Beet has been used as an ingredient for functional foods due to its high antioxidant activity, thanks to the betalains it contains. The effects of the addition of beet extract (liquid and lyophilized) on the physicochemical characteristics, color, antioxidant activity (AA), total betalains (TB), total polyphenols (TP), and total protein concentration (TPC) were evaluated on stirred yogurt. The treatments (T1-yogurt natural, T2-yogurt added with beet juice, T3-added extract of beet encapsulated with maltodextrin, and T4-yogurt added with extract of beet encapsulated with inulin) exhibited results with significant differences (p < 0.05). The highest TB content was observed in T2 (209.49 ± 14.91), followed by T3 (18.65 ± 1.01) and later T4 (12.96 ± 0.55). The highest AA was observed on T2 after 14 days (ABTS˙ 0.819 mM TE/100 g and DPPH˙ 0.343 mM TE/100 g), and the lowest was found on T1 at day 14 (ABTS˙ 0.526 mM TE/100 g and DPPH˙ 0.094 mM TE/100 g). A high content of TP was observed (7.13 to 9.79 mg GAE/g). The TPC varied between 11.38 to 12.56 µg/mL. The addition of beet extract significantly increased AA in yogurt, betalains being the main compounds responsible for that bioactivity.  相似文献

研究了高Se或高维生素E下,老龄大鼠体内抗氧化活性的变化以及高Se下维生素E对其体内抗氧化水平的影响。将十二月龄Wistar大鼠32只随机分成4组:(1)正常饲料组;(2)高Se饲料组;(3)高维生素E饲料组;(4)高Se高维生素E饲料组。饲至十周末,处死大鼠,按试剂盒要求取其血液制成血清测GSH-Px,SOD活性,MDA含量。结果表明,高Se或高维生素E下饲养下的大鼠与对照组比较,血清中GSH-Px活性升高(P<0.05)。SOD活性未见改变,MDA含量分别减少50%和56%,有显著差异(P<0.01);维生素E与高Se合用与高Se组比较能进一步同GSH-Px,SOD活性(P<0.01)。结论:高Se会升高老龄大鼠的抗氧化活性,而与维生素E合用更加升高老龄大鼠血液中抗氧化活性。  相似文献

The natural antioxidant hydroxytyrosol (HT) was used to functionalize a strawberry puree. The effect of the antioxidant on the stability of the two bioactive forms of vitamin C (ascorbic acid-AA and dehydroascorbic acid-DHAA) in strawberry puree stored at 4 °C, compared with the effect on a model system of AA in water, was investigated. In the absence of HT, the concentration of vitamin C in strawberry puree decreased but not in the model system. Low concentrations of HT in strawberry puree (0.05 and 0.1 mg HT/g puree) stabilized vitamin C and improved its antioxidant activity. However, at high concentrations of HT (from 0.5 mg HT/g puree), although the antioxidant activity improved, degradation of vitamin C occurred. Therefore, the concentration of HT used to obtain a functionalized strawberry puree it is very important. An adequate concentration increases the antioxidant activity and protects vitamin C from degradation, developing a functional food. However, an inadequate concentration of HT affects the vitamin C content, which is essential for the human diet because it cannot be biosynthetized by the organism.  相似文献

研究了高Se或高维生系E下,幼龄大鼠体内抗氧化活性的变化以及高Se下,维生素E对其体内抗氧化水平的影响。将三月龄Wistar大鼠32只随机分成4组:正常饲料组、高Se高维生素E饲料组、高Se饲料组和高维生素E饲料组。饲至十周末,处死大鼠,按试剂盒要求分别取其血液、心、肝、肾制成标本测SOD、CAT活性及MDA、GSH含量。结果表明,高Se或高维生素E下饲养下的大鼠与对照组比较,血液中SOD活性明显下降;维生素E能明显抑制高Se大鼠血液中SOD活性的下降。结论:单独高Se或高维生素E会降低幼龄大鼠的抗氧化活性,而维生素E能明显提高高Se下幼龄大鼠体内抗氧化活性。  相似文献

In emulsification processes, the estimation of the droplet size distribution is important data not only because it is linked with the manufacturing process, but also because it is an important parameter affecting the emulsion stability. The aim of this research is to use the ultraviolet-visible transmission spectrum as a tool for emulsion characterization (droplet size and stability) to be a function of monomer concentration, and to verify of emulsion stability using the volume of separated phase's technique. Both techniques are applied to monomer emulsions as a function of emulsifier concentration. Results show correlations between droplet size measurements and stability of emulsions using the spectroscopy technique; results were also found to be in agreement using the cleared volume method.  相似文献

The stability of 30 heavy crude oil emulsions was studied in a parallel-plate laboratory coalescer (DC field). Particularly, viscous responses and their influence on the emulsion stability measurements were investigated. In addition to highlighting previous results from the same experimental setup and discussing these based on recent experience, new results at different temperatures and volume fractions of water were presented. A new semi-empirical model for the characteristic time of the destabilization process was presented. The electrical forces were modelled with a point-dipole approximation and the hydrodynamic resistance to droplet transport was modelled with an empirical term including the logarithmic viscosity of the oil phase. The new model clearly performed much better than the previous model, particularly for very viscous crude oils. Studies of the performance of industrial electrocoalescers have showed that simple electrostatic theory can potentially explain complex separation phenomena when the resistance to the coalescence step is reduced by an efficient demulsifier. The ultimate goal is to build a model for both the laboratory setup and the industrial coalescer so that laboratory experiments can be used to predict the behavior of the industrial process.  相似文献

The enrichment of commonly consumed foods with bioactive components might be helpful in promoting health and reducing the risk of disease, so the enrichment of probiotic fermented milk with vitamin C can be considered appropriate. The effect of vitamin C addition depends on the source of origin (rosehip, acerola and ascorbic acid in powder form) on the growth and survival of Lactobacillus rhamnosus and the quality of fermented milk on the 1st and 21st day of storage was analyzed. The pH, total acidity, vitamin C, syneresis, color, texture profile and numbers of bacterial cells in fermented milk were determined. The organoleptic evaluation was also performed. The degradation of vitamin C in milk was shown to depend on its source. The lowest reduction of vitamin C was determined in milk with rosehip. The least stable was vitamin C naturally found in control milk. The addition of rosehip and acerola decreased syneresis and lightness of milk color, increasing the yellow and red color proportion. In contrast, milk with ascorbic acid was the lightest during the whole experimental period and was characterized by a very soft gel. The growth of Lactobacillus rhamnosus during fermentation was most positively affected by the addition of rosehip. However, the best survival of Lactobacillus rhamnosus was demonstrated in milk with acerola. On the 21st day of storage, the number of L. rhamnosus cells in the control milk and the milk with vitamin C was >8 log cfu g−1, so these milks met the criterion of therapeutic minimum. According to the assessors, the taste and odor contributed by the addition of rosehip was the most intense of all the vitamin C sources used in the study.  相似文献

A novel and universal approach towards the unique encapsulation of nanoparticles in the sandwiched graphene sheets is presented here. In the method, a low‐cost, sustainable and environmentally friendly carbon source, glucose, is firstly applied to yield the high‐quality, uniform and coupled graphene sheets in a large scale, and the pre‐fabricated hydrated nanosheets act as the sacrificial templates to generate the enveloped metallic nanoparticles. After controllable oxidation or removal of the encapsulated nanoparticles, sandwiched nanocomposite with oxidizes nanoparticles encapsulated in graphene sheets or pure phase of sandwich‐like and coupled graphene sheets would be achieved. Moreover, the synergic effect on energy storage via Li‐ion batteries is solidly verified in the Co3O4@graphene nanocomposite. More importantly, the unique structure of the nanoparticles‐encapsulated sandwiched graphene sheets will definitely result in additional applications, such as biosensors, supercapacitors and specific catalyses. These results have enriched the family of graphene‐based materials and recognized some new graphene derivatives, which will be considerably meaningful in chemistry and materials sciences.  相似文献

In this study, effect and correlation of alkyl chain length (C8, C10, C12, C14, and C16) and concentration of n-alkyl sulfate acid used as representative Br?nsted acid-combined-surfactant catalysts on dehydration esterification of oleic acid with 1-octanol as typical substrates are researched. CMC of the series surfactant are measured by surface tension method. The results indicate that alkyl chain length as well as concentration of catalyst plays an important role in determining conversion of esterifications. Appropriate chain length surfactant and concentration should be chosen for the combined-surfactant catalyzed reaction.  相似文献

High-pressure homogenization (HPH) is one of the food-processing methods being tested for use in food preservation as an alternative to pasteurization. The effects of the HPH process on food can vary depending on the process parameters used and product characteristics. The study aimed to investigate the effect of pressure, the number of passes, and the inlet temperature of HPH processing on the quality of cloudy blackcurrant juice as an example of food rich in bioactive compounds. For this purpose, the HPH treatment (pressure of 50, 150, and 220 MPa; one, three, and five passes; inlet temperature at 4 and 20 °C) and the pasteurization of the juice were performed. Titratable acidity, pH, turbidity, anthocyanin, vitamin C, and total phenolics content, as well as colour, and antioxidant activity were measured. Heat treatment significantly decreased the quality of the juice. For processing of the juice, the best were the combinations of the following: one pass, the inlet temperature of 4 °C, any of the used pressures (50, 150, and 220 MPa); and one pass, the inlet temperature of 20 °C, and the pressure of 150 MPa. Vitamin C and anthocyanin degradation have been reported during the HPH. The multiple passes of the juice through the machine were only beneficial in increasing the antioxidant capacity but negatively affected the colour stability.  相似文献

Green pepper fruit is often consumed before it is completely ripe. However, the influence of the phenological stage in which the green pepper is consumed as a potential influencing factor in its bioactive compounds content and antioxidant capacity remains unknown. In addition, no literature is available concerning the bioactive compounds changes in ‘Lamuyo’ green peppers along its developmental and growth cycle. For this, two different approaches have been carried out, one using twelve different phenological stages (S1 to S12), and in the other, seven different harvest dates (from 27 February to 20 April). Moreover, bioactive compounds changes during 21 days of postharvest storage at 8 °C were investigated. In this study, bioactive compounds (ascorbic acid, dehydroascorbic acid, and total phenolic content) and the total hydrophilic and lipophilic (TAA-H and TAA-L) antioxidant activity were analysed. In addition, total soluble solids, total acidity, individual sugars, and organic acids were determined. Vitamin C levels increased along the phenological stages and harvest dates due to significant increases in ascorbic and dehydroascorbic acid levels. Our results show that the total phenol content decreases as vegetables develop and subsequently increases both as ripening begins and by the last harvest date. Furthermore, TAA-H was also greater by the phenological stage S12 and the 20 April harvest date. In conclusion, the phenological stage and harvest date are key factors that significantly influence the bioactive compounds of green peppers, and those that appear by S12 and 20 April could be more beneficial to health.  相似文献

The apple fruit is one of the most widely cultivated temperate fruits and a rich source of bioactive compounds. Since a growing number of consumers are increasingly seeking safe and healthy food production, organic apple production provides this possibility. In this study, the content of bioactive compounds in organic apples depending on temperature and storage time were determined. ‘Chopin’ apples were stored for 7, 14 and 21 days at 5 °C and 20 °C. All analyses were performed using the HPLC method. The control samples of fresh apples contained the highest content of vitamin C (21.87 mg/100 g FW), L-ascorbic (11.50 mg/100 g FW), DHA (10.37 mg/100 g FW), total carotenoids (2.82 mg/100 g FW), β-carotene (0.21 mg/100 g FW) and lutein (2.41 mg/100 g FW). Samples stored at 20 °C had the highest content of total carotenoids and lutein, but samples stored at 5 °C contained the most β-carotene and zeaxanthin. Apples stored at 20 °C contained significantly more chlorophyll a (0.05 g/100 g FW). The samples stored at 5 °C contained the most total polyphenols. Samples stored for 14 days were characterized by the highest content of total flavonoids. Samples stored for 21 days were characterized by the highest content of epigallocatechin and quercetin-3-O-rutinoside, but the highest content of quercetin and kaempferol was found in control samples. The highest content of total flavonoids was found in apples stored at 5 °C.  相似文献

Measurements of aroxyl radical (ArO)-scavenging rate constants () of antioxidants (AOHs) (α-tocopherol (α-TocH) and three catechins (CatHs) (ie, epicatechin (EC), epigallocatechin (EGC), and epigallocatechin gallate (EGCG)) were performed in ethanol solution, using stopped-flow spectrophotometry. values were measured not only for each AOH, but also for the mixtures of two AOHs (α-TocH and CatH). A notable synergistic effect that the value of α-TocH increases 1.29, 1.84, and 1.65 times under the coexistence of constant concentrations of EC, EGC, and EGCG, respectively, was observed for the solutions including α-TocH and CatH. Similarly, values of CatHs (EC, EGC, and EGCG) increased 1.72, 2.25, and 2.34 times under the coexistence of constant concentrations of α-TocH, respectively. UV-Vis absorption of α-tocopheroxyl radical (α-Toc) (λmax = 428 nm), which had been produced by reaction of α-TocH with ArO, decreased remarkably under the coexistence of α-TocH and CatHs due to the fast α-TocH-regeneration reaction by CatHs. The result suggests that the prooxidant reaction due to α-Toc is suppressed by the coexistence of CatHs. By analyzing the formation and decay curves of α-Toc, it has been ascertained that one molecule of EGCG having three OH groups at B-ring may rapidly regenerate three molecules of α-Toc to α-TocH.  相似文献

The aim of the present study was to evaluate the effects of supplementation with a fixed combination of citicoline 500 mg, homotaurine 50 mg, and vitamin E 12 mg (CIT/HOMO/VITE) on contrast sensitivity and visual-related quality of life in patients with primary open-angle glaucoma (POAG) in mild stage. This was a multicenter, observational, cross-over, short-term, pilot study on POAG patients with stable controlled intraocular pressure (IOP). Patients were randomly assigned to Group 1 (current topical therapy for 4 months and then current topical therapy plus CIT/HOMO/VITE for 4 months) or Group 2 (CIT/HOMO/VITE in addition to current topical therapy for 4 months and then topical therapy alone for 4 months). Best-corrected visual acuity, IOP, visual field, and the Spaeth/Richman contrast sensitivity (SPARCS) test score were recorded at baseline and after 4 and 8 months. The Glaucoma Quality of Life-15 (GQL-15) questionnaire was administered at each check time. Forty-four patients were assigned to Group 1 and 65 to Group 2. Over the follow-up period, there were no significant changes in IOP or visual field findings, whereas SPARCS and GQL-15 findings significantly varied from baseline, both being improved in subjects treated with CIT/HOMO/VITE fixed combination. These results demonstrate that a daily intake of a fixed combination of citicoline, homotaurine, and vitamin E in addition to the topical medical treatment significantly increased the total score of the contrast sensitivity test and the quality of life in patients with POAG.  相似文献

Due to the large molecular weight and complex structure of Laminaria japonica polysaccharides (LJP), which limit their absorption and utilization by the body, methods to effectively degrade polysaccharides had received more and more attention. In the present research, hot water extraction coupled with three-phase partitioning (TPP) was developed to extract and isolate LJP. Ultrasonic L. japonica polysaccharides (ULJP) were obtained by ultrasonic degradation. In addition, their physicochemical characteristics and in vitro biological activities were investigated. Results indicated that ULJP had lower weight-average molecular weight (153 kDa) and looser surface morphology than the LJP. The primary structures of LJP and ULJP were basically unchanged, both contained α-hexo-pyranoses and were mainly connected by 1,4-glycosidic bonds. Compared with LJP, ULJP had stronger antioxidant activity, α-amylase inhibitory effect and anti-inflammatory effect on RAW264.7 macrophages. The scavenging rate of DPPH free radicals by ULJP is 35.85%. Therefore, ultrasonic degradation could effectively degrade LJP and significantly improve the biological activity of LJP, which provided a theoretical basis for the in-depth utilization and research and development of L. japonica in the fields of medicine and food.  相似文献
