Three categories of tea, black, green and oolong tea, with those varieties in each category were analyzed for their contents of cellulose, hemicellulose, lignin, polyphenols, caffeine and amino acids. The data were subjected to multivarige analysis. Principal component analysis and principal component classification provide discrimination between the different categories and varieties. The quality index, assigned to these tea standards by experts, could be predicted form the principal component scores.  相似文献

该文利用近红外光谱技术结合化学计量学方法开发了不同品种绿茶的无损鉴别方法。通过近红外光谱技术得到了8个品种绿茶样品的近红外光谱,比较了单一以及优化组合光谱预处理方法对光谱的影响,利用无监督的主成分分析(PCA)与有监督的线性判别分析方法(LDA)分别构建了茶叶品种鉴别模型。结果表明:对比单一预处理方法,优化组合预处理具有更优的鉴别准确性。标准正态变量变换预处理消除了茶叶样品大小不均造成的光谱散射影响,一阶导数预处理实现了变动背景的消除,减少了基线漂移的影响,突出了图谱中的有效信息,采用二者相结合的预处理方式并结合无监督的主成分分析法可实现较为准确的绿茶样品种类鉴别分析,准确率达75.0%。此外,采用有监督的线性判别分析方法处理原始光谱数据,可达到100%的鉴别准确率,但该方法需提供类别的先验知识。因此,采用近红外光谱技术和化学计量学相结合的手段可实现不同品种绿茶的快速无损鉴别。  相似文献

采用顶空固相微萃取(HS-SPME)结合全二维气相色谱/飞行时间质谱(GC×GC-TOF MS)分析了闽南乌龙茶中的挥发性成分。从48份不同等级和产季的乌龙茶(铁观音、黄金桂、本山、毛蟹和梅占)中获得了2000余种挥发性化合物,经筛选得到51种共有组分,并结合质谱数据库、保留指数与结构谱图等进行了初步鉴定。在此基础上采用主成分分析法(PCA)获得得分投影图,直观给出了不同样品的分类趋势。通过逐步判别获得9种对分类结果有显著影响的组分,并以此为变量通过Fisher判别法(FDA)建立了4个判别函数,对样品的分类准确率达到97.9%。本试验证实了以挥发性成分识别闽南乌龙茶的可行性。  相似文献

偏最小二乘法在红外光谱识别茶叶中的应用   总被引:1,自引:0,他引:1  
采用漫反射傅立叶变换红外光谱(FTIR)法结合主成分分析(PCA)、偏最小二乘法(PLS)、簇类的独立软模式(SIMCA)识别法对十三种茶叶进行了分类判别研究。研究结果表明,通过多元散射校正(MSC)对原始光谱进行预处理,可以提高模式识别技术的分类判别效果。在此基础上,选取1 900~900 cm-1波长范围内的茶叶红外光谱建立识别模型,三种方法都得到了满意的分类判别效果。在对检验集中全部130个样本的判别中,PCA仅有两类样本无法判别,SIMCA的识别率和拒绝率都在90%以上,而PLS的识别效果最佳,全部样本都得到了正确的归类。这一研究结果表明傅立叶变换红外光谱法与化学计量学方法相结合可以实现茶叶品种的快速鉴别,这为茶叶的客观评审提供了一种新思路。  相似文献

This study attempted the feasibility to use near infrared (NIR) spectroscopy as a rapid analysis method to qualitative and quantitative assessment of the tea quality. NIR spectroscopy with soft independent modeling of class analogy (SIMCA) method was proposed to identify rapidly tea varieties in this paper. In the experiment, four tea varieties from Longjing, Biluochun, Qihong and Tieguanyin were studied. The better results were achieved following as: the identification rate equals to 90% only for Longjing in training set; 80% only for Biluochun in test set; while, the remaining equal to 100%. A partial least squares (PLS) algorithm is used to predict the content of caffeine and total polyphenols in tea. The models are calibrated by cross-validation and the best number of PLS factors was achieved according to the lowest root mean square error of cross-validation (RMSECV). The correlation coefficients and the root mean square error of prediction (RMSEP) in the test set were used as the evaluation parameters for the models as follows: R = 0.9688, RMSEP = 0.0836% for the caffeine; R = 0.9299, RMSEP = 1.1138% for total polyphenols. The overall results demonstrate that NIR spectroscopy with multivariate calibration could be successfully applied as a rapid method not only to identify the tea varieties but also to determine simultaneously some chemical compositions contents in tea.  相似文献

Abstract

This paper describes the application of the common and variation peak ratio dual-index sequence analysis methods to evaluate the quality of several tea samples obtained from different species and different areas based on 1HNMR fingerprint spectra (FPS). The method is able to determine the most similar sample groups and identify accurately the varieties and qualities of Blank tea, Longjing tea, and other green tea samples. Longjing tea is a famous brand of local green tea and has its own distinct characteristics. There were obvious differences between Uji tea from Japanese and Chinese green tea. The results showed that the dual index sequent analytical method provides a good approach to accurately describe the resemblance and differences among tea samples. It also can reflect tea's integrity and individual difference, and is an effective method to evaluate the quality of tea samples.  相似文献

Green teas are nonfermented teas, the quality of which is measured by the green color. However, this category encompasses a high number of tea varieties that differ in cultivation and processing. For example, leaf or stem/bubble tea, plants cultivated under a light or shadow regime, powdered or unpowdered tea, etc. These variables determine the different qualities among green teas (Matcha, Sencha, Gyokuro, etc.) and consequently their different values on the market. Our purpose is to determine if these variables can exert an influence on the chlorophyll profile and to establish a characteristic profile for specific green teas. With such an aim, we analyzed the chlorophyll profiles of 6 different green tea varieties via HPLC-hr ESI/APCI–MS2 and identified up to 17 different chlorophyll compounds. For the first time, 132-hydroxy-chlorophylls, 132-hydroxy-pheophytins, and 151-hydroxy-lactone-pheophytins have been identified in green teas. Shadow teas (Matcha and Sencha) and light-regimen green teas can be statistically differentiated by the total chlorophyll content and the a/b ratio. However, only Matcha tea contains a higher proportion of chlorophylls a and b among the green tea varieties analyzed, justifying the higher quality and price of this variety. Other chlorophyll metabolites (pheophytins, pyropheophytins, and oxidized chlorophylls) are indicative of the various processing and storage conditions.  相似文献

An ion chromatographic method for the simultaneous determination of organic acids and inorganic ions is described. Acetic, malic, ascorbic, citric, malic and succinic acids, chloride and phosphate were determined in coffee and tea samples. The separation is performed on an anion-exchange column operated at 40 °C within 25 min by an isocratic elution with 0.6 mM aqueous potassium hydrogenphthalate (pH 4.0) solution containing 4% (v/v) acetonitrile as eluent and determination by conductivity detection. The method does not need a special sample treatment and was successfully applied to the analysis of black, green and oolong tea samples. Also, green and roasted coffee samples from the varieties arabica and robusta were analyzed.  相似文献

Natural products have always enjoyed great popularity among consumers. Wild tea is an interesting alternative to tea from intensive plantations. The term “wild tea” is applied to many different varieties of tea, the most desirable and valued of which are native or indigenous tea plants. Special pro-health properties of wild tea are attributed to the natural conditions in which it grows. However, there are no complex studies that describe quality and health indicators of wild tea. The aim of this research was to evaluate the quality of wild and cultivated green tea from different regions of China: Wuzhishan, Baisha, Kunlushan, and Pu’Er. The assessment was carried out by verifying the concentration of selected chemical components in tea and relating it to the health risks they may pose, as well as to the nutritional requirements of adults. Wild tea was characterized by higher micronutrient concentration. The analyzed teas can constitute a valuable source of Mn in the diet. A higher concentration of nitrates and oxalates in cultivated tea can be associated with fertilizer use. The analyzed cultivated tea was a better source of antioxidants with a higher concentration of caffeine. There were no indications of health risks for wild or cultivated teas.  相似文献

Citrus tea is an emerging tea drink produced from tea and the pericarp of citrus, which consumers have increasingly favored due to its potential health effects and unique flavor. This study aimed to simultaneously combine the characteristic volatile fingerprints with the odor activity values (OAVs) of different citrus teas for the first time by headspace gas chromatography-ion mobility spectrometry (HS-GC-IMS) and headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS). Results showed that the establishment of a citrus tea flavor fingerprint based on HS-GC-IMS data can provide an effective means for the rapid identification and traceability of different citrus varieties. Moreover, 68 volatile compounds (OAV > 1) were identified by HS-SPME-GC-MS, which reflected the contribution of aroma compounds to the characteristic flavor of samples. Amongst them, the contribution of linalool with sweet flower fragrance was the highest. Odorants such as decanal, β-lonone, β-ionone, β-myrcene and D-limonene also contributed significantly to all samples. According to principal component analysis, the samples from different citrus teas were significantly separated. Visualization analysis based on Pearson correlation coefficients suggested that the correlation between key compounds was clarified. A comprehensive evaluation of the aroma of citrus tea will guide citrus tea flavor quality control and mass production.  相似文献

The effects of black tea polyphenol extract (BTPE) on the retrogradation of starches from different plant sources were studied using differential scanning calorimetry (DSC) and X-ray diffraction (XRD). DSC analysis shows that the gelatinization temperature of maize starch and starches from different rice varieties increased with increasing BTPE level. After storage at 4 °C, BTPE at a concentration of 15% markedly retarded the retrogradation of maize starch and starches from different rice varieties. Native maize starch and starches from different rice varieties showed typical A-type X-ray diffraction patterns, while native potato starch showed a typical B-type X-ray diffraction pattern. Adding BTPE significantly affected the crystalline region and intensities of X-ray diffraction peaks of maize and rice starch granules. It is concluded that adding BTPE markedly inhibits the retrogradation of maize starch and starches from different rice varieties, but has no significant influence on the gelatinization and retrogradation characteristics of potato starch.  相似文献

Traditional gene expression programming for classification is designed for binary decisions. Herein, projection discriminant analysis for direct multiclass categorization using gene expression programming is described. Gene expression programming was first employed to examine new synthetic variables that were built as nonlinear combinations of the original features. The data were projected on planes spanned by these new synthetic variables and the nearest centroid was employed to classify new samples. A new objective function was formulated to determine optimum synthetic variables. Direct multiclass categorization using a gene expression programming algorithm was used to classify six tea varieties analyzed by near infrared spectroscopy. Compared with traditional gene expression programming, principal component analysis, and linear discriminant analysis, direct multiclass categorization with gene expression programming algorithm was more efficient. Visual inspection of high dimensional data by this approach also facilitated classification and comprehension of data.  相似文献

Green tea (Camellia sinensis) leaves are known to contain active ingredients such as catechins and caffeine, and are widely useful materials. Recently, green tea flowers also have been in the spotlight. However, little attention has been paid to the tea seeds. In this work, the constituents of green tea seeds and green tea leaves were compared. Caffeine was found in the seeds, whereas catechins (usually obtained from green tea leaves) were not observed. Next, we investigated the constituents of hexane extracts and methanol extracts of green tea seeds. We found that the hexane extracts contained high amounts of oleic glyceride (79.9%) in addition to linoleic glyceride (20%). We confirmed the structures of these glycerides by NMR spectroscopy and by synthesis from a fatty acid and glycerol. The methanol extract was found to contain naringenin glucosides by mass spectrometry and NMR spectroscopic analysis.  相似文献

Microchip electrophoresis for the short-time analysis of amino acids in Japanese green tea was developed. The amino acids in Japanese green tea were derivatized with 4-fluoro-7-nitro-2,1,3-benzoxadiazole (NBD-F). The derivatives were filtered and directly analyzed by electrophoresis on a plastic microchip with a 31-mm long separation channel with fluorescence detection. Amino acid analysis of Japanese green tea was improved by removing polyphenols using a polyvinylpolypyrrolidone pretreatment. Elution profiles of NBD-amino acids were examined under different running buffer conditions, and the sodium dodecyl sulphate in the running buffer exhibited a dramatically high-separation efficiency of amino acids by inhibiting their adsorption on the channel walls. Under the optimized conditions (5 mM phosphate buffer (pH 5.5) containing 0.05 mM sodium dodecylsulfate as running buffer), the main amino acids contained in Japanese green tea were well separated within 2 min, and theanine (1475 mg/100 g tea leaf), Arg (408 mg/100 g tea leaf) and Gln (217 mg/100 g tea leaf) were detected in Japanese green tea.  相似文献

In the present study, boosting has been combined with partial least‐squares discriminant analysis (PLS‐DA) to develop a new pattern recognition method called boosting partial least‐squares discriminant analysis (BPLS‐DA). BPLS‐DA is implemented by firstly constructing a series of PLS‐DA models on the various weighted versions of the original calibration set and then combining the predictions from the constructed PLS‐DA models to obtain the integrative results by weighted majority vote. Coupled with near infrared (NIR) spectroscopy, BPLS‐DA has been applied to discriminate different kinds of tea varieties. As comparisons to BPLS‐DA, the conventional principal component analysis, linear discriminant analysis (LDA), and PLS‐DA have also been investigated. Experimental results have shown that the inter‐variety difference can be accurately and rapidly distinguished via NIR spectroscopy coupled with BPLS‐DA. Moreover, the introduction of boosting drastically enhances the performance of an individual PLS‐DA, and BPLS‐DA is a well‐performed pattern recognition technique superior to LDA. Herein, a high-performance liquid chromatography-diode array detection method has been developed for the simultaneous determination of 15 phenolic antioxidants: flavan-3-ols, (-)-epigallocatechin, (+)-catechin, (-)-epigallocatechin gallate, (-)-epicatechin, (-)-epicatechin gallate, (-)-gallocatechin, a phenolic acid (gallic acid), a hydroxycinnamic acid (chlorogenic acid), flavones (apigenin), flavonols (kaempferol, quercetin, and myricetin), and purine alkaloids (caffeine theophylline, theobromine) in different herb extracts, tea, and coffee varieties. The developed method was validated and successfully applied in order to determine the polyphenolic content to estimate the antioxidant activity of the Sideritis species commonly known as Greek mountain tea. To the best of our knowledge, this is the first report on the quantitative determination of catechins and other polyphenols in Greek mountain tea. Acidic hydrolysis was necessary for the simultaneous determination of the aglycones of the target analytes. According to our results, chlorogenic acid, myricetin, apigenin, catechin, and epicatechin gallate are found in the Sideritis species.  相似文献

Twenty different brands of Chinese tea were analyzed for multiple trace elements, including some essential and toxic elements, by neutron activation analysis (NAA). A comparison among tea brands from China, India, US and other countries was made for the ranges and averages of concentrations for Na, K, Mn, Cu, and Br. It has been observed that the trace element contents in tea leaves are largely dependent upon the soil and the environment where the tea grows. Chinese tea is rich in Mn and Cu comparing with those of other counties surveyed, but is indigent in Na. The transference ratio for each element determined (i.e., the fraction of an element in tea leave transferred into solution when tea is leached by percolation) is also reported. Adult daily intakes of some essential and toxic elements from tea drinking were also estimated.  相似文献

Oolong tea from the Fujian Province is very popular at home and abroad, especially in Taiwan and Southeast Asia. In order to elucidate the possibilities to compensate the need state of people to essential elements by the national drink,a set of samples of oolong tea from the Fujian Province were analyzed by total reflection X-ray fluorescence (TXRF), a fairly new efficient method in the field of multielement analysis. After addition of a single internal standard element (e.g. gallium) to a solution of tea leaves digested by acid or to an acidified tea infusion, a portion of 5 μ1 was dried on a sample carrier and then analyzed by TXRF.  相似文献

We have applied a sample pre-treatment method with a cartridge column filled with polyvinylpolypyrrolidone (PVPP) to the effective removal of polyphenols and simple UV spectrophotometry of caffeine in tea. The absorption maximum length (lambda(max)) for caffeine was close to those for tea catechins in aqueous 1% acetic acid; therefore, the UV spectrum of a non-treated green tea sample had a large absorption wave. In contrast, the absorbance of the green tea sample was gradually reduced by PVPP cartridge treatment using PVPP from 0 to 50 mg, and was nearly constant using a pre-treatment cartridge with more than 100 mg PVPP, because tea catechins were effectively removed and caffeine was mostly recovered from a green tea sample by means of PVPP cartridge treatment. The PVPP pre-treatment cartridge also removed polyphenols successfully from oolong and black tea samples. Comparison with conventional HPLC analysis indicated that the present pre-treatment method with a PVPP cartridge was useful for the simple and selective UV spectrophotometric determination of caffeine in green, oolong and black tea samples.  相似文献
