摘    要:基于Fenton反应产生的·OH对偶氮胭脂红G(AG)的褪色反应,使偶氮胭脂红G在434 nm处共振散射光强度降低,采用偶氮胭脂红G为指示剂,在优化测定条件后,建立了一个共振光散射法测定Fenton反应所产生的·OH的新方法,并用所建立的新方法研究了一些常见抗氧化剂对·OH清除的量效关系,验证了方法的可行性.在此基础上,用该方法研究了一些茶叶水提取液的抗氧化能力,结果表明,所有茶叶提取液均具有一定清除·OH的能力.在所研究的几种茶叶中,以普洱茶清除·OH的能力最强.

Abstract:A new resonance light scattering technique(RLS) using azoarmin G as an indicator was developed for the determination of hydroxyl radical produced from the Fenton reaction.The method was based on the discoloration of azoarmin G by hydroxyl radical,which resulted in the remarkable decrease of the RLS signal of azoarmin G at 434 nm.The feasibility of the method was verified by the results obtained from the investigation on the scavenging effect of some ordinary antioxidants with the method.The anti-oxidation ability of the extractives of some teas was studied by the method,and the results pointed out that all of teas studied in this paper possessed the scavenging effect of hydroxyl radical.
