Some important problems of enzymatic reactions in non-aqueous media

Recent progress of enzymatic reaction in organic solvents was comprehensively discussed. Activities and stereoselectivities of enzymes are depended on the properties of solvents. Their catalytic activities and thermostabilities are effected strongly by the essential water in organic solvents. The dramatic enhancement of emzymatic activity in organic solvents by the presence of simple non -buffer salts in the lyophilized enzyme was also discussed. Some proteases have shown their catalytic activities in eutectic mixtures of substrates and have been used to synthesize various model oligopeptides.
