建立了简化的W/O/W(水/油/水)多重乳液乳珠模型——统计平均半径模型, 预测出当W/O/W多重乳液内水相水滴之间以及内外水相之间均达到水传递平衡时的内外水相中盐的浓度, 从而实现对水传递的控制, 以维持W/O/W多重乳液的稳定. 按理论预测制备出了不同稳定态的W/O/W多重乳液, 利用差分扫描量热仪(DSC)检测了多重乳液中水的传递过程, 确定体系在实验状态下的稳定程度, 实验结果与理论预测基本吻合.  相似文献

Water and oil transport in emulsified systems is far from being elucidated. Calorimetric analysis has proved to be an appropriate technique to study composition ripening in mixed water in oil emulsions. In this article, the role of the stabilizing agent is studied and particular attention is given to emulsions stabilized solely with solid particles. Mixed emulsions are prepared by mixing two simple water-in-oil (W/O) emulsions, one with pure water droplets and one with droplets containing an aqueous urea solution. At different time intervals, a sample is introduced in a calorimeter cell and submitted to successive cooling and heating cycles. During the cooling phase, the aqueous internal phase solidifies at a temperature which depends on its composition. Just after the mixed emulsion was prepared, the calorimetric experiment identified two solidification peaks, one corresponding to pure water droplets, and the other one to urea solutions. After a long enough stabilization time, just one peak was observed, showing that the systems evolved toward one type of droplets characterized by a unique composition, due to water transfer between the two aqueous phases. The effect of emulsion stabilizing agent (particles or nonionic emulsifier) on the kinetics of water transfer was investigated.  相似文献

通过测定药物液滴的平均粒径和Zeta电位研究了体系pH值、 乳化温度和电解质离子对乳化剂三苯乙烯基苯酚聚氧乙烯醚磷酸酯三乙醇胺盐(SCP)稳定的异丙甲草胺水乳剂稳定性的影响. 结果发现, 体系的pH值影响SCP分子在水中的电离能力, 当pH=9时, SCP完全电离, 能为液滴提供较大的静电稳定作用, 水乳剂稳定性最好; 乳化温度低时, SCP分子向液滴界面扩散慢, 且舒展不完全, 液滴所带负电荷较少, 水乳剂稳定性差; 温度升高后, 水相黏度减小, 布朗运动加剧, 液滴碰撞合并几率增大, 且SCP分子热运动增强, 易从界面逃逸, 液滴间静电斥力减弱, 同时SCP亲水性下降, 水乳剂稳定性变差; 电解质离子会压缩界面双电层, 降低Zeta电位, 液滴带电量减少而聚结, 离子浓度越大, 电荷数越大, 水乳剂稳定性越差. 在相同的离子浓度下, 水合半径小的Ca2+压缩双电层能力强于Mg2+, 添加Ca2+后水乳剂稳定性更差.  相似文献

The objectives of this study were to examine the influence interfacial composition on environmental stresses stability of oil in water emulsions. An electrostatic layer-by-layer deposition method was used to create the multilayered interfacial membranes with different compositions: (i) primary emulsion (Soy protein Isolate); (ii) secondary emulsion (Soy protein Isolate – OSA-starch); (iii) tertiary emulsion (Soy protein isolate – OSA-starch – chitosan). Fourier transform-infrared (FTIR) and scanning electron microscopy (SEM) results confirmed the adsorption of charged polyelectrolyte onto oppositely charge polyelectrolyte-coated oil droplets. The stability of primary, secondary, and tertiary emulsions to thermal treatment (30 min at 30–90°C), pH (3–7) and NaCl (0–500 mM) were determined using ζ-potential, particle diameter, and microstructure analysis. Primary emulsions were unstable at pH 4–7, salt concentrations, and thermal treatments. Secondary emulsions were stable to creaming and droplet aggregation at pH 3–5, at ≤50 mM NaCl, and unstable at thermal treatments, whereas tertiary emulsions were stable at all salt concentrations, thermal treatments, and at pH 3–6. These results demonstrate that these polymers can be used to engineer oil in water emulsion systems and improve the emulsion stability to environmental stresses.  相似文献

The stability and phase behavior of acrylamide-based emulsions, prepared with surfactants consisting of lipophilic Span80 and hydrophilic OP10, before or after polymerization were investigated. The research results indicated that the phase separation behavior of the W/O-type emulsions is related to the toluene/water ratio. When the water volume fraction was larger, the phase separation mechanism was mainly a penetration of aqueous molecules from the dispersed-phase droplets. When the water volume fraction was smaller, the phase separation mechanism was mainly a sedimentation of the separated aqueous droplets. At a fixed toluene/water ratio, the emulsion stability and the emulsion type are related not only to the ratio of the two surfactants but also to the acrylamide concentration, and the effect of increasing acrylamide concentration on the character of the emulsions is similar to that of increasing OP10 mass fraction (increasing HLB value), which determines the corresponding relationship between acrylamide concentration and HLB value in the most stable emulsion system. To obtain the most stable emulsion at a fixed acrylamide concentration, the emulsion with higher acrylamide concentration needs a lower HLB value for the emulsion systems.  相似文献

Microchannel (MC) emulsification is a novel technique for preparing monodispersed emulsions. This study demonstrates preparing water-in-oil-in-water (W/O/W) emulsions using MC emulsification. The W/O/W emulsions were prepared by a two-step emulsification process employing MC emulsification as the second step. We investigated the behavior of internal water droplets penetrating the MCs. Using decane, ethyl oleate, and medium-chain triglyceride (MCT) as oil phases, we observed successful MC emulsification and prepared monodispersed oil droplets that contained small water droplets. MC emulsification was possible using triolein as the oil phase, but polydispersed oil droplets were formed from some of the channels. No leakage of the internal water phase was observed during the MC emulsification process. The internal water droplets penetrated the MC without disruption, even though the internal water droplets were larger than the resulting W/O/W emulsion droplets. The W/O/W emulsion entrapment yield was measured fluorometrically and found to be 91%. The mild action of droplet formation based on spontaneous transformation led to a high entrapment yield during MC emulsification.  相似文献

Over the past decade, steric stabilization has been achieved for a variety of inorganic and organic colloids in supercritical fluid carbon dioxide (scCO2). Herein we demonstrate that colloids may also be stabilized in CO2 by electrostatic forces, despite the ultralow dielectric constant of 1.5. Zeta potentials of micrometer-sized water droplets, measured in a microelectrophoresis cell, reached -70 mV corresponding to a few elementary charges per square micrometer of droplet surface. This degree of charge was sufficient to stabilize water/CO2 emulsions for an hour, even with water volume fractions of 5%. Hydrogen ions partition preferentially, relative to bicarbonate ions, from the emulsion droplets to the cores of surfactant micelles in the diffuse double layer surrounding the droplets. The micelles, formed with a low molecular weight branched hydrocarbon surfactant, prevent ion pairing of the hydrogen counterions to the negatively charged emulsion droplets. Dielectrophoresis of the water droplets at a frequency of 60 Hz leads to chains containing a dozen droplets with lengths of 50 mum. The ability to form electrostatically stabilized colloids in carbon dioxide is particularly useful in practical applications, because steric stabilization in CO2 is often limited by the poor solvation of the stabilizers.  相似文献

Various nuclear magnetic resonance (NMR) techniques were used to monitor the freezing behaviour of suspended 2-mm-diameter drops. The drops were composed of hydrocarbon oils emulsified in either water or water/sucrose mixtures. As such they were good model systems for the study of spray freezing, sharing structural similarities with potential products such as ice cream. In particular, simple 1H NMR spectroscopy was used to monitor and individually quantify the freezing or solidification behaviour of the various constituent species of the drops. In addition, the effect of freezing on the emulsion droplet size distribution (and hence emulsion stability) was also measured based on NMR self-diffusion measurements. The effect of freeze/thaw cycling was also similarly studied. The nucleation temperature of the emulsion droplets was found to depend on the emulsion droplet size distribution: the smaller the droplets, the lower the nucleation temperature. Emulsion droplet sizing indicated that oil-in-sucrose-solution emulsions were more stable, showing minimal coalescence, whereas oil-in-water emulsions showed significant coalescence during freezing and freeze/thaw cycling.  相似文献

Abstract

In this study, we are introducing a method that can effectively stabilize antioxidants in water‐in‐oil‐in‐water (W/O/W) double emulsions. Preliminarily, stable W/O/W double emulsions were produced by manipulating the characteristics of internal aqueous phase via two‐stage emulsification, resulting consequently in the formation of fine internal water droplets in the dispersed oil droplets. From conductivity measurements that can determine the elution amount of internal aqueous phase, it was confirmed that the double emulsion stability could be improved by treating the internal aqueous phase with a hydroxypropyl‐beta‐cyclodextrin. In this study, kojic acid, 5‐hydroxy‐2‐(hydroxymethyl)‐4‐pyrone was selected as a model antioxidant. The stabilization of kojic acid was attempted by locating it in the internal water droplets of the stable W/O/W double emulsions. The stability of kojic acid in the double emulsion system could be maintained at 90% for 10 weeks at high temperature. We believe that these stable W/O/W double emulsions could be used meaningfully as a carrier for many unstable antioxidants.  相似文献

Water transfers are observed within complex systems containing aqueous phases separated by a membrane or an oil phase, such as biological cells or multiple emulsions. In order to better understand water transfer mechanism, a system made of a mixed water-in-oil (W/O) emulsion containing two kinds of aqueous droplets — pure water and a 30 % urea solution — was developed. Water transfer from pure water droplets to urea solution droplets was evidenced by Differential Scanning Calorimetry (DSC). Finally the mixed emulsion contains one kind of droplets made of a diluted urea solution which composition is in agreement with formulation and data obtained from experiments performed on single W/O emusions which dispersed phase is a diluted urea solution of the same composition. These mixed emulsions have been pictured as a three-fluid phases system containing two aqueous phases separated by a plane oil membrane. From a homogeneous solubility-diffusion model applied to a quasi-stationnary regime, the water intra-diffusion coefficient has been obtained and compared to the value calculated from the Stokes-Einstein equation. A factor ten makes the discrepancy between the two values, the value deduced from the model being the highest. A possible influence of the emulsifier molecules has been evoked.  相似文献

The ternary phase diagram for N-[3-lauryloxy-2-hydroxypropyl]-L-arginine L-glutamate (C12HEA-Glu), a new amino acid-type surfactant, /oleic acid (OA)/water system was established. The liquid crystal and gel complex formations between C12HEA-Glu and OA were applied to a preparation of water-in-oil (W/O) emulsions. Stable W/O emulsions containing liquid paraffin (LP) as the oil and a mixture of C12HEA-Glu and OA as the emulsifier were formed. The preparation of stable W/O emulsions containing 85 wt% water phase was also possible, in which water droplets would be polygonally transformed and closely packed, since the maximum percentage of inner phase is 74% assuming uniformly spherical droplets. Water droplets would be taken into the liquid crystalline phase (or the gel complex) and the immovable water droplets would stabilize the W/O emulsion system. The viscosity of emulsions abruptly increased above the 75 wt% water phase (dispersed phase). The stability of W/O emulsions with a lower weight ratio of OA to C12HEA-Glu and a higher ratio of water phase was greater. This unusual phenomenon may be related to the formation of a liquid crystalline phase between C12HEA-Glu and OA, and the stability of the liquid crystal at a lower ratio of oil (continuous phase). W/O and oil-in-water (O/W) emulsions containing LP were selectively prepared using a mixture of C12HEA-Glu and OA since the desirable hydrophile-lipophile balance (HLB) number for the emulsification was obtainable by mixing the two emulsifiers.  相似文献

The properties of n-tetradecane/electrolyte emulsions with DPPC or DPPC vesicles in the electrolyte solution were investigated. The DPPC molecules form different aggregates, which possess different surface affinity, size and structure, and therefore we assumed some differences in the adsorption at the oil droplet/water interface. The n-tetradecane emulsions in 1:1, 1:2 and 1:3 electrolytes were prepared by mechanical stirring in the presence of DPPC at natural pH. Electrokinetic properties of the systems were investigated taking into account the effective diameter and multimodal size distribution of the droplets as well as the zeta potentials using the dynamic light scattering technique. The zeta potential of the droplets was negative in all systems with NaCl. In the emulsions with CaCl(2) at a higher concentration of electrolyte and emulsions with LaCl(3) with all investigated concentrations, positive values were observed. Similar measurements were performed for DPPC vesicles in the electrolyte solution. The pH and ionic strength changes induce those in the electrical charge of DPPC layer or vesicle surface. This is due to the fact that the DPPC molecule contains -PO(-) and -N(CH(3))(3) groups, which are in equilibrium with H(+) and OH(-), as well as other ions present in the solution, i.e. Na(+), Ca(2+), La(3+) or Cl(-). In the n-tetradecane/electrolyte emulsion stabilized by DPPC or DPPC vesicles the zeta potential may be also related to acid-base interactions. The effect of the ions from the solution on the DPPC layer adsorbed on n-tetradecane droplets or DPPC vesicles is discussed.  相似文献

The dynamic viscoelastic behavior of multiple emulsions is investigated. A modified Palierne model is used to predict the storage and loss moduli of multiple emulsions. The multiple emulsions exhibit two relaxation domains due to relaxation of two different interfaces--internal and external. The internal interface is the interface between internal droplets and their suspending medium (primary emulsion continuous-phase). The external interface is the interface between multiple-emulsion droplets and their suspending medium (external continuous-phase). The factors affecting the dynamic viscoelastic behavior of multiple emulsions are discussed.  相似文献

Fluorocarbon-in-water emulsions are being explored clinically as synthetic oxygen carriers in general surgery. Stabilizing fluorocarbon emulsions against coarsening is critical in maintaining the biocompatibility of the formulation following intravenous administration. It has been purported that the addition of a small percentage of long-chain triglyceride results in stabilization of fluorocarbon emulsions via formation of a three-phase emulsion. In a three-phase emulsion, the triglyceride forms a layer around the dispersed fluorocarbon, thereby improving the adhesion of the phospholipid surfactant to the dispersed phase. In the present study, we examined the effect of triglyceride addition on the physicochemical characteristics of the resulting complex dispersion. In particular, we examined the particle composition and stability of the dispersed particles using a method which first fractionates (classifies) the different particles prior to sizing (i.e., sedimentation field-flow fractionation). It was determined that the addition of a long-chain triglyceride (soybean oil) results in oil demixing and two distinct populations of emulsion droplets. The presence of the two types of emulsion droplets is not observed via light scattering techniques, since the triglyceride droplets dominate the scattering due to a large difference in the refractive index between the particles and the medium as compared to fluorocarbon droplets. The growth of the fractionated fluorocarbon emulsion droplets was followed over time, and it was found that there was no difference in growth rates with and without added triglyceride. In contrast, addition of medium-chain-triglyceride (MCT) oils results in a single population of emulsion droplets (i.e., a three-phase emulsion). These emulsions are not stable to droplet coalescence, however, as significant penetration of MCT into the phospholipid lipid interfacial layer results in a negative increment in the monolayer spontaneous curvature, thereby favoring water-in-oil emulsions and resulting in destabilization of the emulsion to the effects of terminal heat sterilization or mechanical stress.  相似文献

The instability of emulsion explosive matrices is mainly due to the crystallization of interphases as oversaturated aqueous solutions of nitrate salts. The principal features of crystallization for this type of emulsion have been previously studied; however, there is no consensus regarding the mechanism of crystallization for an emulsion explosive matrix. This study is devoted to the investigation of the crystallization behavior of interphase droplets. By monitoring the mass change of emulsions during their aging process, it was found that the mass of the emulsions remains almost constant and that water still completely existed in the emulsion system after crystallization of the interphase droplets. The ammonium nitrate (NH4NO3) crystals in the emulsion explosive matrices were then separated successfully using a simple method. The thermal behavior of pure NH4NO3 and crystals in the emulsion explosive matrices was studied by differential scanning calorimetry-thermogravimetric analysis (DSC-TG) at a heating rate of 10?K/min. The experimental results show that the thermal behavior of the crystals in the emulsions was exactly the same as for pure NH4NO3, meaning that only NH4NO3 crystallized from the emulsion explosive matrices with no water crystals. Thus, it could be concluded that after crystallization of the dispersed drops in the emulsion explosive matrices, pure NH4NO3 crystals and new smaller droplets were produced.  相似文献

Drug carrier emulsions were prepared with structured phosphatidylcholine (PC-LM) which has both a long hydrocarbon chain and a medium hydrocarbon chain, and the characteristics of PC-LM as an emulsifier were investigated by measuring the creaming ratio, the surface tension of the emulsion system, and the mean particle size and zeta potential of the oil droplets in emulsions. The emulsion prepared with PC-LM as an emulsifier kept the condition and the ratio of separation was lower than those with purified egg yolk lecithin (PEL). The mean particle size of the emulsion prepared with PC-LM was smaller than that with PEL when using only sonication, approximately 250 nm. When using a high-pressure homogenizer after sonication, the mean emulsion size with PC-LM was also smaller than with PEL, approximately 150 nm. The surface tension of the various emulsions and the zeta potential of the emulsion droplets were measured to investigate the stability of the systems. In emulsions with PC-LM or PEL, the surface tension as an index of stability increased as the pressure of the homogenizer increased. Moreover, the zeta potential of the emulsion droplets prepared with PC-LM also increased with an increase in pressure of the homogenizer. As a result, it was found that the drug carrier emulsion prepared with PC-LM had significant advantages in terms of stability and mean diameter. We considered it could be used for the preparations of nanoparticle dispersion systems in drug delivery systems.  相似文献

Water transportation through the oil phase in W/O emulsions and in W1/O/W2 systems (W/O emulsion in contact with water) was examined. Substance diffusion through interfaces led to interface instability and spontaneous emulsification which caused nanodispersion formation. The photomicrographs of Pt/C replicas of emulsions showed the presence in the continuous oil phase a lot of nanodispersion droplets with a diameter in the range 17-25 nm. Diffusion coefficient (D) of water calculated on the base of Lifshiz-Slezov-Wagner (LSW) equation was about 15 times lower than the coefficients of molecular diffusion. Since such emulsions were extremely unstable toward coalescence, the growth of water droplets took place through as Ostwald ripening as coalescence. In three-phase W1/O/W2 systems diffusion of water, Rhodamine C, and ethanol was studied. D calculated on the base of the equation of nonstationary diffusion were approximately 1000 times lower than molecular ones. It was assumed, that nanodispersion droplets were more likely water carriers in investigated W/O emulsions stabilized by sorbitan monooleate.  相似文献

The mechanisms of water transport through an organic dispersion medium are considered for an emulsion during Ostwald ripening and for a three-phase system upon a contact of a water-in-oil emulsion with an external aqueous phase. Electron microscopy shows a formation of nanodispersion droplets during the diffusion of water through the organic phase of water-in-oil emulsions. The experimental water diffusion coefficient during Ostwald ripening in emulsions is 40 times smaller than the calculated molecular diffusion coefficient. The experimental diffusion coefficients are determined for rhodamine C, which solubilizes in the surfactant micelles, and for ethyl alcohol, a cosurfactant, which reduces the interfacial tension in the emulsion and promotes the formation of nanodispersion droplets. The experimental diffusion coefficients of rhodamine C and ethanol are three orders of magnitude smaller than the calculated values. The ratio between the numbers of rhodamine C and water molecules diffusing through the organic phase is 1 : 10000. The nanodispersion droplets are shown to make the main contribution to the water transport in the organic dispersion medium of the emulsions. Water can also be transported by single surfactant molecules, but this mechanism is not the predominant one.  相似文献

The migration of emulsion droplets under shear flow remains a largely unexplored area of study, despite the existence of an extensive literature on the analogous problem of solid particle migration. A novel methodology is presented to track the shear-induced migration of emulsion droplets based on magnetic resonance imaging (MRI). The work is in three parts: first, single droplets of one Newtonian fluid are suspended in a second Newtonian fluid (water in silicone oil (PDMS)) and are tracked as they migrate within a Couette cell; second, the migration of emulsion droplets in Poiseuille flow is considered; third, water-in-silicone oil emulsions are sheared in a Couette cell. The effect of (a) rotational speed of the Couette, (b) the continuous phase viscosity, and (c) the droplet phase concentration are considered. The equilibrium extent of migration and rate of migration increase with rotational speed for two different emulsion systems and increased continuous phase viscosity, leads to a greater equilibrium extent of migration. The relationship between the droplet phase concentration and migration is however complex. These results for semi-concentrated emulsion systems and wide-gap Couette cells are not well described by existing models of emulsion droplet migration.  相似文献
