Adsorption isotherms have been determined at the water/oil interface for five biphasic systems involving surfactants (non-ionic and ionic) present in both phases at partition equilibrium. The systems studied were polyoxyethylene(23)lauryl ether (Brij35) in water/hexane and four ionic surfactants, hexadecyltrimethylammonium bromide (CTAB), and a series of three tetraalkylammonium dodecylsulfate (TEADS, TPADS, and TBADS) in water/CH 2Cl 2. Interfacial tension measurements performed at the water/air and water/oil interfaces provided all the necessary information for the determination of the adsorption parameters by taking partition into account. These measurements also allowed the comparison of the adsorption properties at both interfaces which showed an increase of the adsorption equilibrium constant and a decrease of the maximum surface concentration at the water/oil interface compared to water/air. The values of the critical aggregation concentration showed, in all cases, that only the surfactant dissolved in the aqueous phase contribute to the decrease of the water/oil interfacial tension. In the case of the four ionic surfactants, the critical aggregation concentration obtained in biphasic conditions were lowered because of the formation of mixed surfactant-CH 2Cl 2 aggregates.

Stabilization of emulsions by mixed polyelectrolyte/surfactant systems is a prominent example for the application in modern technologies. The formation of complexes between the polymers and the surfactants depends on the type of surfactant (ionic, non-ionic) and the mixing ratio. The surface activity (hydrophilic–lipophilic balance) of the resulting complexes is an important quantity for its efficiency in stabilizing emulsions. The interfacial adsorption properties observed at liquid/oil interfaces are more or less equivalent to those observed at the aqueous solution/air interface, however, the corresponding interfacial dilational and shear rheology parameters differ quite significantly. The interfacial properties are directly linked to bulk properties, which support the picture for the complex formation of polyelectrolyte/surfactant mixtures, which is the result of electrostatic and hydrophobic interactions. For long alkyl chain surfactants the interfacial behavior is strongly influenced by hydrophobic interactions while the complex formation with short chain surfactants is mainly governed by electrostatic interactions.

Spreading of a drop of an emulsion made with milk proteins on air/water interfaces was studied. From an unheated emulsion, all oil molecules could spread onto the air/water interface, indicating that the protein layers around the oil globules in the emulsion droplet were not coherent enough to withstand the forces involved in spreading. Heat treatment (90 °C) of emulsions made with whey protein concentrate (WPC) or skim milk powder reduced the spreadability, probably because polymerisation of whey protein at the oil/water interface increased the coherence of the protein layer. Heat treatment of emulsions made with WPC and monoglycerides did not reduce spreadability, presumably because the presence of the monoglycerides at the oil/water interface prevented a substantial increase of coherence of the protein layer. Heat treatment of caseinate-stabilised emulsions had no effect on the spreadability. If proteins were already present at the air/water interface, oil did not spread if the surface tension (γ) was <60 mN/m. We introduced a new method to measure the rate at which oil molecules spread from the oil globules in the emulsion droplet by monitoring changes in γ at various positions in a ‘trough’. The spreading rates observed for the various systems agree very well with the values predicted by the theory. Spreading from oil globules in a drop of emulsion was faster than spreading from a single oil drop, possibly due to the greater surface tension gradient between the oil globule and the air/water interface or to the increased oil surface area. Heat treatment of an emulsion made with WPC did not affect the spreading rate. The method was not suitable for measuring the spreading rate at interfaces where surface active material is already present, because changes in γ then were caused by compression of the interfacial layer rather than by the spreading oil.

A novel, growing drop technique is described for measuring dynamic interfacial tension due to sorption of surface-active solutes. The proposed method relates the instantaneous pressure and size of expanding liquid drops to the interfacial tension and is useful for measuring both liquid/gas and liquid/liquid tensions over a wide range of time scales, currently from 10 ms to several hours. Growing drop measurements on surfactant-free water/ air and water/octanol interfaces yield constant tensions equal to their known literature values. For surfactant-laden, liquid drops, the growing drop technique captures the actual transient tension evolution of a single interface, rather than interval times as with the classic maximum-drop-pressure and drop-volume tension measurements. Dynamic tensions measured for 0.25 mM aqueous 1-decanol solution/air and 0.02 kg/m3 aqueous Triton X-100 solution/dodecane interfaces show nonmonotonic behavior, indicating slow surfactant transport relative to the imposed rates of interfacial dilatation. The dynamic tension of a purified and fresh 6 mM aqueous sodium dodecyl sulfate (SDS) solution/air interface shows only a monotonic decrease, indicating rapid surfactant transport relative to the imposed rates of dilatation. Conversely, an aged SDS solution, naturally containing trace dodecanol impurities, exhibits dynamic tensions which reflect a superposition of the rapidly equilibrating SDS and the slowly adsorbing dodecanol.

When a two-phase column consisting of paraffin oil and silicon oil is placed in an otherwise air-filled, horizontal glass capillary, the column starts moving spontaneously. Silicon oil displaces paraffin oil, which in its turn displaces air at atmospheric conditions; a stable film of silicon oil is left at the receding silicon oil/air meniscus. The driving force for the motion is the difference in capillary pressure at the free interfaces. However, the column moves considerably more slowly than predicted by the driving forces; it appears that the forces resisting the motion at the moving liquid/liquid/solid line are much larger than one would expect on the basis of the interfacial tension and the viscosities of the two phase system. Some considerations are made on the relationship of the theory of Fowkes to our system. Also, a method for measuring low interfacial tensions between immiscible liquids is proposed.

Particles that are partially wetted by oil and water are known to adsorb at oil/water interfaces. By the same mechanism, particles that are partially wetted by two immiscible polymers should adsorb at the interface between those two polymers. However, since chemical differences between immiscible polymers are relatively modest, particle adsorption at polymer/polymer interfaces may be expected to be relatively uncommon. We have conducted experiments with several particle types added to two pairs of model polymers, polyisoprene/polydimethylsiloxane and polyisoprene/polyisobutylene. Contrary to our expectation, in every case, particles readily adsorbed at the polymer/polymer interfaces. We evaluated the Girifalco–Good theory as a means to predict the interfacial activity of the particles. The solid surface energy required by the Girifalco–Good theory was assumed to be equal to the critical surface tension, which was then found by float/sink tests. Our results suggest that this approach is not able to predict the observed interfacial activity of particles at polymer/polymer interfaces.

The measurements of the interfacial tension at the air/aqueous subphase interface as the function of pH were performed. The interfacial tension of the air–aqueous subphase interface was divided into contributions of individuals. A simple model of the influence of pH on the phosphatidylcholine monolayer at the air/hydrophobic chains of phosphatidylcholine is presented. The contributions of additive phosphatidylcholine forms (both interfacial tension values and molecular area values) depend on pH. The interfacial tension values and the molecular areas values for LH+, LOH forms of phosphatidylcholine were calculated. The assumed model was verified experimentally.

The adsorption characteristics of Span 80 at liquid/liquid interfaces were investigated. The equilibrium interfacial tension values were successfully fitted with a Langmuir isotherm resulting in the determination of a mean molecular area from 25 to 35 Å2/mol. The measured interfacial tension values and deduced adsorption parameters depend on the experimental technique used to obtain them, either Du Noüy ring or profile analysis tensiometry. Two possible explanations to such phenomenon are provided. Adsorption kinetics of Span 80 at liquid/liquid interfaces were studied, and it was concluded that the diffusion of Span 80 molecules from the bulk is the rate determining step of the adsorption. Finally the interfacial rheology properties were investigated and compared to the Lucassen–van den Tempel model. A good match was obtained when the isotherm parameters determined by profile analysis tensiometry were used.

The adsorption behavior of dioctyldimethylammonium chloride at water/ hexane interface has been studied by measuring the interfacial tension as a function of temperature and pressure at various bulk concentrations. By applying the thermodynamics of adsorption at interfaces to the experimental results, the thermodynamic quantity changes associated with adsorption and the interfacial density of dioctyldimethylammonium chloride have been evaluated. The interfacial tension vs temperature and concentration curves have shown the breaks and it has been concluded that the first order phase transition takes place between a gaseous and an expanded state. The entropy and volume changes associated with adsorption have shown the remarkable dependence on temperature and pressure and have been found to decrease with increasing the molality. Also the energy change associated with adsorption has been evaluated and it has been concluded that the adsorption of dioctyldimethylammonium chloride at water/hexane interface is enhanced by negative values of the partial molar energy change. Further, all the thermodynamic quantities have been characterized by the discontinuous change attributable to the phase transition.

We have studied the behaviors of a poly(methyl methacrylate) (PMMA) chains anchored to polystyrene particles at air/water and oil/water interfaces to recognize the roles of oil molecules in the PMMA property at the interfaces. Through the comparison of π-A isotherms we found two aspects of unique structural and rheological characteristics observed in PMMA-grafted polystyrene latex (PSL-PMMA) monolayer system in common. (1) The π-A isotherms showed surface pressure increase at larger occupied area compared to the PSL-PMMA size in solution at three different types of interfaces in most cases. (2) Compressional modulus, C s ?1, obtained by π-A isotherm analysis for PSL-PMMA at interfaces, showed the tendency to decrease with molecular weight of PMMA. This is opposite to that of PMMA homopolymer at interfaces. The effect of oil molecules on PSL-PMMA system at interfaces are found both in the difference of occupied area and C s ?1. The occupied areas were larger for the isotherms at the oil/water interfaces than those at the air/water interface in most cases, which suggested the reduced attractive interactions between anchored polymers by oil molecules. On the other hand, C s ?1 of PMMA monolayers is strongly dependent on the constituents of the interface and the order of C s ?1 is air/water?>?decane/water?>?dibutyl ether/water interfaces. The difference between oil species was not explained only by PMMA/oil interaction in bulk, but we suggested that interfacial tension of oil/water interface affects the miscibility of oil molecules with PMMA to cause higher miscibility between PMMA and dibutyl ether at the oil/water interfaces.

Experimental problems preclude or limit measurements of interfacial tension in bitumen or extra-heavy crude oil-containing systems when there exists a vanishing density difference between the phases. We describe a novel droplet pressure method that allows such measurements to be made. This method is based on a liquid/liquid adaptation of the capillary displacement differential maximum bubble pressure surface tension method of Schramm and Green [29]. In this method, interfacial tension is calculated from the difference between maximum droplet pressures reached at capillaries of differing internal radii, immersed to slightly different depths. The elimination of the influence of liquid densities allows the measurement of interfacial tensions without independently determining the liquid densities, and in particular, permits measurements in systems for which the density difference is vanishingly small. The absolute measuring technique is illustrated for several systems of pure and practical liquids. Received: 8 March 2000/Accepted: 30 May 2000  相似文献

The behaviour of oils at aqueous interfaces is ubiquitous to many industrially and biologically relevant processes. In this review we consider modifications to the wetting properties of oils at the air/water, oil/water and solid/liquid interfaces in the presence of surfactants. First-order wetting transitions can be induced in a wide range of oils by varying the aqueous surfactant concentration, leading to the formation of mixed monolayers at the interface. In certain cases, these mixed monolayers display novel surface freezing behaviour, including the formation of unusual bilayer structures, which further modifies the properties of the interface. The effects of surfactant on line tension at the three-phase contact line and differences between the air/liquid and liquid/liquid interfaces are discussed.

We have developed a new benign means of reversibly breaking emulsions and latexes by using “switchable water”, an aqueous solution of switchable ionic strength. The conventional surfactant sodium dodecyl sulfate (SDS) is not normally stimuli‐responsive when CO2 is used as the stimulus but becomes CO2‐responsive or “switchable” in the presence of a switchable water additive. In particular, changes in the air/water surface tension and oil/water interfacial tension can be triggered by addition and removal of CO2. A switchable water additive, N,N‐dimethylethanolamine (DMEA), was found to be an effective and efficient additive for the reversible reduction of interfacial tension and can lower the tension of the dodecane/water interface in the presence of SDS surfactant to ultra‐low values at very low additive concentrations. Switchable water was successfully used to reversibly break an emulsion containing SDS as surfactant, and dodecane as organic liquid. Also, the addition of CO2 and switchable water can result in aggregation of polystyrene (PS) latexes; the later removal of CO2 neutralizes the DMEA and decreases the ionic strength allowing for the aggregated PS latex to be redispersed and recovered in its original state.

The dilational properties of anionic gemini surfactants alkanediyl-α,ω-bis(m-octylphenoxy sulfonate) (C8CmC8) with polymethylene spacers at the water–air and water–decane interfaces were investigated by oscillating barriers and interfacial tension relaxation methods. The influences of oscillating frequency and bulk concentration on the dilational properties were explored. The experimental results show that the linking spacer plays an important role in the interfacial dilational properties. The moduli pass through one maximum for all three gemini surfactants at both water–air and water–decane interfaces. However, the values of moduli at the water–air interface are obviously higher than those at the water–decane interface because the sublayer formed by spacer chains will be destroyed by the insertion of oil molecules. Moreover, with the increase of spacer length, the surface adsorption film becomes more viscous at high concentration, which can be attributed to the process involving the formation of the sublayer. On the other hand, the spacers of the adsorbed C8C6C8 molecules will extend into the oil phase when the interface is compressed. As a result, the interfacial film becomes more elastic with the increase of spacer length at high concentration. The experimental results obtained by the interfacial tension relaxation measurements are in accord with those obtained by the oscillating barriers method.

The surface tension of the air—water interface increases upon addition of inorganic salts, implying a negative surface excess of ionic species. Most acids, however, induce a decrease in surface tension, indicating a positive surface excess of hydrated protons. In combination with the apparent negative charge at pure air–water interfaces derived from electrokinetic experiments, this experimental observation has been a source of intense debate since the mid‐19th century. Herein, we calculate surface tensions and ionic surface propensities at air–water interfaces from classical, thermodynamically consistent molecular dynamics simulations. The surface tensions of NaOH, HCl, and NaCl solutions show outstanding quantitative agreement with experiment. Of the studied ions, only H3O+ adsorbs to the air–water interface. The adsorption is explained by the deep potential well caused by the orientation of the H3O+ dipole in the interfacial electric field, which is confirmed by ab initio simulations.

Dynamic interfacial tensions and surface dilational moduli were measured for four proteins at three fluid interfaces, as a function of time and concentration. The proteins-beta-casein, beta-lactoglobulin, bovine serum albumin, and ovalbumin-were adsorbed from aqueous solution against air, n-tetradecane, and a triacylglycerol oil. The sinusoidal interfacial compression/expansion, at frequencies ranging from 0.005 to 0.5 Hz, was effected in a dynamic drop tensiometer suited to viscous oil phases. Generally, at interfacial pressures up to 15 mN/m, dilational moduli were purely elastic at frequencies from 0.1 Hz. In this elastic range, in-surface relaxation either was essentially completed or had not yet started within a time on the order of 10 s. Within this time span, protein exchange with the bulk solution was negligible. In cases where in-surface relaxation was completed in the imposed time, the moduli depended only on the equilibrium Pi(Gamma) relationship. We interpret these results in terms of a simple two-dimensional solution model, based on a Gibbs dividing surface, accounting for nonideal mixing to the first order with respect to both entropy and enthalpy. Interfacial mixing enthalpy is shown to have a major effect on the elasticity, with both quantities increasing in the sequence triacylglycerol < tetradecane < air. We also suggest a strong correlation between enthalpy and clean-interface tension that increases in the same order. At each interface, the enthalpy increases with increasing molecular rigidity: beta-casein < beta-lactoglobulin < bovine serum albumin < ovalbumin. Best agreement with the experimental data was obtained with a recently extended version of the model accounting for proteins adopting smaller molecular areas with increasing surface pressure. For interfacial pressures above 15 mN/m, the moduli were generally no longer purely elastic, with viscous loss angles ranging up to 36 degrees. In this range of high pressures, the moduli depended on relaxation mechanisms for which specific kinetic models must be developed.

Time-dependent interfacial tension (IFT) has been investigated for an interfacially reactive immiscible system composed of model-acidified oil and alkaline water. The acidified oil was composed of either lauric acid or linoleic acid dissolved in n-dodecane. Drop volume tensiometry was employed to measure the interfacial tension between the two phases. In the case of lauric acid, the IFT value was found to decrease sharply with increasing alkali concentration, even at low drop formation times. In the case of linoleic acid, the IFT decrease with the drop formation time was more gradual, especially at low alkali concentration. The rate of formation of the interfacial area was also found to be dependent on alkali concentration.
