silico experiments. In this report, we performed the feasibility study on the prediction of potentiometric Mg2+/Ca2+ selectivity for various amide ligands using quantitative structure‐property relationship (QSPR) modeling. The approach proved to be promising for ionophore screening purposes with achieved precision in prediction of the selectivity coefficient logK(Mg2+/Ca2+) of 0.5 in the range from ?1.7 to +2.3. The study also shows a route for prediction of new potential ionophores with high selectivity values.  相似文献

Possibility of applying a multisensor potentiometric system of the type of the “electronic tongue” as a method for evaluating the toxicity of a water medium is considered. The multisensor system is preliminarily calibrated against samples with a known toxicity, determined by the biotesting method with the use of living organisms. It is shown that the thus obtained system is suitable for evaluating the quality of water samples in terms of the response of various test objects without direct use of living organisms.  相似文献

New polymeric sensors based on bidentate neutral organophosphorus compounds of varied structure with addition of chlorinated cobalt dicarbollide, which are highly sensitive to Fe3+, Y3+, La3+, Pr3+, Nd3+, and Eu3+ cations in a wide range of concentrations at pH 2, were suggested. The selectivity, detection limits, and pH-dependence of the potential of the sensors developed were studied. Electronic tongues for liquid analysis, based on the organizational principles of biological sensory systems, developed rapidly during the last decade. A brief historical overview of the research and development in the field of electronic tongue systems is presented. Current achievements of scientific groups working in this field are outlined and critically reviewed. The performance of electronic tongues in quantitative analysis and in classification of multicomponent media is considered. The exciting possibility of establishing a correlation between the output from an electronic tongue and human sensory assessment of food flavour, thereby enabling quantification of taste and flavour, is described. Application areas of electronic tongue systems including foodstuffs, clinical, industrial, and environmental analysis are discussed in depth. Prospective research and development in the field of electronic tongues is discussed.  相似文献

Disposable all-solid-state planar-type potentiometric electronic tongue has been developed with the carbon paste electrode array screen-printed on a polymeric substrate. Highly cross-sensitive solvent polymeric membranes based on different matrices [e.g. poly(vinyl chloride) (PVC), aromatic polyurethane, and polypyrrole (Ppy)] and doped with common electroactive components for potentiometric measurements (e.g. various plasticizers, and cation- and anion-selective ionophores) were deposited on the screen-printed carbon paste electrodes (SCPEs). It was observed that an incorporation of 10 wt.% of Prussian Blue (PB; Fe4(III)[Fe(II)(CN)6]3) into a commercially available carbon paste and electrochemical preanodization of SCPEs in KCl solution at 1.6 V provide the all-solid-state planar-type electrodes with significantly improved potentiometric stability. The proposed fabrication method gives possibility for simple and reproducible mass-production of low-cost disposable electronic tongue microsystems. The practical utility of all-solid-state disposable electronic tongue chips has been demonstrated with a flow injection cell for the analysis of potable waters, soft drinks, and beers. It is shown that the potentiometric measurements with the SCPE-based all-solid-state chips and the combined use of chemometric methods (e.g. principal components analysis, partial least regression (PLS), and principal component regression (PCR)) for the analysis of obtained data sets successfully discriminate various types of samples according to their tastes.  相似文献
