摘    要:采取沸水浴法、回流法、微波法及超声波法探讨信阳红茶和印度红茶的抗氧化性,通过测定吸光度利用Fenton反应表征提取物对羟自由基的清除率.不同的提取方法对红茶抗氧化活性有一定的影响,羟自由基的清除率与红茶的抗氧化活性成正比.结果表明:信阳红茶沸水浴法提取率较高,印度红茶超声波法提取率较高.

Abstract:The antioxidant components of Xinyang black tea and Indian black tea were extracted by four kinds of extraction methods including boiling water bath method,reflux method,microwave method and ultrasonic method.The scavenging rate of hydroxyl radicals of extractions was tested by Fenton reaction.The different extraction methods affected the antioxidant activity of different black tea.The scavenging rate of hydroxyl radical is proportional to the antioxidant activity of black tea.Experimental results show that antioxidant activity of Xinyang black tea was the highest by using boiling water bath method,and antioxidant of India black tea was the highest by using ultrasonic method.
