This study was carried out to determine lead contamination in 104 of the representative food items in the Saudi diet and to estimate the dietary lead intake of Saudi Arabians. Three samples of each selected food items were purchased from the local markets of Riyadh city, the capital of Saudi Arabia. Each pooled sample was analyzed in triplicate by ICP-AES after thorough homogenization. Sweets (0.011-0.199 μg/g), vegetables (0.002-0.195 μg/g), legumes (0.014-0.094 μg/g), eggs (0.079 μg/g), meat and meat products (0.013-0.068 μg/g) were the richest sources of lead. Considering the amounts of each food consumed, the major food sources of lead intake for Saudi can be arranged as follows: vegetables (25.4%), cereal and cereal products (24.2%), beverages (9.7%) sweets (8.2%), legumes (7.4%), fruits (5.4%) milk and milk products (5.1%). The daily intake of lead was calculated taking into account the concentration of this element in the edible part of the daily consumption data which were derived from two sources, (a) the KSA food sheet provided by the Food and Agriculture Organization (FAO) and (b) from questionnaires distributed among 300 families in Riyadh city. The results showed that the daily intakes of lead according to the two sources are 22.7 and 24.5 μg/person/day respectively, which are lower than that mentioned by The Joint Expert Committee on Food Additives (JECFA), whereas it is comprabale with that of other countries.  相似文献

为了解广东大学生膳食硒的摄入状况,进而了解广州市居民的膳食硒摄入状况,采用单纯随机抽样的方法随机选取广东某高校某班学生10人,男女生各半,用双份饭法收集这10名学生连续7d内每天摄入的全部食物(包括饮水、饮料、零食等),共70份样品,用荧光分光光度法测定了各样品的硒含量,得到学生在调查期间膳食硒的摄入状况。结果表明,男、女生人均膳食硒摄人量分别为86.51μg/d和69.92μg/d,学生总体人均膳食硒摄入量为78.22μg/d。该校学生膳食硒的摄入量达到了中国营养学会推荐的参考摄入量(50—250μg/d)的要求。  相似文献

Due to its essential characteristics, the daily dietary selenium intake of individuals should be monitored accurately. In the current work, daily selenium intake of different Brazilian population groups based on duplicate portion diet analysis was evaluated and compared with the new estimated average requirement values (EAR), to assess if selenium deficiency or excess could be observed in these groups. Selenium content was determined by neutron activation analysis (NAA). The average daily dietary selenium intake found was 26.3 (±8.3) ·g/day for children from the city of São Paulo, 37.4 (±16.0) ·g/day for children from Belém, 107 (±107) ·g/day for children from Macapá, 28.4 (±7.5) ·g/day for institutionalized elderly, 32 (±6) ·g/day for non-institutionalized elderly and 37 (±17) ·g/day for university students from São Paulo. Most daily dietary selenium intake range observed were below the EAR values. The values obtained for children groups from Belém and Macapá cities, whose intake levels were much higher than the recommendation, were an exception.  相似文献

Total diet samples for Ukrainians and Japanese were collected by duplicate portion studies in relation to the Chernobyl accident. Stable iodine and bromine in the diet samples were determined by using ICP-MS after chemical separation. Daily intakes of iodine for Ukrainians and Japanese were found to be 110±104 and 1770±1610 μg per person per day, respectively. Daily intakes of Br were as follows: Ukrainians 3.47±2.12 mg; Japanese 11.4±2.4 mg. Daily iodine intake in Ukrainians was lower than the recommended dietary allowance (150 μg) and showed the relationship of high prevalence of goiter in this area.  相似文献

为了解重庆市抽样地区自然环境中的碘含量,为碘盐的合理摄入和防治碘相关疾病提供依据,采用多级整群随机抽样法,选择重庆市渝东地区云阳县和渝西地区璧山县为调查点,在两县经济状况中等的乡镇各抽取3所乡镇小学的8~10岁儿童各30名作为调查对象,以直接滴定法(GB/T13025.7-1999)检测了其家庭食用盐碘含量;采用随机抽样方法抽取两县居民饮用水样和土壤样,以GB5750-85中砷铈催化分光光度法测定了水碘含量,反向放大比色法测定了土壤碘含量。结果表明,检测两县居民食盐样本556份,璧山县与云阳县食盐碘均数分别为30.41和35.78mg/kg;抽取两县居民饮用水样87份,两县水碘中位数分别为6.50和2.78μg/L;水碘含量10μg/L的水样分别占73.33%和100%;抽取两县浅表层土壤样品88份,两县土壤碘中位数分别为8.20和7.56mg/kg。提示两抽样县均属于碘缺乏地区,需要通过食盐加碘防治碘缺乏病。可根据各地区具体情况,考虑适当调整食盐含碘量。  相似文献

The rich sources of selenium were meats (0.216–0.658 μg/g), eggs (0.226 μg/g) and cereals and cereals products (0.043–0.165 μg/g). Vegetables and fruits contained trace amounts of selenium (0.001–0.067 μg/g). The major food sources of selenium intake were cereals and cereals products (30.2%), legumes (24.7%) and meats (20%). The daily intake of Se was calculated taking into account the concentration of this element in the edible part and the daily consumption data which were derived from two sources, (a) the food balance sheet of KSA given by Food and Agriculture Organization (FAO) and (b) from questionnaires distributed among 200 families in Jeddah. The results showed that the daily intake of Se according to the two sources is 75.00–121.65 μg/person/day.  相似文献

It is known that in the Turkish soil Se and Zn concentrations are somewhatlower than in other countries. Lower zinc intake causes significant healthproblems mostly at rural areas. Six different population groups, total of55 subjects, consisting of children, people from rural areas, university studentsand staff members were selected and diet samples were collected by duplicateportion technique. Bread and flour samples were collected from six differentbakeries in Ankara. Zinc, selenium and other trace elements in these sampleswere analyzed mostly by INAA. Daily dietary zinc intake differs among differentgroups, ranging 5–13 mg Zn/day, and for all cases, it is lower thanRDA value of 15 mg Zn/day. Similarly, selenium daily intake is around 20–53µg Se/day, which is also lower than RDA value of 55–70 µgSe/day.  相似文献

The aim of the present study was to determine the content of capsaicin and dihydrocapsaicin in Capsicum samples collected from city markets in Riyadh (Saudi Arabia), calculate their pungency in Scoville heat units (SHU) and evaluate the average daily intake of capsaicin for the population of Riyadh. The investigated samples consisted of hot chillies, red chillies, green chillies, green peppers, red peppers and yellow peppers. Extraction of capsaicinoids was done using ethanol as solvent, while high performance liquid chromatography (HPLC) was used for separation, identification and quantitation of the components. The limit of detection (LOD) of the method was 0.09 and 0.10 μg/g for capsaicin and dihydrocapsaicin, respectively, while the limit of quantification (LOQ) was 0.30 and 0.36 μg/g for capsaicin and dihydrocapsaicin, respectively. Hot chillies showed the highest concentration of capsaicin (4249.0 ± 190.3 μg/g) and the highest pungency level (67984.60 SHU), whereas green peppers had the lowest detected concentration (1.0 ± 0.9 μg/g); green peppers, red peppers and yellow peppers were non pungent. The mean consumption of peppers for Riyadh city population was determined to be 15.5 g/person/day while the daily capsaicin intake was 7.584 mg/person/day.  相似文献

Measured (n = 36, 51 ·g/day) and estimated (n = 274, 44 ·g/day) dietary daily intake of selenium in Turkey is low compared to the RDA value of 55 ·g Se/day. When the existence of high prevalence of iodine deficiency in most part of the country is considered, adequate level of dietary Se becomes more important. We have found recently that high iodine-deficient goitrous children had lower Se levels and antioxidant enzyme (AOE) activities, and higher levels of DNA base lesions than non-goitrous controls. An automatic reaction-rate method is described for the ultramicro determination of iodine in common salt. The method utilizes the acceleration of the reaction between ceric sulfate and arsenious acid by iodine. The time required for the reaction to consume a fixed amount of ceric ions is measured automatically and related directly to the iodine concentration. Measurements btained in salt samples containing 3 to 7500 μg of iodine per 100g were precise to within 2% or 0.3 μg of iodine, whichever is larger. Measurement times varied from a few sec to about 2min.  相似文献

为了解重庆市某高校学生膳食铬的摄入水平,随机选取调查对象120人,双份饭法采样食物,用火焰原子吸收分光光度法测定了膳食中铬的含量。结果表明,大学生膳食铬的平均摄入量男生为4.68 mg/d,女生为3.80 mg/d,分别是适宜摄入量(adequate Intake,AI)的23.4倍和19倍,也显著超过了铬的每日允许摄入量(acceptable daily Intake,ADI)1.0 mg/d。可见高校学生膳食铬摄入水平超过了推荐膳食摄入量和安全限量,但其对健康的影响有待进一步明确。  相似文献

Summary The method chosen for determination of iodine in this investigation is an extension of an existing analytical technique to food samples which was developed for environmental samples. The method is based on pre-irradiation combustion of the sample to liberate iodine, trapping the iodine on charcoal, and quantitating the element by neutron activation analysis (NAA). Existing botanical and dietary reference materials were used to check the validity of the method. Several mixed diet samples with high fat content from the U.S. Total Diet Study and composites of cereals with both low and high iodine content were analyzed. This method of pre-irradiation combustion followed by NAA has been shown to be a viable technique for the determination of iodine in dietary samples. However, with a detection limit of about 50 ng of iodine, large amounts of sample (>1 g) are typically required for each determination.  相似文献

The concentrations of eleven trace elements: Ca, Co, Cr, Cs, Fe, I,K, Se, Sr, Th and Zn were determined in total diet samples and also in individualfood materials which constitute the typical Indian diet. Instrumental neutronactivation analysis (INAA) and radiochemical neutron activation analysis (RNAA)were employed for the analysis. Whereas the elements Fe, Co, Cr, Se and Znare important from the view point of their role in nutrition, the elementsCs, K, Sr and Th are of importance in radiation protection, and Ca and I havedual importance: both in nutrition as well as in radiation protection. Basedon the analysis of twenty total diet samples, prepared as per the data onthe dietary intake pattern of four provinces of India and the data on intakepattern of an average adult Indian, the geometric mean (GM) intake of variouselements was estimated to be 0.33 g (0.2–0.67) for Ca, 16.5 µg(8.3–31.1) for Co, 52.3 µg (35.1–131) for Cr, 4.7 µg(2.79–11.8) for Cs, 94.6 µg (60.6–201) for I, 1.90 g (1.25–3.54)for K, 1.13 mg (0.78–2.97) for Sr, 0.76 µg (0.45–1.66) forTh, 15.9 mg (10.2–34.3) for Fe, 56.3 µg (27.6–105.3) forSe and 8.6 mg (5.1–16.7) for Zn. Some of the important individual foodmaterials, such as cereals, pulses, milk, vegetables etc., were also analysedfor these elements to observe the contributions of the individual food materialsto their daily dietary intake. The results of the analysis showed that inthe case of Cs, K, Sr, Th, Fe, Zn and Co, almost 50% of the daily dietaryintake of the above stated elements is contributed by cereals and pulses.In the case of Ca however, significant amount is contributed by milk and incase of I, iodised salt could make significant contribution. Abstract

Neutron activation analysis in combination with atomic absorption spectrometry was utilized for the determination of 21 elements in integrated diet samples of the inhabitants of the Rawalpindi/Islamabad area. The study was carried out to determine prevailing concentration levels of trace elements nutrition, inadequacy, imbalances and toxicity. This data will serve as baseline values and will be helpful to monitor the degree of future contamination from foreign chemicals. The dietary intake values were also estimated and compared with the reported daily intake values. In general, the diets studied are adequate source of nutrient elements. The toxic elements intake through all the diet samples are within the safety limits.  相似文献

In Central Europe, the iodine content of weathered soils of new red sandstone, Muschelkalk, keuper and lower strata of new red sandstone, which developed from marine sediment is low. Boulder clays and diluvial sands also exhibit low iodine concentrations. In the same areas, the iodine concentration of drinking water decreases from 9 to 1 g/l with increasing distance from the oceans. Cereals and foodstuffs produced from them are extremely iodine-poor. The iodine content of plants increases with the proportion of leaves. Soil contamination raises the iodine content of foodstuffs and improves the iodine supply of animals. The iodination of mineral mixtures increased the iodine content of cow's milk from 17 to 81 g/l. The iodination of packed cooking salt and of the mineral mixtures for cattle and pigs resulted in a mean increase of the iodine intake of adults from about 30 g/day to 48 and 59, respectively. Although iodine intake remained considerably below the calculated requirement for adults (100 to 150 g/day), it led to the disappearance of Struma konnata and reduced the frequency of struma in children.  相似文献

The trace element contents of Taiwanese diet were determined using conventional neutron activation analysis. Sample were prepared with duplicate portion technique by collecting food items ate and drank during a 3 day period in winter. Samples were homogenized, freeze-dried, and elemental concentration of trace elements were determined by instrumental neutron activation analysis. The interference from fast neutron induced reactions were corrected. Concentrations and daily dietary intake of the elements were compared with those collected in the summer, resulting less daily intake of K, Ca, Mn, Fe, and Zn among Taiwanese than the values recommended by WHO and RDA. Alarming low intake of Fe for females and Zn among Taiwanese were indicated.  相似文献

The literature on the relationship between diet and thyroid cancer (TC) risk and the higher incidence of TC among Asian immigrants to the US compared to second and third generation subgroups has prompted epidemiologists to hypothesize that increased levels of iodine consumption may be associated with TC risk, particularly among persons with a history of clinical or subclinical thyroid dysfunction. At the University of Missouri Research Reactor (MURR), we have applied epiboron neutron activation analysis to investigate human nails as a dietary monitor for iodine. Preliminary studies have indicated a positive correlation between dietary iodine intake and the concentration of iodine in toenails. However, these studies are confounded by high iodine levels (up to 30 ppm) in approximately 5% of the nails studied. We hypothesize that, in the subjects we have studied, the high iodine levels may be due to iodine-containing medications, in particular contrast-agents containing iopamidol. This paper will report on longitudinal studies using contrast agent subjects who were followed-up for almost two years compared to a longitudinal control and a population mean. Based on this study, we suggest that iodine-containing contrast agents contaminate nail samples via non-specific binding in the short term followed by incorporation in the nail as a result of absorption.  相似文献

One hundred samples of commercial bread purchased from January to October (2006) from retail bakeshops in five different cities (Rabat, Témara, Salé, Casablanca and Meknès) in Morocco were surveyed for the presence of ochratoxin A (OTA) using liquid chromatography coupled to fluorescence detection. The identification of OTA in positive bread samples was confirmed by methyl ester derivatization. Analytical results showed that forty eight (48%) samples were positive with OTA greater than the limit of quantification (LOQ = 0.051 ng/g). Levels of OTA in positive samples ranged between 0.14 and 149 ng/g. The average contamination of bread samples with OTA was 13 ± 1.5 ng/g. The highest frequency of positive samples (61.5%) and the most contaminated sample (149 ng/g) were found in bread commercialized in the Casablanca area. Twenty six of the positive samples exceeded the maximum level of 3 ng/g set by European regulations for OTA in cereals and derivatives. Based in the results presented in this study, the estimated daily intake of OTA from bread was 126 ng/kg bw/day. The present paper is the first ever drafted on the natural occurrence of OTA in bread consumed in Morocco. Data on the daily intake of OTA by the Moroccan population are also estimated for the first time.  相似文献

本调查报告采用问卷法了解广东主要高校大学生一周内熟食进食量及用餐情况,计算出每人每日热量和各种营养素的摄人量,采用Microsoft Excel软件进行数据处理和统计分析,并用中国营养学会制订的DRIs(膳食营养素参考摄人量)和中国居民膳食指南及平衡膳食宝塔进行比较分析,且通过微量元素检测对结果进行了验证,最后提供了为期一周的营养配餐作为膳食参考。主要调查结果如下:男女生的蛋白质、尼克酸、维生素C、维生素E、碘和男生锰的摄入量已经满足人体需要。男生铁和锰的摄入量基本满足需要。男女生的能量、脂肪、膳食纤维、维生素A、硫胺素、核黄素、钙、锌的摄人量都不足,且女生铁的摄人量同样不足。男女生一日三餐热量分配结构十分不平衡,早餐的热量摄入均偏低,膳食结构也不合理。在分析广东省大学生膳食状况的基础上,推出五套营养配餐方案供高校膳食部门和大学生参考选用。  相似文献

Selenium daily intake was determined for two small groups of the Portuguese population, based on the analysis of duplicate diet portions. The total amount of food ingested during a day was collected for 18 workers of the Technological and Nuclear Institute (ITN-Sacavém) and for 6 females of Reguengos de Monsaraz, a small town in the south-eastern hinterland. The average selenium daily intake was 43 ± 20 and 32 ± 13 μg per person, respectively, both lower than the Recommended Dietary Allowance (RDA) of 55 μg day−1. Selenium in diet samples was determined by replicate sample neutron activation analysis (RSINAA). The method was considered accurate for the selenium determination.  相似文献
