蛋类中脂肪酸的测定

摘    要:测定了各种鸡蛋和鸭蛋蛋清和蛋黄中脂肪酸的构成,发现蛋黄中的单不饱和脂肪酸比蛋清的高.蛋清中多不饱和脂肪酸、n-6多不饱和脂肪酸和n-3多不饱和脂肪酸比蛋黄中的高,其中22:2n-6的含量在蛋清中含量较高.土鸡蛋黄中n-3多不饱和脂肪酸含量比较丰富,达到2.879%.蛋黄中顺式脂肪酸含量均比蛋清的高,而鸭蛋的顺式脂肪酸又比鸡蛋的高.蛋黄中DHA、EPA的含量明显比蛋清中的高.土鸡蛋清和杂交鸡蛋黄中CLA的含量较高(分别为0.176%,0.150%).

Abstract:The fatty acids of egg white and yolk from eggs and duck eggs were detected,which indicated that monounsaturated fatty acids,DHA and EPA of yolk were higher than those of egg white.The polyunsaturated fatty acids,n-6PUFA and n-3PUFA in egg white were more than yolk,especially 22:2n-6.N-3PUFA of egg(free run) reached 2.879%.Cis-of yolk was richer than egg white,duck egg yolk was richer in cis-than egg yolk.Egg white(free run) and egg yolk(mainly corn in diet) were abundant in CLA,0.176% and 0.150% respectively.
