Abstract:The content of vitamin C in persimmon were determined by using high performance capillary electrophoresis(HPCE).The background electrolyte system selected was 25 nmol/L phosphate buffe(pH 7.4),applied voltage was 20 kV,temperature was 25℃,diode array detector set at 254 nm.The repeatability relative standard deviation(RSD) was 2.35,The average recovery was 9.04%(RSD 1.01%),and good relationship was observed between peak area and vitamin C in the range of 0.25~2.5 g/L with a correlation coefficient of 0.9998.
