Fingerprinting methods describe a variety of analytical methods that provide analytical signals related to the composition of foodstuffs in a non-selective way such as by collecting a spectrum or a chromatogram. Mathematical processing of the information in such fingerprints may allow the characterisation and/or authentication of foodstuffs. In this context, the particular meaning of 'fingerprinting', in conjunction with 'profiling', is different from the original meanings used in metabolomics. This fact has produced some confusion with the use of these terms in analytical papers. Researchers coming from the metabolomic field could use 'profiling' or 'fingerprinting' on a different way to researchers who are devoted to food science. The arrival of an eclectic discipline, named 'foodomics' has not been enough to allay this terminological problem, since the authors keep on using the terms with both meanings. Thus, a first goal of this tutorial is to clarify the difference between both terms. In addition, the chemical approaches for food authentication, i.e., chemical markers, component profiling and instrumental fingerprinting, have been described. A new term, designated as 'food identitation', has been introduced in order to complete the life cycle of the chemical-based food authentication process. Chromatographic fingerprinting has been explained in detail and some strategies which could be applied has been clarified and discussed. Particularly, the strategies for chromatographic signals acquisition and chromatographic data handling are unified in a single framework. Finally, an overview about the applications of chromatographic (GC and LC) fingerprints in food authentication using different chemometric techniques has been included.  相似文献

 Most sophisticated products require testing for compliance with specifications and safety regulations before release into many markets, and trade in many simpler commodities and products also requires supporting technical information. Test documentation has become an essential element in this trade. Food intended for human consumption certainly falls into the "sophisticated products" category. Lack of acceptance of laboratory test data across national borders may be a significant barrier to trade. In order to avoid such barriers and unnecessary duplication of laboratory tests, mutual recognition of laboratory results should be regarded as an important means of facilitating international trade in food products. It is difficult to envisage recognition of test data across borders without internationally agreed criteria for assessing the competence of testing. These criteria should, as a minimum, require that a laboratory involved in the analysis of foods operates a suitable quality system. The laboratory must create a quality system appropriate to the type, range and volume of work performed. It is necessary for the elements of this system to be documented in a quality manual which is available for use by the laboratory personnel. The quality manual must be kept up-to-date by a person or persons having responsibility for quality assurance within the laboratory. This paper describes and discusses the elements of a quality system in a food laboratory, including suitable quality assurance measures, the use of validated analytical methods and participation in proficiency testing schemes. The protein–polysaccharide combinations that lead to electrostatic complex and coacervate formation are the object of extensive research using both layer-by-layer and mixed emulsion approaches. The protein–polysaccharide conjugates demonstrated interesting physicochemical properties as stabilizers and emulsifiers, as well as texture modifiers in food products. Furthermore, they are potential optimal nutrient delivery systems. Their complex behavior due to several factors such as pH, ionic strength, concentration, heat, and mechanical treatments is the main reason behind the continuous growth of the research field. The review is reporting some recent advances on the topic, along with an overview of the possible interactions between protein and polysaccharide, from Maillard reaction to enzymatic cross-linking passing through coacervates.  相似文献

In this paper the status of food packaging disinfection decontamination using electron beam at Mediscan GmbH is presented. The first section of the paper describes the activities at the service center, where food packaging materials, e.g. yoghurt cups are decontaminated in their final shipment containers. As important step in the hazard analysis and critical control point of food processing, microbiological uncontaminated food packaging material is of public interest and attracts a lot of attention from packaging material producers and food processors.The dose ranges for different sterility assurance levels are discussed and results from microbiological test are presented. Studies at Mediscan have demonstrated, that an electron beam treatment at a dose of 5–7 kGy is most effective against yeast and mold, which are mainly responsible for spoilage and short shelf-life of a variety of products.The second section is devoted to the field of inline decontamination of food packaging and sterilization of pharmaceutical packaging material and the research currently conducted at Mediscan. The requirements for industrial inline electron beam systems are summarized and design concepts discussed in terms of beam energy, beam current, irradiation topology, product handling and shielding.  相似文献

An extensive critical evaluation of the application of dispersive liquid–liquid microextraction (DLLME) combined with chromatographic and atomic-spectroscopic methods for the determination of organic and inorganic compounds is presented. The review emphasizes the procedures used for the prior treatment of food samples, which are very different from the DLLME procedures generally proposed for water samples. The main contribution of this work in the field of DLLME reviews is its critical review of the abundant literature showing the increasing interest and practical advantages of using DLLME and closely related microextraction techniques for food analysis.  相似文献

Abstract

A simple, sensitive, and selective fluorimetric method is reported for the determination of β-carotene in various food samples. Three fluorescent dyes, including fluorescein (F), eosin B (EB), and Congo red (CR), were characterized in a series of measurements to optimize the analytical response for the reliable, suitable, and sustainable determination of β-carotene. 3′,6′-Dihydroxyspiro[isobenzofuran-1(3H),9′-[9H]xanthen]-3-one, commonly known as fluorescein, was selected for the fluorimetric determination of β-carotene using a phosphate buffer. Under the optimum experimental conditions, β-carotene was determined across a range from 0.54 to 536.87?mg L?1 with a detection limit equal to 0.47?mg L?1. The novel method was demonstrated to be easy to use, cost effective, rapid, and less complex compared to a standard protocol that involves a time-consuming extraction followed by an expensive HPLC determination.  相似文献

We investigate the subsystem with substrate and prey and study the stability of the periodic solutions, which are the boundary periodic solutions of the system. The stability analysis of the boundary periodic solution yields an invasion threshold. By use of standard techniques of bifurcation theory, we prove that above this threshold there are periodic oscillations in substrate, prey and predator. Simple cycles may give way to chaos in a cascade of period-doubling bifurcations. Furthermore, by comparing bifurcation diagrams with different bifurcation parameters, we can see that the impulsive system shows two kinds of bifurcations, whose are period-doubling and period-halfing.  相似文献

In 1999 the Food Microbiology laboratory of the Istituto Zooprofilattico Sperimentale delle Venezie (IZSVe) started an interlaboratory comparison program for food microbiological tests, known as “Aqua, interlaboratory comparisons for quality assurance”. Aqua produces the test samples, applies statistical methods to estimate homogeneity and stability, processes and evaluates the results. The proficiency testing results allow to evaluate the performance of the laboratories, to identify possible differences and non-conformity, to demonstrate the competence and the quality of results, in order to take suitable corrective and/or preventive action after the individuation of the causes. Moreover, elaborating the results of several proficiency testing by using the control chart method, it is possible to evaluate the trend of the laboratory and to verify that the results are in statistical quality control.  相似文献

The ever increasing interest of consumers for safety, authenticity and quality of food commodities has driven the attention towards the analytical techniques used for analyzing these commodities. In recent years, rapid and reliable sensor, spectroscopic and chromatographic techniques have emerged that, together with multivariate and multiway chemometrics, have improved the whole control process by reducing the time of analysis and providing more informative results. In this progression of more and better information, the combination (fusion) of outputs of different instrumental techniques has emerged as a means for increasing the reliability of classification or prediction of foodstuff specifications as compared to using a single analytical technique. Although promising results have been obtained in food and beverage authentication and quality assessment, the combination of data from several techniques is not straightforward and represents an important challenge for chemometricians. This study aimed to estimate antiradical, antioxidant (AO) and cytotoxic activities of the fungus Trametes versicolor ethanol fruiting body extract. The extract was found to effectively scavenge both O2?? and NO? (29.62 and 52.48 μg/mL, respectively). It also showed a good AO activity in the polarographic HPMC assay (950%/mL). p-Hydroxybenzoic acid may be one of the responsible compounds for the afore-mentioned activities. The same extract also exhibited a concentration-dependent cytotoxicity against MCF-7 and HepG2 tumour cell lines reaching IC50 values of 123.51 and 134.29 μg/mL, respectively with no cytotoxic activity against normal MRC-5 cells. Gentisic, syringic and protocatechuic acids may be among the bioactive principles for the observed cytotoxicity. Taken all together, T. versicolor ethanol extract can be considered as a promising candidate for development of health promoting food supplement.  相似文献

Solid waste generated from the city of Irbid is all directed to a local unlined landfill with no gas collection system. More than half of the waste stream is made of food waste which turns the landfill to a concentrated point source of greenhouse gases. To assess the impact that the landfill has at the moment on global warming and to evaluate the future value of the city’s waste as a source of biogas, 20 trucks of municipal solid waste were sampled. In addition, food waste samples from Irbid were collected from five different sources for 12 weeks to quantify their generation rates and to measure their components and chemical composition. Irbid’s solid waste was found to have a distinctively high biodegradable content 68%, which is typical of developing countries’ solid waste. Physical assessment showed that 38%, 6%, 33% and 23% of the food waste was rice, meat, fruits and vegetables, and bread, respectively. Measured methane yields for the volatile solids (VS) in rice, meat, fruits and vegetables, and bread were 362, 499, 352 and 375 mL/g VS, respectively. A representative food waste sample was created to test the actual methane yield and compare it to calculated one. Actual methane yield (414 mL/g VS) was greater than the calculated value (370 mL/g VS) based on food type proportions and their specific methane yield. To assess the anaerobic biodegradability of food waste, a stoichiometric calculation of the methane production was made based on the elemental analysis of all food waste elements. Food waste was found to have the chemical formula C7H16O5N and calculated methane potential of 447 mL/g VS; indicating 85% anaerobic biodegradability of food waste, which makes Irbid’s waste perceived as a valuable source of energy.  相似文献

A proficiency test to assess the capabilities of laboratories to determine melamine in a milk powder and a baking mix, representing starch-containing foods like bread and biscuits, was carried out in January 2009. The need for such an interlaboratory comparison arose from a health scare in China about melamine-tainted powdered milk in the second half of 2008. Laboratories in 31 countries, including Australia, China, India, Japan, New Zealand and the USA, and 21 of the 27 Member States of the European Union participated and reported back 114 results for the milk powder and 112 for the baking mix test materials. The reported results were compared to reference values determined by exact-matching double isotope dilution mass spectrometry. The so-determined assigned values were 10.0 ± 0.6 mg/kg melamine in the milk powder and 3.18 ± 0.17 mg/kg melamine in the baking mix. A coverage factor k of 2 was applied to calculate the expanded uncertainties. Three quarters of all reported results for both materials had associated z scores which were satisfactory (z ≤ |2|). Of the reported results, 90% was accompanied by a measurement uncertainty statement, and the majority of the measurement uncertainty ranges were reasonable. A number of laboratories were found to underestimate their measurement uncertainties. Methods that involved the use of stable-isotope-labelled melamine were shown to be clearly advantageous with regard to the accuracy of the results. However, no significant influence by other method parameters could be identified.  相似文献

This paper proposes a new method for quantitative analysis of acrylamide in cereal-based foods and potato chips. The method uses reaction with trifluoroacetic anhydride, and analyses the resulting derivative by use of gas chromatography with electron-capture detection (GC–ECD). The effects of derivatization conditions, including temperature, reaction time, and catalyst, on the acylation reaction were evaluated. Chromatographic analysis was performed on an SE-54 capillary column. Under the optimum conditions, good retention and peak response were achieved for the acrylamide derivative. The analytical method was fully validated by assessment of LODs and LOQs (1 ng g?1 and 25 ng g?1, with relative standard deviations (RSD) 2.1 and 3.6, respectively), linearity (R?=?0.9935 over the range 0.03–10 μg g?1), and extraction recovery (>96 %, with RSD below 2.0, for acrylamide spiked at 1, 20, 50, and 100 ng g?1; 99.8 % for acrylamide content >1000 ng g?1). The method requires no clean-up of the acrylamide derivative before injection. The method has been successfully used to determine acrylamide levels in different commercial cereal-based foods, French fries, and potato chips.

This paper deals with the study of the kinetic migration of a series of organic compounds representative of potential contaminants in packaging materials and used as surrogates (o-xylene, acetophenone, dodecane, naphthalene, 2,3,4-trichloroanisole, benzophenone, isomeric mix of diisopropylnaphthalene, diisobutyl phthalate and methyl stearate). Migration to one side of a solid simulant, Tenax, also referred to as MPPO (modified polyphenylene oxide), was investigated in this study. One spiked sample of multilayer material was used to optimise the extraction procedures for the multilayer paper-based material and the Tenax as well as to perform kinetic migration studies. Three sequential extractions using ethanol were necessary for the strips of the multilayer material but only one extraction was necessary for the solid simulant to obtain >70% recovery of the surrogates. These results enabled us to specify the extraction requirements of the multilayer sample and the solid simulant and as well as those of the migration tests at high temperature using Tenax as solid simulant. The matrix effect associated with the extraction of the contaminants from the multilayer sample is also discussed.  相似文献
