钢都酒的香味成分分析

摘    要:通过对钢都酒进行化学处理,分类收集组分,采用GC-MS联用技术对各组分进行分离与定性定量测定,分离并鉴定出35个化合物,并确定了酒的香型。

Abstract:Gangdu Jiu"liquor was chemically treated and its flavour components were classified into 4 groups: phenolic, alkaline, neutral and acidic components. The 4 groups components were qualitatively and quantitatively analyzed by GC-MS, separately. 35 compounds from "Gangdu Jiu" were identified in total. The flavour type of "Gangdu Jiu" was determined as a heavy fragrance type.
