| Abstract: | The content of vitamin C in persimmon were determined by using high performance capillary electrophoresis（HPCE）.The background electrolyte system selected was 25 nmol/L phosphate buffe（pH 7.4）,applied voltage was 20 kV,temperature was 25℃,diode array detector set at 254 nm.The repeatability relative standard deviation（RSD） was 2.35,The average recovery was 9.04%（RSD 1.01%）,and good relationship was observed between peak area and vitamin C in the range of 0.25～2.5 g/L with a correlation coefficient of 0.9998. |
